Vegan Sloppy Joes (with Lentil

These vegan sloppy joes are incredibly easy to make and create a delicious, nutritious meal that's way better than using store-bought sauces. The recipe can be made gluten and/or soy free.

4 cups cooked lentils ((2 19 oz/ 540 mL cans, drained and rinsed))
2 cups diced tomato ((1 28 oz/ 540 mL can, drained))
1 cup chopped onion
3 cloves garlic (, minced or crushed)
4 tablespoons soy sauce (, low sodium*)
2 tablespoons apple cider vinegar
2 tablespoons maple syrup
2 tablespoons molasses
2 teaspoons Dijon mustard
2 teaspoons ground cumin
2 teaspoons chili powder
1 teaspoon dry oregano
1 teaspoon dry basil
1 teaspoon salt
½ teaspoon black pepper

Steps:

  • Rinse and drain canned lentils or use fresh cooked lentils. Add to a large pot.
  • Use a mesh strainer to drain excess liquid from a can of diced tomato. Add to the large pot with the lentils.
  • Peel and dice the onion. Peel then mince or crush the garlic.
  • Add onions and garlic to the large pot along with all remaining ingredients.
  • Place the pot on your stove over high heat and bring to a boil.
  • Cook over high heat, stirring regularly, until the mixture has thickened - about 20 minutes. There shouldn't be any pooling liquid in the bottom of the pan (when you scrape across the bottom, the mixture should hold its shape and not pool into the area that was just scraped).
  • As liquid evaporates, the mixture will thicken. It's important to keep stirring, especially towards the end of cooking, to keep the mixture from sticking to your pot. You may want to turn the heat down to medium once most liquid is absorbed.
  • Serve on fresh buns with additional toppings if desired (see above for serving ideas).

Steps:

  • Combine onion and both bell peppers in the bowl of a food processor; pulse until blended into a uniform size but not liquid.
  • Heat olive oil in a large pot over medium-high heat. Add onion-bell pepper mixture, carrot, and zucchini. Cook and stir until soft and heated through, 6 to 8 minutes.
  • Add broth and lentils; bring to a boil. Reduce heat and simmer, uncovered and stirring occasionally, until lentils are tender, about 15 minutes.

1 -15 ounce can cooked chickpeas, rinsed and drained (1.5 cups)
Coleslaw for topping, if desired
Hamburger buns, I used Udi's gluten free
1 teaspoon olive oil
1 small shallot, diced (about 1/4 cup)
2 small cloves garlic, minced
1 cup tomato sauce
1 tablespoon ketchup
1 tablespoon pure maple syrup
2 teaspoons apple cider vinegar
1 teaspoon tamari
3/4 teaspoon smoked paprika
1/2 teaspoon mustard powder
1 teaspoon chili powder
1/4 teaspoon ground cumin
1/4 teaspoon salt
1/8 teaspoon black pepper

Steps:

  • Place lentils in a medium sized pot and cover with 1 cup of water and a pinch of salt. Bring to a boil, reduce to a simmer and cook lentils until tender and cooked through, 20-25 minutes.
  • Heat a large pan over medium heat and add the olive oil and shallots. Season with a pinch of salt and cook for 2-3 minutes. Add the garlic and cook for 1 more minute. Next, add the remaining BBQ sauce ingredients and cook for 5 minutes, stirring occasionally. Add the cooked lentils and chickpeas to the BBQ sauce and cook for another 5-10 minutes until everything is heated through.
  • Scoop the sloppy joe mix onto the buns and top with coleslaw if desired.

2 cups brown or green lentils
1 quart vegetable broth, divided
1 teaspoon kosher salt, divided
1/2 green bell pepper (about 3/4 cup diced)
1 medium onion (about 1 cup diced)
4 garlic cloves
2 tablespoons olive oil
1 cup plus 2 tablespoons organic ketchup, divided*
2 tablespoons plus 1 teaspoon vegan Worcestershire sauce, divided (or use this substitute)
1 teaspoon each mustard powder, onion powder, and chili powder
Hot sauce, to taste
Pickled onions, to serve
Bread and butter pickles, to serve
8 whole wheat buns (make sure they are vegan, use gluten-free as desired)

Steps:

  • In a large saucepan, place the lentils with 3 cups of the vegetable broth, 2 cups water, and 1/2 teaspoon kosher salt. Bring to a rapid simmer. Reduce the heat and simmer uncovered for about 20 to 25 minutes, until the lentils are tender but still hold their shape (start tasting at 15 minutes; the exact timing depends on the heat level and your pan size). Drain the excess liquid.
  • Once you've started the lentils, dice the bell pepper. Dice the onion. Mince the garlic.
  • In another large saucepan, heat the olive oil over medium high heat. Add the bell pepper and onion and cook 5 minutes until the onions are translucent. Add the garlic and cook for 1 minute. Add vegetable broth, 1 cup ketchup, Worcestershire sauce, mustard powder, onion powder, and chili powder. Simmer for 5 minutes until thickened.
  • When the lentils are done, add them to the sauce. Cook on low heat for about 5 minutes. Then remove the heat and stir in the remaining 2 tablespoons ketchup, 1 teaspoon Worcestershire sauce, and 1/2 teaspoon kosher salt.
  • Serve on a bun with pickled onions and pickles. (If desired, toast the buns prior to serving.) Make ahead: Leftovers save well for 3 to 4 days. Make in advance, refrigerate and then reheat in a saucepan. Add an extra squeeze of ketchup if it seems dry.

1 small head of cauliflower
2 cups cooked French green lentils (about ¾ cup dry lentils)
2 teaspoons olive oil
½ yellow onion, finely chopped
4 garlic cloves, minced
2 tablespoons tomato paste
1 15-oz. can tomato sauce
3 tablespoons maple syrup
3 tablespoons brown sugar
2 teaspoons dijon mustard
2 teaspoons apple cider vinegar
1 teaspoon soy sauce
½ teaspoon chili powder
½ teaspoon paprika
1½ teaspoons salt
Few twists of black pepper
Pinch of cayenne (optional)
Vegan hamburger buns, for serving

Steps:

  • Begin cooking the lentils if you aren't using pre-cooked lentils.
  • Chop the cauliflower into florets and add them to the bowl of a food processor. Pulse a few times to break up the chunks. You want the pieces to be slightly larger than you'd make them for cauliflower rice.
  • Drizzle the olive oil into a large, deep skillet and warm over medium-low heat. Add the onion and garlic. Sauté until the onion is soft, about 3 minutes. Add the cauliflower and cook 2 minutes more.
  • Add the cooked lentils, tomato paste, tomato sauce, maple syrup, brown sugar, dijon mustard, apple cider vinegar, soy sauce, and spices to the skillet and stir to combine. Simmer for 15 to 20 minutes, until the mixture has thickened. Adjust flavors to taste.
  • Preheat a dry pan (I used a cast iron skillet) over medium-low heat. Toast the tops and bottoms of the hamburger buns, about a minute on each side.

1 yellow onion (peeled and roughly minced)
1 bell pepper (small dice (I used half of a red pepper and 1/2 of a green pepper for colour))
1 cup shredded carrot

1 (12-ounce) package plant-based "meat" crumbles (about a 3/4 pound package)
1 (19-ounce) can lentils (rinsed and drained )
1 tablespoon chili powder
1/2 teaspoon dried oregano
1/2 teaspoon ground cayenne pepper
1/2 teaspoon salt (or to taste)
1/2 teaspoon freshly ground black pepper
3 tablespoons tomato paste
1 (14-ounce) can tomato sauce
1 to 1.5 cups low sodium vegetable broth (depending on the consistency you want)
1 tablespoon yellow mustard
1 tablespoon maple syrup (optional (adds a touch of sweetness if the tomato sauce is a little acidic))
1/2 tablespoon balsamic vinegar (or apple cider vinegar)

Steps:

  • Heat olive oil in a 12-inch sauté pan over medium heat. Add onion, bell pepper, carrot and garlic and cook, stirring occasionally, for 3 to 5 minutes until the veggies start to soften.

1 cup uncooked red lentils ((rinsed and drained))
3-4 tbsp low-sodium vegetable broth
1 medium red onion (diced)
2 medium red bell peppers (diced)

2 tbsp chili powder
1 tbsp smoked paprika
1/4 tsp sea salt

Steps:

  • Cook the green lentils (rinsed and drained) according to package instructions. Halfway through, add the red lentils, stir to combine, and let both lentils finish cooking together in the same pot.
  • (Do this step while the lentils are cooking.) In a large pan, saute the diced onion and bell peppers in vegetable broth over medium heat until the onions are soft and translucent.
  • Add the minced garlic, chili powder, smoked paprika, tomato paste, and salt. Stir to combine and let the mixture cook for 2-3 minutes or until fragrant. You might need to add a splash of water if the mixture gets to dry and it's sticking to the pan.
