SWEET ONION CASSEROLE
This wonderful combination of sweet onions, Swiss cheese, and rice is a tasty side dish for anything from grilled meats to roasted poultry. It is a favorite in our home, and you'll get rave reviews every time you serve it.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Butter a 2-quart baking dish.
- Bring water to a boil in a large saucepan, and sprinkle in the rice. Stir, reduce heat to low, and simmer the rice until it is half-cooked, about 5 minutes. Drain the rice, and set aside.
- Melt the butter in a large skillet over medium heat, and cook and stir the onions until translucent but not browned, about 8 minutes. Mix the cooked onions and the butter from the skillet with the rice, and stir in the half-and-half, salt, and 1 3/4 cup of the Swiss cheese. Transfer the mixture to the prepared baking dish, and sprinkle the remaining 1/4 cup of Swiss cheese over the top.
- Bake uncovered in the preheated oven until the rice is tender and the top is lightly browned, about 1 hour.

EASY OLD FASHIONED SCALLOPED ONION CASSEROLE

Steps:
- Preheat oven to 375 degrees F. Use the convection setting if available. Spray 2 quart casserole with cooking spray.
- Cook on the stovetop on medium-low until they get soft about 20 minutes. (you can skip this step if you like the onions more firm.) Layer the onions in the bottom of the casserole. Sprinkle with 3 tablespoons of flour, salt, and pepper.
- Pour heavy cream over the onions in the dish.
- Combine crushed crackers and butter and toss to coat. Sprinkle evenly over the onions.
- Cook 30 to 35 minutes. Serve

Steps:
- Set oven to 350 degrees.
- Butter a 2-qt casserole dish.
- In a large saucepan, melt butter.
- Add onions to pan, over high heat, saute until soft, and just starting to brown, about 20-25 minutes
- Remove from heat.
- Place half of the onions in the baking dish; cover with half the crackers, and half of the Parmesan.
- Repeat to make another layer of onions, crackers and Parmesan Bake, uncovered, until cheese on top is lightly browned, about 25 mins Serve warm.
- Note: if made a day ahead, let cool, and keep refrigerated until time to reheat for serving.

- In a large skillet, saute onions in butter until tender.
- In a small bowl, combine sour cream, milk, dill, and salt until blended; stir in 1 cup cheese.

CORN AND VIDALIA ONION SALAD
Steps:
- Prepare a charcoal or gas grill for medium-high heat, or preheat the broiler.
- Place the corn on the grill or in a broiler pan. Cook, turning every 5 minutes, until lightly browned all over, about 20 minutes. Let cool, then cut the kernels from the ears (you should have about 3 cups).
- Coat the grill or broiler pan with cooking spray. Grill the onion slices for 5 minutes on each side.
- Combine the corn, onions, cilantro, tomatoes, vinegar, salt, pepper and red pepper flakes in a large bowl. Toss well and serve.

VIDALIA ONION CASSEROLE
Steps:
- Preheat oven to 375°. Butter a 1 1/2-quart baking dish.
- In a large saucepan, bring onions and water to cover to a boil over medium-high heat. Cook until tender, about 5 minutes, drain.
- In a large skillet, melt butter over medium heat. Add onion; cook for 5 minutes.
- In a medium bowl, whisk together eggs and evaporated milk. Add onion, half of crushed crackers, cheese, salt and pepper. Spoon mixture into prepared dish.
- Bake for 35 minutes. In a small bowl, stir together melted butter and remaining crushed crackers. Sprinkle onto casserole, and bake until lightly browned, about 15 minutes more.
VIDALIA ONION PIE
Steps:
- For the crust: All ingredients should be cold. Combine all the dry ingredients in a large mixing bowl. Add shortening and butter. Using a pastry blender cut in the shortening and butter until the mixture resembles coarse meal. Drop by drop, add cold water. Mix in with the fingertips, not with the hands as the palms will warm the dough. Continue mixing water in until the dough begins to hold together without being sticky but not crumbly. Place dough in plastic wrap. Fold over plastic wrap and press down to form a disk. This will make rolling out easier after chilling. Finish wrapping in plastic and place in the refrigerator for at least 1 hour.
- Lightly spray a deep 9-inch pie pan or an 8 1/2-inch fluted flan pan. Roll out dough and place in pie plate. Return to the refrigerator until filling is ready. Makes pastry for a 9-inch single crust pie.
- Preheat oven to 450 degrees F.
- For the filling: Brush egg wash on the inside of pie crust. Return to refrigerator until filling is ready. Over medium heat, melt butter. Add onions and saute until translucent. Do not brown. Combine eggs, sour cream and flour. Add onion mixture. Season with salt and pepper and pour into chilled pie crust. Top with Parmesan. Bake for 20 minutes. Reduce oven temperature to 325 degrees F for the last 20 minutes or until center is set.

- Preheat the oven to 450 °F. Spray an 8-inch square baking pan with vegetable oil cooking spray.
- In a medium saucepan, melt the butter and sauté the onion until tender, but not browned, for about 3 minutes. - Melt 3 tablespoons of the butter in a large enameled cast-iron casserole. Add the sliced onions, thyme sprigs and a pinch each of salt and pepper and cook over moderate heat, stirring occasionally, until the onions soften and release their liquid, about 20 minutes. Add the sugar and cook, stirring often, until the exuded liquid evaporates and the onions are caramelized, about 30 minutes longer. Transfer the onions to a medium bowl and discard the thyme springs.
- Melt 1 tablespoon of the butter in the casserole. Add the celery, garlic and herbes de Provence and cook over moderate heat, stirring, until fragrant, about 3 minutes. Raise the heat to high and add the sherry. Cook, stirring up the browned bits from the bottom of the casserole, until the sherry has reduced by half, about 3 minutes. Return the onions to the casserole, add the chicken stock and simmer over low heat for 30 minutes.
- Preheat the oven to 400°. Melt the remaining 2 tablespoons of butter in a small pan. Spread the bread cubes on a rimmed baking sheet and toss with the melted butter. Sprinkle with the Parmesan and toss again. Bake the croutons for about 8 minutes, or until golden brown and crisp.
- Add the heavy cream to the soup and simmer over low heat for 10 minutes. Working in batches, puree the soup in a food processor or blender until smooth. Return the soup to the casserole and reheat gently. Season with salt and pepper. Ladle the soup into bowls, garnish with the cheese croutons and serve.
