Steps:
- Preheat oven to 350.
- Stir together the flour, salt, and baking powder in a large bowl.
- In a small bowl, mix together the rice milk and the vinegar.
- Now add the milk mixture and the rest of the ingredients (sugar, banana, oil, raspberries, and strawberries) to the bowl with the dry mixture. You may need to mash the banana with a fork, depending on how soft it is.
- Scoop the mixture into lightly oiled muffin tins, or use muffin liners. Fill the cups about 3/4 full. Bake for 35-45 minutes.

Steps:
- Preheat your oven to 375 degrees. Grease 12 muffin tins.
- Mix together dry ingredients.
- In another bowl, mix soymilk, oil, and vanilla, but be careful not to over-mix. It should be a bit lumpy.
- Mix the wet and dry ingredients, fold in the strawberries, and spoon batter into muffin tins.
- Bake for 15 - 20 minutes, or until a toothpick comes out dry.
- Allow to sit for at least 10 minutes inside the pan, then remove them and place on a cooling rack.

- In a larger bowl combine flour, baking powder, baking soda, and salt. Set aside. In a separate bowl, mix together sugar, canola oil, lemon zest, and vanilla extract. - Make sure you have your chopped strawberries close by and give the strawberry jam a quick mix to loosen it up so it's not clumpy.

- Preheat your oven to 180°C / 350°F (or 160°C/325°F if you're using a fan or convection oven). Line a muffin tin with 10 muffin cases.
- Add in the soy milk, vinegar, oil and vanilla. Mix everything together until you have a smooth batter, making sure to get any dry mixture that may be stuck at the bottom of the bowl.
- Add in the raspberries and gently fold them in. It's important to do this carefully and fold until the raspberries are JUST combined*. Otherwise, the juices will run too much and change the texture and colour of the muffins.
