VEGETABLES & UDON IN CHICKEN - MISO BROTH
This is a good healthy soup. It takes time, but is worth it. It is based on a Womens Weekly recipe.

Steps:
- Combine bones, the water, carrot, celery, peppercorns, bay leaves and brown onion in large saucepan, bring to boil.
- Simmer uncovered 2 hours.
- Strain through muslin lined strainer into large bowl.
- Reserve stock, discard bones and veges.
- Meanwhile place mushrooms in medium heatproof bowl, cover with boiling water.
- Stand about 20 minutes or until just tender; drain.
- Discard stems, slice caps thinly.
- Bring stock to boil.
- Add miso, ginger and sauce, simmer uncovered 5 minutes.
- Just before serving, stir in noodles and mushrooms; simmer uncovered until noodles are just tender.
- Stir in extra carrot and green onion; sprinkle with nori.

MISO CHICKEN MEATBALLS IN BROTH
Make the most of miso with this flavourful broth, packed with chicken meatballs, rice noodles and baby spinach. The miso really adds flavour to the meatballs

- Mix together all the ingredients for the meatballs and season well. With wet hands, shape them into balls about the size of a walnut. Put them on a baking tray, cover and chill for about 30 mins.
- Heat about 1½ tbsp of oil in a large frying pan over a high heat and cook the meatballs in two batches, or use two pans, adding more oil if you need it. You need a good colour on the outside. Turn the heat down to cook the meatballs through, rolling them in the miso juices they release as they cook. It will take about 8-10 mins to cook each batch. Cook the rice noodles for 1 min less than pack instructions, drain and set aside.
- Heat the stock in a saucepan and add 1 chilli, the ginger and garlic. Simmer for 4 mins. Add the meatballs and soy and simmer gently for 3 mins, then add the spring onions, rice noodles, spinach and the rest of the chilli. Add a little lime to taste, then divide between bowls and serve.

MISO CHICKEN IN GINGER, LEEK AND SCALLION BROTH
This chicken dish gets most of its flavor from miso, the traditional Japanese paste made from fermented soybeans or other grains, and relies on boneless, skinless thighs, which are nearly impossible to overcook. First simmered in water (or chicken broth for depth), the thighs are then slathered with a seasoned miso mixture and roasted until the miso forms a beautiful glaze. Use light miso (yellow or white) for a mild, nutty flavor, or dark miso (red or brown) for a deeper rustic quality. Both kinds keep up to a year in the refrigerator.

- Put chicken thighs in a large pot, seasoning well with salt and pepper on both sides. Add smashed garlic cloves, ginger slices, onion, 6 cups water (or chicken broth, if you prefer) and mirin, and bring to a boil. Reduce heat to a simmer and cook, covered, for 30 minutes, until tender. Remove chicken to a baking dish. Strain broth into a bowl. Place back into the pot, and keep warm. Heat oven to 375 degrees.
- In a small bowl, combine miso, gochugaru, grated garlic, grated ginger, vinegar and sugar. Add a little hot broth to thin, then smear mixture over chicken and coat well.
- Bake chicken until browned and glazed, about 20 minutes.
- While chicken is cooking, bring broth to a simmer, taste and adjust seasoning. Add leeks and cook until just done - soft, but still green, about 5 minutes.
- To serve, slice chicken into 1/4-inch pieces and divide among large soup bowls, then ladle broth on top. Spoon any remaining miso mixture from pan over chicken. Garnish with scallions.

- Cook Udon according to package directions. Preheat a large skillet and saute the shitake mushrooms in the oil until tender. Add the garlic and saute for 1 minute more. Add the miso and water and bring to a gentle boil. Lower the heat to a simmer and add the kale. Toss the mixture until the kale wilts down. Stir in noodles. Serve in bowls and add soy sauce to taste.
