1/3 cup quick oats
1/3 cup water
2 teaspoons sugar
1/2 teaspoon baking powder
1/2 teaspoon cinnamon
1 dash salt

Steps:

  • Grind oats using a blender into a flour.
  • take the oat flour and put it in a bowl, mix in the cinnamon, baking powder, salt, and sugar. Then add the water ( you can use milk or soy milk, rice milk, whatever). Now is the time to add in extras like extracts.
  • Mix until well combined, lumps are OK.
  • If your using any kind of fruit gently fold in,.
  • Heat a griddle and spoon out some of the mixture, let cook until bubbles appear and pop at the surface and it will lift without falling apart.
  • Gently flip and let throughly cook through about 1-2 minutes.
  • Keep warm.
  • YUMMY!.

1 ¼ cups all-purpose flour
2 tablespoons white sugar
2 teaspoons baking powder
½ teaspoon salt
1 ¼ cups water
1 tablespoon oil

Steps:

  • Sift the flour, sugar, baking powder, and salt into a large bowl. Whisk the water and oil together in a small bowl. Make a well in the center of the dry ingredients, and pour in the wet. Stir just until blended; mixture will be lumpy.
  • Heat a lightly oiled griddle over medium-high heat. Drop batter by large spoonfuls onto the griddle, and cook until bubbles form and the edges are dry. Flip, and cook until browned on the other side. Repeat with remaining batter.

2/3 cup gluten free oats ground in blender to become oat flour
2/3 cup water
1 teaspoon baking powder
2 teaspoons flax seed meal
1 teaspoon cinnamon
1 teaspoon vanilla
2 teaspoons honey
1 banana, use 1/4 in recipe, smashed and 1/4 to top pancakes
1/2 teaspoon salt

Steps:

  • Stir batter together, may have lumps, that is OK.
  • let sit 1 min while you heat skillet to medium.
  • dissolve 1 tsp of coconut oil in skillet, pour in batter. Cook until bubbles form/pop and edges of pancake get browned, flip cook 1-2 mins more.
  • Top with very thin slices of banana on each pancake and serve with warm maple syrup. AMAZING! Makes approx 6 pancakes.

  • Heat a griddle or large skillet (preferably cast iron - see notes) on medium-low to medium heat. Using a paper towel, rub on a bit of oil. Each pancake takes about 7-8 minutes total to cook, so if you can only fit one pancake on your griddle, use 2 pans at once to reduce the total cooking time.
  • In a medium bowl, mix together the oats and 1 cup (240 milliliters) oat milk. Microwave on high for 1 minute 30 seconds. Remove from microwave and give the oatmeal a stir. Mix in the sunflower oil. Set aside and allow to cool for a few minutes.
  • In a separate large bowl, mix together the flour, baking powder, baking soda, sugar and salt. Make a well in it and mix in the oatmeal with a fork.
  • Slowly mix vinegar and the remaining 1/2 cup oat milk, adding about 2 tablespoons at a time. You may not need the entire 1/2 cup. How much you end up using will be dependent on the brand and type of oats you use. The batter should be the consistency of a thick bowl of oatmeal, so when you drop the batter on the griddle, the batter will slowly form into a circle shape with the gentle help of a spoon to spread it.

  • Start by combining rolled oats and filtered water in a bigger clean bowl. Cover the bowl with clean kitchen towel or a lid and soak overnight or for 6-8 hours. You can leave the bowl onto kitchen counter.
  • Next, add salt and cinnamon. Using immersion blender process until you’ve got a smooth batter. Now, throw in psyllium husks as well as coconut flour and blend again. Finally, stir in apple cider vinegar and let the pancake batter sit for at least 10 minutes. The longer it sits (even for a few hours in fridge), the thicker the batter – perfect for those chubby pancakes you see on the photos.
  • For frying the pancakes, add a few drops of coconut oil or avocado oil onto a good quality non-stick pan and swipe it off with folded kitchen paper. Let all the oil absorb into the paper and use it to swipe the pan clean between pancakes. Heat the pan up over medium heat.
  • Now, if you make small pancakes, add one heaped tablespoon of batter (as much as you can fit) into each cavity of your pancake pan. Should you make bigger pancakes, put 2 heaping tablespoons of batter onto pan and even it out with a spoon. The frying time greatly depends on your stove. I flip it around when it is dry on top and also check the colour of the bottom side. I cook the pancakes for about 6 minutes on one side and about 3 minutes on the other side. I have gas stove. It’s important to have the heat at medium or even a bit lower as high heat would burn the pancakes before they can cook through. Let the pancakes cool a bit before eating.
