THE BEST VEGAN BARBECUE SEITAN WINGS
This is the easiest seitan recipe in the world. Tossed in a delightful plant-based version of the classic, mustard-heavy barbecue sauce from South Carolina, these vegan barbecue seitan wings will melt in your mouth.

- To make the seitan wings, stir together the vital wheat gluten, garlic powder, and salt in a large bowl.
- Slowly stir in the broth, and when the gluten becomes too hard to stir, knead it with your hands until the seitan comes together and forms a ball.
- Bring a large pot of salted water to a boil over high heat. Pull tiny pieces of seitan from the dough ball and drop them in the water. Continue this process until all the dough is used. (The seitan will expand; the smaller the pieces you pull off, the better.)
- Boil the seitan, reducing the heat if needed, for 30 minutes. Drain the pot and let the seitan cool completely.
- While the seitan cools, preheat the oven to 375°F (191°C).
- When the seitan pieces are cool enough to handle, squeeze as much liquid out of them as possible with your hands. Place the wings on a medium baking sheet. Drizzle the oil onto the wings and toss to coat them.
- Bake the wings for 20 minutes, flip them and bake for 20 to 25 minutes more, or until they are brown and firm.
- When the wings are almost done, make the barbecue sauce. In a small saucepan over medium-low heat, whisk together the tomato sauce, vinegar, maple syrup, mustard, brown sugar, onion powder, garlic powder, salt, and cayenne pepper. Bring the sauce to a simmer, reduce the heat to low and simmer for 10 to 15 minutes. Taste and adjust the seasonings. Remove the saucepan from the heat
- When the wings are done, toss them in the barbecue sauce and serve them topped with the chives (if using).
VEGAN SEITAN HOT WINGS

- Dough: In a large bowl stir together all dough ingredients until a ball forms. Transfer to a clean surface and knead for about 5 minutes, or until dough is elastic and cohesive (it will still be lumpy, that's okay!)
- Shape: Portion dough into about 20 pieces, then roughly form into nugget shapes (they will expand when cooking, so make them smaller than you think you'll want them!). Let hot wings rest while you prepare the broth.
- Broth: Add all broth ingredients to a large pot and bring to a simmer. Gently lower the seitan wings into the broth, ensuring the dough is covered by the broth (if not, transfer to a smaller pot). Partially cover and simmer for 30 minutes.
- Wing Sauce: Meanwhile, pick your wing sauce and whisk together all the ingredient for your chosen sauce.
- Saute: Remove from pot and let cool enough to touch. Grease a large saute pan over medium heat, then add the hot wings. Cook, flipping once while cooking, until wings are golden brown on all sides.
- Serve: Toss wings in your wing sauce and serve warm.

GAME TIME! VEGAN BUFFALO HOT WINGS
Buffalo wings were created in Buffalo, New York. One story goes, buffalo wings were first prepared at the Anchor Bar by Teressa Belissimo, who owned the bar along with her husband Frank. Upon the unannounced, late-night arrival of their son, Dominic, with several of his friends from college, Teressa needed a fast and easy snack to present to her hungry guests. It was then that she came up with the idea of deep frying chicken wings (normally thrown away or reserved for stock) and tossing them in cayenne hot sauce. This vegan version has all the taste of the original version, but not the meat. Adapted from Joni Marie Newman, a great game snack! Joni has some great recipes!

- To make wings:.
- Cut tofu (or seitan, or tempeh, or gardein strips) into 16 "chicken finger" sized pieces.
- Set up a breading station. In one shallow dish, mix together flour, pepper, paprika, oregano and basil.
- In a seperate dish, place the coconut milk.
- Double dredge one "wing" by first dipping it into the coconut milk, then into the flour mixture, then back into the coconut milk, then back into the batter.
- Place in the hot oil and fry until golden, about 1 minute.
- Transfer to a paper towel lined plate to absorb excess oil.
- Repeat with remaining wings.
- To make the Buffalo Sauce, melt butter and stir in hot sauce, garlic powder and salt and pepper.
- Place fried wings in a bowl and pour Buffalo sauce all over wings.
- Gently toss to coat.
- To make Cool Ranch Dressing, mix all of the ingredients together until well incorporated. This makes about 1 1/2 cups dressing.
- Store dressing in an airtight container for up to two weeks in the refrigerator.

Steps:
- Place seitan pieces and melted margarine in large, ziplock, freezer bag with rest of ingredients and shake well.
- Let marinate for 20 minutes in the refrigerator.
- Take seitan out of excess sauce(Save excess sauce for reduction sauce) and put pieces on baking sheet and bake for 10-15 minutes on 350 (turn them mid-way through).
- Reduction Sauce:.
- Melt margarine in sautee pan and add excess marinade.
- Add the 1/2 ounce of both habanero and Louisiana hotsauce, incorporate.
- Stir in brown sugar and minced onions.
- Once the sauce becomes syrupy either remove from heat and serve on the side of the hotwings, or add hotwings to the pan, stir everything together, and serve the wings pre-sauced.
