VELVEETA POTATO SOUP RECIPE
Delicious and creamy potato soup made with velveeta cheese.

Steps:
- Wash your potatoes.
- Chop the potatoes into equal size chunks. About 1 inch. You do not have to peel the potatoes.
- Place potatoes in a large pot and add enough water to cover them.
- Add salt and pepper. Bring to a boil until potatoes are fork tender, about 25 minutes.
- Stir in cream of chicken soup and Velveeta cheese.
- Let simmer until the cheese has melted.
- Stir in the milk.
- Heat all the way through and enjoy topped with finely diced chives.

Steps:
- Melt butter in a Dutch oven over medium-high heat. Add onion; cook and stir until tender, 5 minutes. Add potatoes and water; bring to a boil. Reduce heat; cover and simmer until potatoes are tender, 15 minutes. Stir in the milk, soup, garlic salt and pepper; heat until warmed through. Add cheese; stir until cheese is melted. Sprinkle with parsley.

EASY VELVEETA CHEESY POTATOES
Steps:
- Peel and cut potatoes into cubes, boil until tender and drain. Put in a 9x13-inch pan.
- Cut butter into cubes and place along the potatoes and season with salt and pepper. Put sour cream on the potatoes and spread across. Cut Velveeta Cheese into 9 blocks and place on top of the potato mixture.
- Bake at 350°F for 30 minutes. Stir mixture occasionally.

I know what you're thinking....another potato soup...that's what I thought too until I tasted it. This is good served with "Jiffy" cornbread muffins, especially on cool autumn nights or cold winter nights. Positively a comfort food. This recipe is from a lady that I worked with at school.

Steps:
- Put potatoes, carrots, onion and seasonings in a large pot.
- Cover with water and cook till potatoes are tender.
- (You don't drain the water, so don't overfill the pot.) In a separate bowl, mix the soup and softened cream cheese.
- Add this to the cooked potatoes, along with the milk.
- Let simmer for about 10 minutes, stir frequently so that it doesn't scorch.
- Add the velveeta and allow the cheese to melt.
- Serve hot.
