These vegan oatmeal chocolate chip cookies are everything you want from a cookie: crispy on the outside, soft on the inside and loaded with chocolate-y goodness. Best of all, these one-bowl cookies are ready in just 30 minutes!

1 1/2 cups (120 grams) quick oats* (- $0.25)
1/2 cup (63 grams) all-purpose flour (- $0.04)
1/2 cup (100 grams) white sugar** (- $0.43)
1 tsp baking powder (- $0.01)
1/4 tsp salt (- $0.01)
2/3 cup (130 grams) vegan chocolate chips (- $2.00)
1/3 cup (40 grams) chopped walnuts ((optional) - $0.92)
¼ cup (60 ml) neutral-flavored oil (- $0.20)
6 tablespoons plant-based milk (- $0.03)

Steps:

  • Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • In a large bowl, combine the oats, flour, sugar, baking powder, salt, chocolate chips and walnuts.
  • When the oven is heated, add the oil and plant-based milk to the dry ingredients and mix well.
  • Form the dough into balls. You can use a cookie or ice cream scoop, I just get in there with my hands and press the dough together into balls. You can make them as big or small as you like. I generally get about 10 cookies from this recipe.
  • Place the balls on the prepared baking sheet and gently flatten them with the palm of your hand.
  • Bake for 20 minutes, or until they no longer appear wet on top and the bottoms are beginning to turn golden brown.
  • Remove from the oven and let cool on the pan.

1/4 cup brown sugar
1 tablespoon white sugar

1/4 teaspoon salt

Steps:

  • Cream together margarine and sugar in a bowl, then mix in vanilla.
  • Add flour and salt, mix well.
  • Mix together baking soda and water, and then add to the batter.
  • Stir in the oats and chocolate chips.
  • Drop by spoonfuls onto a cookie sheet (no need to grease it), and bake at 350° for 10 minutes.

1 medium banana

1 tablespoon molasses

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Lightly grease a cookie sheet.
  • Sift flour, brown sugar, sugar, instant oatmeal, salt, baking powder, cinnamon, and nutmeg. Stir in walnuts and raisins.
  • Combine banana, cocoa, and almond milk in a food processor; process until pureed. Transfer to a bowl and mix in vegan margarine, orange juice, vanilla, and molasses until combined. Pour into the dry mixture and mix with a spatula to combine. Roll dough into 1-inch balls and place 2 inches apart on the prepared cookie sheet.

2 tablespoons canola oil
1 cup sugar
1/3 cup soymilk
1 teaspoon pure vanilla extract

1 cup rolled oats
1/2 cup non-dairy chocolate chips
1/2 cup chopped macadamia nuts or 1/2 cup walnuts

Steps:

  • Preheat oven to 425°F Oil a large baking sheet; set aside.
  • Whisk together first five ingredients until very smooth. Add remaining ingredients, and stir to combine (be sure to mix in thoroughly the baking soda and salt--you may want to stir these into the flour first).

I find different vegan butter brands have different moisture contents, so if you find the dough is a little dry, add up to 1 Tablespoon of water until the dough holds together. When it just comes together stir in the chocolate chips. Feel free to snack on cookie dough, it can be eaten raw!
  • Take two tablespoons of cookie dough and roll into a ball and place on the prepared baking sheet. Repeat until you have used up all the cookie dough. Bake 14 to 18 minutes, the cookies will have spread but look almost raw, they should be golden on the on underside. Let cool on the pan to let the cookies set.
