Vegan Red Lentil Soup (Gluten-Free + Easy to Make) image

This spiced Vegan Red Lentil Soup is a warm, comforting meal that comes together in just 45 minutes. It's full of flavor from ginger, garlic, and spices, with a luxuriously rich texture. It's perfect with a squeeze of lemon to brighten things up!

2 tablespoons avocado oil or olive oil
1 small onion, diced
1 large carrot, diced
2 stalks of celery, diced
4 cloves garlic, crushed
1 teaspoon freshly grated ginger
1 teaspoon cumin
1 teaspoon turmeric
1 teaspoon garlic powder
1 teaspoon ginger powder
1 teaspoon salt
4 cups vegetable broth
2 cups water
1 (15 oz.) can crushed tomatoes
1½ cups red lentils, sort and rinse before using
3 cups spinach or mix of greens, I used a "power greens" blend of spinach, arugula and baby chard
1 lemon, zest and juice
Lemon wedges
Microgreens

Steps:

  • In a soup pot, heat the avocado or olive oil over medium heat. Once the oil is shimmering, add the onion, carrot, and celery and cook for about 5 minutes, until the onion is translucent.
  • Add the garlic, grated ginger, cumin, turmeric, garlic powder, ginger powder, and salt, and stir to combine and coat all the veggies in the spices.
  • Let cook for 2 minutes, until fragrant, and then add the vegetable broth, water, tomatoes, and red lentils. Stir and bring to a boil, then turn down and let simmer for 30-40 minutes, until the red lentils are soft. Taste, and add more salt to your tastes if desired.
  • If desired, puree half the soup to help make it creamier. You can also just leave it as is if you prefer a more broth-y soup. I pureed some of mine with an immersion blender.
  • Stir in your greens and let them wilt, and then add in lemon juice and zest. Serve with more lemon if desired (I recommend), and garnish with some microgreens!

Vegan Red Lentil Soup - a thick and hearty ''spiced'' creamy soup with an incredible combination of red lentils, turmeric, ginger, cumin, coconut milk, onions, and spinach.

3/4 cup uncooked red lentils (rinsed and drained)
2 tbsp vegetable oil
1 large onion (diced)
2-3 cloves garlic (I used 2 large) (minced)
1 1/2 tsp turmeric (fresh)
1 1/2 tsp ground cumin
1/2 tsp cinnamon
1/4 tsp ground cardamom
1 can diced tomatoes ((14 oz can))
1 can full-fat coconut milk ((14 oz can))
3 1/2 cups vegetable broth (low-sodium )
1 1/2 tsp fresh lime juice (or lemon juice)
Salt and pepper (to taste)
Red pepper flakes or cayenne pepper (to taste (for a kick of heat!))
4 cups spinach (fresh or frozen)

Steps:

  • In a large pot, add the oil, onion, and garlic. Add a pinch of salt, stir, and sauté over medium heat for 4 to 5 minutes until the onion softens.
  • Stir in the turmeric, cumin, cinnamon, and cardamom until combined. Continue cooking for about 1 minute, until fragrant.
  • Add the diced tomatoes (with juices), entire can of coconut milk, red lentils, broth, salt, and plenty of pepper. Add red pepper flakes or cayenne, if desired, to taste. Stir to combine. Increase heat to high and bring to a low boil.
  • Once it boils, reduce the heat to medium-high, and simmer, uncovered, for about 18 to 22 minutes, until the lentils are fluffy and tender.
  • Turn off the heat and stir in the spinach until wilted. Add the lime juice to taste. Taste and add more salt and pepper, if desired. Ladle into bowls and serve with toasted bread and lime wedges.

This gluten-free vegan soup is hearty, nutritious and oh-so easy to make! Packed full of red lentils means it's packed full of iron and fibre. This quick and easy to make recipe is perfect for vegan meal prep and makes the ideal lunch or appetizer.

1 1/2 cups Red lentils rinsed well
2 tbsp Olive Oil
2 Bay Leaves
2 tbsp Tomato paste, (heaping tablespoons)
1 tbsp Italian spice blend
4 Cloves garlic, (minced)
2 large Carrots, (chopped)
1 small Yellow onion, (diced)
4 cups "Chicken-less" broth or vegetable broth
1 cup Water
Hot chili flakes ((to taste))
1 large Handful of chopped greens ((optional))
Fresh ground black pepper ((to taste))
Fresh parsley or other fresh herbs ((to taste))

Steps:

  • Start by rinsing the red lentils well. They can be soaked and then rinsed if you are especially sensitive to lentils.
  • In a large saucepan on medium heat, add the olive oil.
  • Next, add in the onion and carrot. Cook for about 3-4minutes or until soft.
  • Now add in the bay leaves, and Italian spice blend. Mix well and cook for another 1-2 minutes. Add in minced garlic and cook for another 30seconds.
  • Next, add in broth, water, red lentils, tomato paste and chili flakes. Bring the soup to a boil and simmer for 15 minutes. Stir occasionally to prevent the soup from sticking to the bottom of the pan or burning.
  • Once the 15 minutes is up, scoop out 2 cups of the soup and transfer to a blender. Blend until smooth, and add the blended portion back into the pot with the remainder of the soup. Mix well.
  • If you have spinach or kale to add into the soup, add into the pot and simmer until it softens. About 5 minutes. If using kale, massage with a little olive oil first to remove the bitterness.
  • Now serve into a bowl, add your toppings and enjoy!

6 cups water (or vegetable soup stock)
1 canned crushed tomatoes (15 oz/425 g)
3 tablespoons gluten-free tomato paste
1 teaspoon salt

Steps:

  • In a large pot, heat olive oil, add chopped onions and sauté until onions are translucent and soft.
  • Add minced garlic and sauté 2 more minutes.
  • Add celery, carrots, potato, kale, paprika and herbs and sauté for a few more minutes stirring frequently.
  • Add lentils, water, crushed tomatoes and tomato paste. Bring to a boil, cover and simmer over low heat for 25 minutes (If you are using a pressure cooker, cook under pressure for 7 minutes and use a natural releasing method.).
  • Add salt, infuse love and serve!
