FETTUCCINE WITH VENETIAN CHICKEN SAUCE
This unique pasta features a silky smooth Venetian sauce made with tomato, carrot, and a generous amount of butter. Add bites of chicken breast to yield a hearty bowl of noodles.

Steps:
- In a saucepan, bring chicken stock to a boil. Cut the chicken breasts into lengthwise strips about the width of a finger, and drop them into the boiling stock.
- Cover and bring to a boil, then decrease heat and simmer for 4 minutes. Remove the cover and set aside, allowing the chicken to cool in the liquid. When cool, transfer chicken to a cutting board and reheat the stock.
- Cut the chicken strips lengthwise into ¼-inch thick slices, then cut across to make ¼-inch dice.
- Meanwhile, melt 1 tablespoon of the butter in another large saucepan. Stir in the garlic and cook over low heat until the garlic is very fragrant but not browned, a couple minutes. Add 1 cup water to prevent the garlic from browning.
- Add in carrots and salt, and cook over medium heat, stirring frequently, until the mixture is nearly dry with just a bit of water left, about 20 to 25 minutes. Stir constantly toward the end of this step to be sure the carrots do not brown at all.
- Add the hot stock and tomato juice. Cover and bring to a boil, then decrease heat, partially cover, and simmer gently for 35 minutes or until the carrots are very soft. Puree with an immersion blender or regular blender until you have a smooth puree. Set aside.
- Add the chicken to the sauce and reheat gently. Adjust seasoning with more salt if needed.
- Bring a large pot of water to a boil. Generously salt the water and add in the fettuccine. Cook, stirring often, until al dente.
- Drain the pasta and return to the pasta pot off the heat. Toss with the remaining butter and fold enough sauce to coat the noodles generously. Serve immediately with grated Parmigiano-Reggiano cheese on the side for topping.

VENETIAN CHICKEN IN TOMATO SAUCE ( POLLASTRO IN SQUAQUACIO)
We enjoy this recipe and its one we fall back on alot when making chicken. Its relatively easy with not alot of fuss. I found the recipe in Culiaria European Specialties. Italians like their chicken free range and often do their slaughter and pluck at home.

Steps:
- Preheat oven to 400 degree F.
- Soak mushrooms in lukewarm water for 15 minutes.
- Cut the chicken into 4 pieces.
- Peel and quarter the onions, and cut up the tomatoes into small pieces.
- Put the onions, tomatoes, mushrooms in their soaking liquid, garlic, basil, red wine, and a pinch of sugar in a roasting pan and mix well.
- Season the chicken pieces with salt and pepper, then place into the pan as well. Skin side up.
- Add butter and olive oil and roast for 1 to 1 ½ hours.
- Remove the meat from the sauce and keep warm.
- Press the sauce through a sieve, thicken if necessary, season to taste with salt and pepper and serve separately.
- Grilled polenta and the same wine used in the sauce make a good accompaniment.

CHICKEN VALENTINO
Steps:
- Preheat oven to 350 degrees F.
- In a 3-inch sided saute pan, heat the vegetable oil to 350 degrees F.
- Place the chicken breast between 2 pieces of plastic wrap, and pound the chicken until it is 1/4-inch thick. Remove the chicken and lightly season the breast with salt and pepper. Dredge the breast in the flour, then in the egg, and coat with bread crumbs. Put the chicken on a flat, workable surface, and place the red pepper and mozzarella down the center of the breast. Leave a 2-inch space at one end for closure, and starting at the other end of the breast, begin rolling the chicken, being careful not to lose the stuffing. Give the breast an even squeeze to secure the closure.
- Slowly place the breast, seam side down, in the oil. Allow the breast to fry until it is a golden brown color, about 5 minutes, before turning. Cook the other side until golden brown, and remove the breast to a baking sheet. Put it in the oven and allow it to finish cooking, approximately 10 minutes.
- Meanwhile, cook as much pasta as desired in a medium pot of boiling, salted water. Drain and reserve.
- Very carefully fry the basil leaf in the same oil until translucent.
- To serve the chicken, trim the outside edges of the breast, and then cut it on the bias. Coat a dinner plate with George's Pink Sauce and place some warm three-cheese tortellini in the center. Stand the Chicken Valentino in the front of the plate, exposing the stuffing. Garnish the plate with the fried basil leaf.
- Heat the marinara sauce in a small saucepan. Stir in the cream and fresh basil. Serve underneath Chicken Valentino.
ITALIAN CHICKEN AND SPICY TOMATO SAUCE
A wonderful quick and easy meal. I came up with this because I always have a ton of canned tomatoes on hand and a bunch of chicken. I wanted something different and low calorie. Once I snuck a bunch of broccoli VERY chopped up in here. I had to cook it forever so the husband couldn't tell it was in the dish, but it work like a charm! He still loved it!! Enjoy! (Pasta is included in the nutritional information, so cut back on that if you are watching your weight.)

Steps:
- Cut raw chicken into small cubed pieces.
- Place into skillet with Tbsp of olive oil.
- Cook until the chicken is almost done.
- Then add the chopped garlic and onion and continue to cook until the meat is completely cooked.
- Add tomatoes, Italian spices, red pepper flakes and salt and pepper to taste.
- Continue to cook for about 3-7 minutes more.
- Then add in the tomato paste.
- Cook about 5-7 minutes more to complete.
- Meanwhile, heat the pasta according to the package directions.
- After cooking the pasta, drain but do not rinse.
- Serve the sauce over the pasta and enjoy!
ESCABECHE DE PESCADO (CRUNCHY TILAPIA IN TOMATO SAUCE)
Another of my mother's favorite recipes. This is a great Panamanian recipe with lots of flavor that is easy to make! These amounts are approximate, so feel free to play around with amounts. I'd recommend 1 lb of tilapia for each person. As for the rice, my mom prefers minute white rice with this, but I prefer Jasmine. This goes wonderfully with Panamanian Tortillas (corn cake tortillas). This recipe can get smoky, so be sure there's plenty of ventilation!

- Chop up onion, green pepper, garlic, and cilantro and set aside.
- Mix flour, cornmeal, salt, and pepper and spread on a plate. (omit cornmeal for faster cooking time).
- Cut up each tilapia filet into 3 or 4 strips.
- Coat tilapia with the flour mixture.
- In a large frying pan, add 2 or 3 tablespoons oil and then add the fish.
- Flip over the fish when golden until both sides are cooked, adding rest of oil as needed.
- Remove fish from pan and set aside.
- Add onion, green pepper, garlic, and cilantro mixture and stir fry them in the remaining oil until onion is translucent.
- Add the tomatoes and the fish, folding the sauce over the fish gently.
- Heat through at medium temperature and serve over white rice.

- In a large bowl combine paprika, flour, salt, basil, pepper.
- Coat chicken pieces with mixture and set aside.
- Rinse mushrooms and break into small pieces (remove and discard thick stems).
- Place mushrooms, sun-dried tomatoes and onion in a crock pot.
- Place chicken pieces on top.
- In a bowl, combine wine, if using, and tomato sauce and lemon peel.

- Plunge the tomatoes in boiling water 2 to 3 minutes then place them under a cold water tap; remove skins.
- Dice the tomatoes and put aside.
- Cut the chicken into 4 quarters and season with salt and freshly ground black pepper.
- Brown the chicken pieces in the olive oil in a deep cast iron pot.
- Add the diced tomatoes, whole garlic cloves, vanilla pods and dry white wine.
- Simmer on a very low flame for 2 to 3 hours (the chicken should fall off the bone).
- Remove the chicken from the pot and arrange on a serving platter; cover with aluminum foil and keep warm.
- Crush the garlic cloves, discard the vanilla pods and reduce tomato sauce slightly.
- Add additional salt & freshly ground black pepper if needed.
- When your tomato sauce has reached desired consistency; cover the arranged chicken with the tomato sauce and serve immediately accomanied by potato rissoles or rice flavored with saffron.

This is from the Olive Garden, I had this for lunch and was so impressed I went on to the Olive Garden website, and there it was. Delicious and low in fat and calories. OG does not serve pasta with this, so it is a nice light meal, served with salad and bread sticks, of course.

- Combine Garlic Herb Seasoning ingredients in a small mixing bowl and set aside.
- Blend apricot sauce ingredients in a sauce pan. Add salt & pepper to taste. Bring to a boil and remove from heat.
- Combine tomato mixture in a separate mixing bowl and set aside.
- Blanch asparagus and broccoli for 1 minute in a pot of salted boiling water. Transfer immediately to ice bath to stop cooking.
- Coat sauté pan with 1Tbsp olive oil. While keeping ingredients separated in pan, heat cooled asparagus, broccoli and tomato mixture and until hot. Do not overcook.
- Grill chicken until internal temperature reaches 165°F.
- Place grilled chicken on a platter next to hot broccoli and asparagus. Sprinkle Garlic Herb Seasoning on broccoli. Pour tomato mixture on top of vegetables.
- Top chicken breasts with apricot sauce and garnish with chopped parsley.
