FLAUGNARDE OF MIXED BERRIES (CLAFOUTIS)

This warm berry custard called a Flaugnarde, similar to clafoutis, may sound fancy, but you won't believe how easy it is to whip up!

2 1/2 cups mixed fresh berries (such as blackberries, blueberries, raspberries)
3 large eggs
10 tbsp light agave nectar (or sugar)
1/2 cup unbleached all-purpose flour (sifted)
1/8 tsp salt
1 cup 1% milk
2 tsp vanilla extract
powdered sugar for dusting
baking spray

Steps:

  • Preheat the oven to 350F°.
  • Lightly spray a baking dish with baking spray and dust with a little flour. Toss in the berries.
  • Whisk the eggs, agave, salt, and flour together in a large bowl until smooth. Add the milk and vanilla extract. Whisk until smooth then pour into the baking dish.
  • Bake for 45 - 50 minutes or until lightly browned and a toothpick inserted into the center comes out clean.
  • When you pull it put of the oven it will wiggle a bit which is completely normal. Cool on a wire rack. The flaugnarde will have puffed up a bit and will deflate while cooling.
  • When cool, dust with powdered sugar and serve.

8 tablespoons salted butter, softened
1 cup almond paste
1/2 cup dark rum
1 tablespoon all-purpose flour
2 teaspoons almond extract
1 large egg
1 1/2 sticks salted butter, cold
1 1/2 cups all-purpose flour
1 1/2 cups old-fashioned oats
1 cup turbinado sugar
3/4 cup brown sugar
1 teaspoon ground cinnamon
1 teaspoon kosher salt
Six 1-day-old store-bought croissants
1/4 cup simple syrup, homemade (recipe follows) or store-bought
3 cups frozen blueberries
Powdered sugar, for dusting
1 cup granulated sugar

Steps:

  • For the almond cream: Add the butter, almond paste, rum, flour, almond extract and egg to the bowl of a stand mixer fitted with the paddle attachment and mix until smooth, 1 to 2 minutes. Set aside.
  • For the streusel: Add the butter, flour, oats, turbinado sugar, brown sugar, cinnamon and salt to the bowl of a food processor fitted with a metal blade. Pulse until the ingredients become a coarse crumb and set aside.
  • To build: Cut each croissant in half lengthwise and place cut-side up on a parchment-lined sheet pan. Brush the cut sides of the croissants with the simple syrup, about 1 teaspoon per half. Equally distribute the almond cream on the croissants followed by the blueberries, and sprinkle the streusel over the top.
  • Freeze, uncovered, until totally set, at least 2 hours.
  • Remove from the freezer and wrap individually in plastic wrap (to keep the toppings on), then place in large plastic bags.
  • To serve: Preheat the oven to 350 degrees F. Take the croissants out of the plastic bags, remove the plastic wrap, place on a baking sheet and bake until the almond cream has set and the streusel is golden, 15 to 17 minutes.
  • Remove from the oven. Sprinkle with the powdered sugar and serve hot or at room temperature.
  • Pour 1 cup water into a saucepan and add the granulated sugar. Stir and place the saucepan over medium heat.
  • By the time the edges start to simmer, the sugar should have dissolved and the liquid should be completely clear, not cloudy. Immediately remove from the heat and cool completely.
  • Store the simple syrup in an airtight container, in the fridge, until ready to use. Simple syrup stays fresh up to 4 weeks.

4 tbsp + 2 tbsp sugar
3 large eggs
3/4 cup whole milk (1-2% or skim milk not recommended)
2 tbsp. unsalted butter, melted + extra butter for baking dish
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 cup flour, any variety
1/4 tsp salt
2 cups frozen mixed berries
1 cup frozen pitted cherries
1 cup powdered sugar
1 tbsp butter, softened
1 tsp. pure vanilla extract
2 tbsp milk

Steps:

  • Preheat oven to 350 degrees.
  • Mix glaze ingredients in a medium bowl (add more milk until glaze reaches desired consistency). Set aside.
  • Coat a 2-quart baking dish with butter.
  • Dust buttered dish with 2 tbsp sugar.
  • Add eggs, milk, melted butter, 4 tbsp sugar, cinnamon, and nutmeg to a blender and blend until smooth.
  • Add flour and salt, pulse until blended. Do not over blend.
  • Pour egg batter into buttered and sugared baking dish.
  • Add the mixed berries and cherries over the egg batter, spreading evenly but not burying them.
  • Bake for 45 minutes until custard is puffed and the center is just barely set.
  • Allow to cool for about 10 minutes to set before serving.
  • Lightly drizzle custard with sugar glaze just before serving.

1 (9-inch) graham cracker crust

Steps:

  • Preheat the oven to 350 degrees F.
  • In a medium bowl beat together the egg, sugar and salt until the mixture becomes pale. Slowly beat in the milk and vanilla.
  • Cover bottom of the pie crust with the berries. Pour the egg mixture over the top, bake until center is set, about 40 to 45 minutes. Remove from oven and cool to room temperature before serving.

220g unsalted butter, softened, plus extra for the tins
220g golden caster sugar
4 eggs (preferably organic)
170g self-raising flour
50g ground almonds
1⁄4 tsp baking powder
3 tbsp milk
250g cherries, pitted
1 tsp vanilla bean paste
2 tbsp golden caster sugar
1⁄2 large lemon, juiced
3 tsp kirsch or maraschino liqueur (optional)
150g double cream
1 tbsp icing sugar, plus extra for dusting
80g fresh shop-bought custard

Steps:

  • Butter two 20cm loose-bottomed round sandwich tins and line with baking parchment. Heat the oven to 190C/170C fan/gas 4. Tip the butter and sugar into the bowl of a stand mixer and beat for 10 mins, or until light and fluffy. Add the eggs one at a time, beating well after each addition. Fold in the flour, ground almonds, baking powder, 1/4 tsp salt and the milk. Spoon the batter into the prepared tins and bake in the centre of the oven for 22-25 mins, or until risen and firm to the touch. Leave to cool in the tins for 5 mins before turning out onto a wire rack to cool completely.
  • Put the cherries, vanilla, sugar, lemon juice and kirsch or liqueur (if using) in a pan and bring to a simmer over a low heat. Cook for 5 mins, turn up the heat to medium and cook for 5-7 mins more until the liquid becomes syrupy. If the cherries are softened but the liquid isn't yet syrupy, strain the liquid into a separate pan and simmer until slightly thickened. Remove from the heat and leave to cool.
  • Beat the cream and icing sugar together using an electric whisk until the cream has thickened, then fold in the custard and chill for 1 hr.
  • Put one of the sponges on a cake plate or stand and spread over the custard cream. Spoon over the cherries, then top with the second sponge. Dust with more icing sugar and serve immediately. Leftovers will keep chilled for two days and are best served at room temperature.

500g pack frozen mixed berry, we used summer berry mix, defrosted
150g red cherry jam
300-350g madeira cake, cut into roughly 3cm cubes
500ml tub custard
250g tub mascarpone
5 tbsp caster sugar
400ml double cream
3 tbsp sherry
berries, grated chocolate or rose petals, to decorate

Steps:

  • Mix the berries and cherry jam together, and spoon into your trifle bowl. Scatter over the madeira cake and push down a little into the berries.
  • Put the custard, mascarpone and 3 tbsp sugar in a bowl together and beat until smooth, then dollop all over the trifle. Put the double cream, remaining 2 tbsp sugar and sherry in a bowl and beat until soft peaks form. Cling film both the trifle bowl and cream and chill until ready to serve. You can do this up to 24 hours in advance.
  • To serve, spoon the sherry cream all over the trifle, then scatter with your favourite decoration.
