VEGAN CHORIZO AND VEGETABLE PAELLA



Vegan Chorizo and Vegetable Paella image

Fresh, colourful and healthy vegan chorizo and vegetable paella! This spanish classic is a one pan dish and a real crowd pleaser!

1/2 tsp saffron
600ml vegetable stock
6 vegan chorizo style sausages
1 onion
4 garlic cloves
1 yellow pepper (or red/orange)
6 cherry tomatoes
1 tbsp tomato puree
2 tsp smoked paprika
200g bomba paella rice
1 cup frozen peas
1 lemon
Handful of fresh parsley

Steps:

  • In a large pyrrex jug/bowl place hot vegetable stock and saffron, leave to infuse.
  • Heat a tbsp of oil in a paella/large frying pan on medium heat. Cut the chroizo sausages into small chunks and fry for about 5 minutes until starting to brown on all sides.
  • Transfer the chorizo pieces a bowl and save for later.
  • Pour a little more oil into the pan and add the finely chopped onion.Fry for a few minutes and then add the crushed garlic and chopped pepper.
  • After a few minutes add chopped cherry tomatoes, tomato puree and smoked paprika, Stir and leave to cook for a couple of minutes.
  • Next add the bomba paella rice. Stir and once the rice is translucent on the edges add the saffron infused stock.
  • Let gently simmer for 10 minutes without stirring it. Stir once and leave for a further 10 minutes.
  • Add the frozen peas and chorizo sausage and stir.
  • Taste and check the rice is cooked, it should still have a bit of bite but be soft on the outside. Season with salt and pepper.
  • Squeeze juice from half the lemon and use the other half to decorate.
  • Add chopped parsley and serve! Best eaten fresh but will keep in the fridge in an air tight container for 2-3 days.

Murcia is home to some of the best Spanish rice dishes, including this delicious vegetable paella!

Number Of Ingredients 13

2 Cups of paella rice (like Calasparra or Bomba)
1 cup of mushrooms (diced (you can use whatever you have available -- try with wild mushrooms if you can!))
2 ripe tomatoes (peeled and diced)
1 sweet red pepper (cut into thin strips)
2 cups of green beans (cut into 1 inch strips)
1 bunch of asparagus (cut into 1 inch strips)
4 artichoke hearts (cut in four)
2 cloves of garlic
A few threads of saffron
1 T of chopped parsley
2 T extra virgin olive oil
5 cups vegetable stock (or chicken stock if you are not vegetarian)
Salt (if necessary-- the stock may already have salt)

Steps:

  • Dice the mushrooms into bite size pieces and sear in the hot olive oil.
  • Remove with a slotted spoon (keeping the oil in the pan) and reserve.
  • In the same oil, fry the cloves of whole garlic until tender.
  • Remove the cloves of garlic and mash in a mortar and pestle with the parsley and saffron too.
  • Add the vegetables to the pan and sauté in the hot olive oil for two minutes.
  • Add the garlic paste and the mushrooms (with any juices that came out) back to the pan.
  • Add one cup of stock and let everything simmer at a low heat for 20 minutes.
  • Add the two cup of rice and four cups of stock to the pan.
  • Give everything a stir and bring the mixture to a boil.
  • As soon as the liquid starts to boil, lower the heat to low and let it cook for 15-20 minutes -- don't stir during this time!
  • When the rice is al dente and the liquid is absorbed, you're ready to eat!
  • To get the beloved "socarrat" (the caramelized, lightly burnt crust on the bottom of the paella pan) put a kitchen towel over the finished rice and let it rest for 5 minutes. Then remove the towel and put the paella back on the heat on high. Any liquid at the bottom of the pan will start to evaporate, and when you start to hear a sizzle (in Spain we say it sounds like rain) let it caramelize for about 30 seconds (it should not smell burnt). Remove and serve immediately.

8 vine-ripened plum tomatoes
Kosher salt
1/4 cup extra-virgin olive oil, plus more for drizzling
1 small onion, finely chopped
3 cloves garlic, finely chopped
1 1/2 teaspoons paprika
1/4 teaspoon cayenne pepper
1 teaspoon saffron threads
1 large bulb fennel, cut into 8 wedges
8 baby artichokes, trimmed and halved (see Cook's Note)
1 large Japanese eggplant, cut into 2-inch pieces
4 ounces shiitake mushrooms, stemmed
2 cups dry white wine
2 1/2 cups short-grain paella rice
4 ounces haricots verts or string beans, halved if large
1/4 cup capers, drained
1/4 cup piquillo or roasted red peppers, cut into strips
Chopped fresh parsley, for garnish (optional)

Steps:

  • Preheat the oven to 450 degrees. Core the tomatoes, cut into wedges and place in a medium bowl; season with salt, drizzle with a bit of olive oil and toss. Set aside.
  • Heat 1/4 cup olive oil in a 12-inch ovenproof skillet or a paella pan over medium-high heat. Add the onion, garlic, paprika, cayenne and saffron and season with salt. Cook, stirring occasionally, until the onion softens, about 5 minutes.
  • Add the fennel wedges and cook until lightly browned on one side, about 5 minutes. Flip the fennel and add the baby artichokes and eggplant to the skillet; cook until slightly tender, about 4 more minutes. Add the mushrooms and cook for 1 to 2 minutes. Pour in the wine and simmer until reduced by about one-third. Stir in the rice and 1 3/4 teaspoons salt; add just enough water to cover the rice completely, 2 1/2 to 3 cups. Increase the heat to high and boil for 2 to 3 minutes. Scatter the haricots verts and 2 tablespoons capers over the rice. Remove the pan from the heat and arrange the tomatoes on top; drizzle with any tomato juices.
  • Transfer the paella to the oven and bake, undisturbed, for 20 minutes. Scatter the remaining 2 tablespoons capers and the piquillo peppers over the paella. Turn off the oven but leave the paella inside to continue cooking until the rice is tender, 15 to 20 more minutes. Garnish with parsley, if desired

This weeknight paella comes together in just three basic steps: Sweat the aromatics, bake until tender, then return to the stovetop to cook until the rice becomes crunchy. It becomes even more weeknight-friendly if you take advantage of store-bought pre-cut vegetables to cut down on prep time. For a more protein-rich dish, season a dozen medium shrimp with olive oil, salt and pepper and nestle them into the paella during the last 5 minutes of baking. If preparing the dish for vegetarians, skip the chorizo, swap in vegetable broth and add an extra pinch of paprika, if desired. The only non-negotiable step is finishing the paella over direct flame on the stovetop so the rice at the bottom of the pan forms a delectable crust, also known as soccarat.

1/2 cup finely chopped yellow or white onion (about 1/2 small onion)

1 1/2 cups medium-grain paella rice, such as Bomba or Calasparra (about 10 ounces)
1/2 teaspoon smoked paprika
Kosher salt and black pepper
3 1/2 cups 1-inch cauliflower florets (about 10 ounces)
2 1/2 cups halved brussels sprouts, quartered if large (about 10 ounces)
1 cup fresh or frozen peas (about 5 ounces)
1/4 pound/4 ounces cured Spanish chorizo sausage, skin removed, sliced 1/4-inch thick
3 1/2 cups low-sodium chicken broth
Chopped scallions and lemon wedges, for serving

Steps:

  • Heat oven to 450 degrees. In a 12-inch cast-iron or ovenproof skillet, heat 2 tablespoons oil over medium. Add onion and garlic and cook, stirring occasionally, until softened, about 3 minutes. Add tomato paste and cook, stirring, until lightly caramelized, about 2 minutes. Stir in rice, paprika and remaining 1 tablespoon oil; season with salt and pepper. Cook, stirring, until well combined and rice begins to toast, about 1 minute.
  • Stir in cauliflower, brussels sprouts, peas, chorizo and broth, season with salt and pepper and bring to a boil over high heat. Transfer to the oven and bake, uncovered and without stirring, until rice is tender and all of the liquid is absorbed, about 20 minutes.
  • Transfer paella to stovetop and cook over medium heat, without stirring, to crisp up the bottom layer of rice, 2 to 3 minutes. You will hear it crackle; be careful not to burn. Let stand for 5 minutes, then sprinkle with scallions and serve with lemon wedges.

This recipe, which was adapted from one Valerie Gurdal cooked in the 2013 running of the Westport Paella Contest in Westport, Massachusetts, and brought to The Times by John Willoughby, is classical in its use of rabbit, chorizo, Spanish ham and Calasparra rice. But its depths of flavors are increased exponentially by grilling the meats before adding them to the paella pan. Cooked over an open fire, the dish may be scary to contemplate, but it is not at all difficult to pull off.

12 bone-in, skin-on chicken thighs
1 medium-size rabbit, quartered
Salt and pepper to taste
4 links fresh chorizo or good-quality dried chorizo, like Palacios
8 cups chicken broth
3/4 bottle (about 2 3/4 cups) dry white wine
2 teaspoons saffron threads, preferably Iranian
1/4 cup olive oil
1 medium onion, chopped
4 cloves garlic, chopped
1/4 pound jamón serrano, roughly chopped
1 1-kilogram bag short-grained Spanish rice, preferably bomba or Calasparra
4 medium-size ripe tomatoes, grated, skin discarded
1 cup green peas (optional)
Piquillo pimento, sliced into strips for garnish (optional)

Steps:

  • Build a medium-hot fire in your grill (when ready, you can hold your hand about 6 inches above the grill for only 2 or 3 seconds).
  • Season the chicken thighs and rabbit liberally with salt and pepper. Put the thighs, then the rabbit, then the chorizo (if using fresh) on the grill and sear well without cooking through, about 3 to 4 minutes per side for each. (If using dried chorizo, simply slice into chunks and add in step 5.) As each is seared, remove from the grill and set aside. As soon as the chorizo is cool enough, slice it diagonally into bite-size chunks.
  • Meanwhile, combine the chicken broth, wine and saffron in a medium saucepan, bring just to a simmer, then set on the side of the grill to keep warm.
  • Place a large paella pan on the grill, add the olive oil and heat until hot but not smoking. Add the onion and cook, stirring frequently, until translucent, about 3 minutes, adjusting the pan on the heat as needed to prevent burning. Add the garlic and cook, stirring, for 1 minute, then add the jamón and cook, stirring, until it is just heated through, about 3 or 4 minutes.
  • Add the rice and stir until well coated, then add the tomatoes and smooth out the rice to an even thickness. Slowly and without stirring, add enough of the broth mixture to leave just a thin layer of broth above the rice, then tuck the chicken, rabbit and chorizo pieces into the rice. Simmer slowly, moving the pan around on the fire as needed to keep the simmer going; avoid boiling. Gently add small amounts of liquid as needed so it's not totally dry. When the rice is creamy and just al dente and the chicken, rabbit and chorizo are cooked through (should take 20 to 35 minutes), remove pan from heat and stir in the peas, if using. If using pimento strips, place on top.
