WHITE CHOCOLATE CHUNK-MACADAMIA NUT COOKIES

2 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup (2 sticks) unsalted butter, softened
1 cup light brown sugar
1 egg
2 teaspoons vanilla extract
8 ounces (1 1/2 cups) white chocolate baking squares), cut into small chunks, or white baking chips
3/4 cup roughly chopped, unsalted, toasted macadamia nuts

Steps:

  • Preheat the oven to 375 degrees F. Line a cookie sheet with parchment paper.
  • Combine the flour, baking soda, baking powder, and salt in a mixing bowl.
  • Using a mixer, beat the butter in a large mixing bowl until fluffy, about 2 minutes. Add the brown sugar and mix together until smooth.
  • Add the egg and vanilla. Stop to scrape down the sides of the bowl with a rubber spatula. Blend in the flour mixture in 3 stages and stir in the white chocolate and the nuts.
  • Scoop out walnut-sized mounds of the cookie dough and place on the cookie sheet, leaving 2-inches between the mounds. Bake for 8 to 10 minutes, until the cookies are golden. Remove the cookie sheet from the oven and transfer the cookies from the parchment to cooling racks. Store in an airtight container at room temperature for up to a week. Freeze for longer storage.

You will need to refer to my "Vegan White Chocolate!" Recipe to make the White Chocolate unless you are one of the lucky ones to have found commercial white chocolate.

1 cup brown sugar
1/2 cup sugar
1/2 cup earth balance vegan margarine, softened (or other Vegan Butter)
1/2 cup vegetable shortening
1 teaspoon vanilla extract
1 egg substitute (1 TBSP of the Powder & 3 TBSP of Water)
2 tablespoons applesauce (Trust Me!)
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
3/4 cup white chocolate, -you can use 2 batches of my vegan white chocolate also posted on this website. chop into 1/4-1/2 in (Remember, for this recipe to remain Vegan, the White Chocolate needs to be Vegan)
1/2 cup macadamia nuts, chopped

Steps:

  • Pre-Heat oven to 350 Degrees.
  • In a large bowl, beat sugars, butter, shortening, egg replacer, applesauce & vanilla until smooth.
  • Stir in flour, baking soda & salt until mix completely
  • Stir in Vegan White Chocolate & Macadamia Nuts.
  • Drop dough by Tablespoonfuls about 2 inches apart on a cookie sheet.
  • Bake 10-12 minutes.
  • Remove Cookies from sheet and put on wire rack or big plate and let cool (They need time to cool down so they set).
  • ENJOY YOUR DELICIOUS VEGAN TREAT!

But I found a recipe online and modified it a little and here you go, the ever elusive VEGAN WHITE CHOCOLATE!!! (You can eat it as a bar or chop it up and use it in Vegan White Chocolate Macadamia Nut Cookies- My Recipe will be posted soon!) P.S. You can find all of the ingredients at Whole Foods!

Number Of Ingredients 6

1/3 cup cocoa butter (Cacao Butter is the same thing, just make sure it's vegan)
1/4 cup powdered sugar
1 1/2 tablespoons powdered sugar
1 teaspoon soy powdered milk (not to be confused with Soy Protein, Very Different)
1 pinch salt
1/2 teaspoon vanilla extract

Steps:

  • Melt the Cocoa Butter on the top part of a double boiler (2 sauce pans that are the same size, put a little bit of water for boiling in the bottom one and turn the stove on high, put the Cocoa Butter in the top pan and put the pan on top of the bottom pan and watch it melt).
  • Mix the Powdered Sugar with the Soy Milk Powder & salt in a small bowl and set aside.
  • When the Butter is done melting, pour it into the powder mixture and mix until smooth.
  • Add the Vanilla Extract and mix until smooth.
  • Pour into whatever mold you wish (Ice Cube trays work too).
  • Put in Fridge and chill until firm.

2 large eggs

1 cup macadamia nuts, coarsely chopped
2 cups white chocolate, broken into bite size chunks

Steps:

  • Preheat oven to 350°F.
  • Cream butter and sugars together until light and fluffy; beat in the eggs and vanilla.
  • Mix together the flour, baking soda, and salt; add gradually to the butter mixture.
  • Fold in the macadamias and chocolate.
  • Drop by heaping tablespoonfuls onto greased baking sheets.
  • Bake at 350° for 10-12 minutes or until undersides are lightly golden.
  • Cool slightly before removing from cookie sheets.

2/3 cup shortening
1 1/2 cups light brown sugar
1 tablespoon water
1 teaspoon vanilla extract
2 eggs
1 1/2 cups flour
1/3 cup unsweetened cocoa powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 cup white chocolate, chunks or 1 cup white chocolate chips
1 cup coarsely chopped macadamia nuts

Steps:

  • Preheat oven to 375 degrees. Combine shortening, brown sugar, water, and vanilla.
  • Beat eggs into creamed mixture.
  • Combine flour, cocoa, baking soda and salt.
  • Mix into creamed mixture at low speed just until blended.
  • Stir in white chocolate and nuts.
  • Drop rounded tablespoonfuls of the dough 2 inches apart onto an ungreased baking sheet.
  • Bake 1 baking sheet at a time for 7-9 minutes., or until cookies are set.
  • Do not overbake.
  • Cool for 2 minutes on a baking sheet.
  • Place sheets of foil on countertop.
  • Remove cookies to foil to cool completely.
