VEGAN TOFU AND SPINACH SCRAMBLE
This low-calorie breakfast scramble is high in fiber and protein. The lemon juice adds a little brightness. Serve with whole-wheat toast to round out the meal.

- Combine the tofu, turmeric, 1/4 teaspoon salt, 1/2 teaspoon black pepper and cayenne, if using, in a medium bowl. Toss well to combine and set aside.
- Heat the oil in a large nonstick skillet over medium-high heat. Add the scallion whites and cook, stirring, until soft, about 1 minute. Add the tofu mixture and cook, stirring occasionally, until the tofu is lightly browned and resembles scrambled eggs, about 5 minutes.
- Add the spinach, lemon juice and 1/2 teaspoon salt and stir until the spinach is wilted, about 1 minute. Add the tomatoes and scallion greens and stir until the tomatoes are just heated through and begin to soften, about 1 minute. Remove from the heat, add the basil and stir to combine. Season with salt and pepper.

Tofu scramble is one of my favorite breakfast items with a little toast and some fresh berries. You can add other vegetables to the tofu, but mushrooms are my favorite.

- Add all of the spice mix ingredients into a bowl and stir to combine.
- Heat a large skillet over medium-high heat and add the olive oil. When hot, add the mushrooms, pepper, onion, and garlic and sauté for about 8 minutes until everything just starts to brown.
- Add the tofu blocks and break it apart with your spoon until you get a nice scramble texture with lots of chunks. Stir in the spice mix and black beans. Heat through for another 5 - 8 minutes until hot.

This was my first attempt at a tofu scramble and it was awesome. We like a lot of heat in our food around here, so adjust the pepper and pepper sauce to taste. This meal is 100% appropriate for the 21 day Quantum Wellness Cleanse (Google it!)

- Heat the oil over medium heat in a large skillet. When hot, add the onion and sauté for 5 minutes, or until soft.
- Add the garlic, nutritional yeast and all the spices EXCEPT the salt. Sauté for 1 minute, adding a touch of oil if necessary.
- Add the pepper and mushrooms, sauté for 3 or 4 minutes, or until tender.
- Add the chopped tomatoes and tofu. Gently stir-fry for 5 minutes or until the tofu is completely heated through. Sprinkle the salt over all, stir through and serve.

- If you haven't already, drain your tofu and press it for at least 20 minutes. I wrap my block of tofu in a paper towel and put it on a plate. I put another plate over the top and weigh it down with bags of dried beans. Easy!

- Heat a pan and toss in the sliced mushrooms and diced bell pepper. Add a pinch of salt to help it lose the water.
- When the mushrooms lost most of their water and the bell pepper is soft move the vegetables to one side of the pan and add 1 teaspoon of canola oil on the empty side of the pan. Scramble the tofu in there with your hands or use a fork to do so.
- Add the turmeric powder, ground pepper, and kala namak (black salt). Mix everything together, so the tofu gets an even yellow color.
- Keep it on medium to high heat while stirring for about 4-5 minutes. You can always add more kala namak or spices to taste. Sprinkle with parsley.

- First add your onion to a large rimmed skillet or pan over medium high heat. Let the onions start to stick (just slightly) and then add a tablespoon of water. Repeat this process for about 2-3 minutes.
- Now add the tofu: crumble it with your hand over the pan. You can also cut the tofu into chunks and scramble it in the pan with your cooking utensil.

- Prepare Veggies: using a damp paper towel, gently wipe mushrooms and then thinly slice. Trim red pepper and slice into strips. Slice scallions on the diagonal.

- Heat oil in a large skillet. Saute onion 2 minutes over medium high heat, then turn heat to medium add garlic and other veggies. Lightly salt. Sauté until al dente, turning heat down if necessary and/or covering.
