- Heat oven to 180C/fan 160C/gas 4. Fry the vegetables in a little oil and butter in a heavy-based casserole for 4-5 mins until golden. Tip in the garlic and fry for a further min, then set aside.
- Put the venison into a plastic bag with seasoned flour and shake to coat. Add a little more oil and butter to the pan, then fry the venison over a high heat, stirring now and then, until well browned. Don't crowd the pan - cook in batches if necessary. Set aside with the vegetables.
- Add the redcurrant jelly and wine to the pan, and bring to the boil, scraping up all the bits that have stuck to the bottom. Pour in the stock, then add the thyme, bay leaf, meat and vegetables. Season if you like and bring to the boil. Cover and transfer to the oven for about 1½ hrs or until tender. Remove from the oven and check the seasoning.

MOM'S VENISON BARBEQUE SAUCE
We grew up on venison, and this is one of my Mom's great barbeque sauces to make with it.

- Preheat an oven to 325 degrees F (165 degrees C).
- Melt the butter in a large skillet over medium heat. Cook and stir the onion in the melted butter until softened, about 5 minutes. Stir the ketchup, lemon juice, Worcestershire sauce, brown sugar, and yellow mustard into the onion and butter; allow mixture to warm completely.
- Heat a separate skillet over medium-high heat. Season the steaks with salt and black pepper; cook in the skillet until browned on each side, 3 to 4 minutes per side. Transfer the steaks to a 9x13-inch baking dish. Pour the sauce from the skillet over the steaks.
- Bake in the preheated oven until meat is cooked through and no longer pink in the middle, about 1 hour.
- Transfer the steaks from the baking dish to a platter, shaking any excess sauce from the meat. Stir the cornstarch and water together until smooth in a small bowl, then mix into the hot sauce remaining in the baking dish until the mixture begins to thicken; pour over the steaks to serve.

GRILLED VENISON STEAKS
I've gone through much of the detail on how to properly grill a backstrap of venison (or elk, antelope, bison, moose etc.) above, but remember that this is done over high heat with the grill top open, and that it takes a good 15 to 20 minutes. Be patient and you will be rewarded.

- Coat the venison backstrap in oil and salt well. Set aside for 30 minutes to 1 hour at room temperature.
- Get your grill hot, clean the grates and lay the venison on the grill. Keep the grill cover open. Let this cook 5 to 7 minutes without moving, depending on how hot your grill is and how thick your venison loin is. You want a good sear, with good grill marks, on that side of the meat. Flip and repeat on the other side.
- Do the finger test to check for doneness. If the venison needs some more time, turn it to sides that have not had direct exposure to the grill and cook for 2 to 3 more minutes, checking all the way. If you are using a barbecue sauce, paint the meat with it and let it caramelize on the meat for a minute or three.
- When the meat has been cooked to your liking, take it off the fire and let it rest for 5 to 10 minutes. If you are using a spice rub now is the time to roll the meat in it.

BBQ VENISON SANDWICH | SLOW COOKER VENISON BARBECUE
These BBQ Venison Sandwiches are so easy to make. You need a venison roast, some barbecue sauce, a few pantry ingredients, and your slow cooker!

- Start by letting the roast come to room temperature for 30 minutes before you sear it (if you can). This helps create a nice crust on the sear you'll perform by ensuring the meat heats evenly. Then, pat it dry with a paper towel.
- Next, heat a skillet over medium-high heat with olive oil. Once hot, sear the roast on all sides until a nice, brown crust has formed. Take your time - this could take 15-20 minutes.
- Then, place your seared roast into the bottom of a slow cooker. Cover it with the onions, garlic, barbecue sauce, beer or stock, vinegar, mustard, salt and pepper.
- Cook for 8 hours on low or until the meat is literally falling apart. If it is too tough to pull apart, it needs more time. Shred the meat with forks.
- To serve, pull some out, place it on a bun, add more barbecue sauce, and top with pickles. Enjoy!
CROCK POT VENISON BARBECUE
You can use any red meat, just cut in 1-inch cubes. Good served over rice, potatoes or toast. This makes a lot so you might want to cut recipe in half.

- In medium bowl, combine Cajun seasoning & salt; rub ribs with spice mixture, pressing the spices into the meat to adhere.
- Lay onion & jalapenos in the bottom of a roasting pan, top with ribs and add ale.

- For the Cranberry Sauce: Place all ingredients, except stevia, into a stock pot and bring to a boil. Boil for 15 minutes or until the liquid is reduced to 1/3. Keep stirring to prevent the sugars from burning to the bottom of the pan.
- Remove from stove and allow to cool for about 15 minutes (this is to keep the blender from exploding on you).
- Place in a blender and puree.
- Strain the puree through a fine mesh strainer, using a wooden spoon to press and strain the sauce.
- Refrigerate. This sauce will hold for a few weeks in the refrigerator!
- Yield 1 ½ cups.
- For the Venison Burger: Mix the ground venison, oil, salt and pepper well. You can also add some pork fat if you like -- I like my burgers very lean so I don't add fat. You just have to be careful they don't fall apart on the grill, so add as much oil as you need to hold them together.
- Grill or broil for about 4 minutes per side.
- To build the burger, slice the Kaiser rolls. Place one or two slices of the Aged cheddar on the roll. Place a burger over the cheese and add as much cranberry BBQ sauce as desired. Top with a slice of red onion.

- Heat a small pot over medium heat. Once hot, add the butter and onions, then sauté until translucent. Whisk in the remaining ingredients and bring it to a soft boil. Reduce the heat and let the sauce simmer for about 15 minutes to reduce. Transfer to a blender (or use an immersion blender) and purée until smooth. Set aside about 1/2 cup of the sauce and dilute it with a 1-2 tablespoons of water to use for mopping.
- Trim the silverskin on the outside of the roast and season liberally with salt and pepper. Cover and refrigerate for at least 24 hours and up to 48.
- Prepare your smoker according to the manufacturer's instructions using your choice of wood or pellets. Set the temperature around 180 degrees.
- Place the venison on the top rack of the smoker if possible. Place a container or foil tray filled with water on the bottom rack directly underneath the meat to release steam. Smoke for 30 minutes until the outside is dry and tacky and then mop the surface with the barbecue sauce. Continue to mop every 30 minutes for 2 -3 more hours.
- Generously baste the meat with the barbecue sauce again, then wrap it tightly in either pink butcher paper or aluminum foil.
- Return the meat to the smoker, and increase the heat to 200 degrees. Use a meat thermometer to check the temperature. You should be able to feel the tenderness of the meat when pricking it. Pull the meat when it reaches about 180-190 degrees internally. Don't let it get past 200 degrees. This might take anywhere between 8-12 hours to achieve, depending on the size of the roast.
- Finally, rest the venison for 30 minutes, wrapped in an additional layer of foil and placed in an oven or cooler to keep warm. Slice it into thin pieces and serve with barbecue sauce, coleslaw, potato salad, pickles, and onions.
- Notes
- An optional step is to inject the meat in several places using a syringe filled with venison or beef stock. This helps to combat dehydration when smoked.
- Using pink butcher paper will keep some moisture in, but it is breathable, absorbs smoke, and creates a bark. Foil traps steam and is better at keeping the meat juicy, but gives it a subtle braise-like texture.
- The smoke times called for in this recipe are based on the cut of meat and the size. I used a 2 ½ pound outside round, or bottom round. It is the large muscle covering the outside of the hind quarter. If using bear, don't trim any fat.
