- Press the tofu for 20 minutes. Either use a tofu press or place the tofu on a plate, with another plate on top of it and then place something heavy on top, like a heavy pot.
- While the tofu is pressing, chop up the red pepper and spring onions and mix up the sauce ingredients in a bowl.
- When the tofu is pressed, slice it into cubes and then add to a frying pan with the sesame oil and fry, gently turning over the tofu until it's nicely browned. Remove from the pan.
- To the pan add sesame oil and dried chilies and fry for 2 minutes. Then add the crushed garlic, ginger, bell pepper, spring onions and peanuts. Stir fry for 2 minutes.

- Drain excess water out of the tofu. I usually do this by wrapping them with a towel and placing a plate on top of them but you can also opt to use a tofu press.
- Slice the tofu diagonally into large squares before cutting them in half to form triangles. You can also slice them into 1-inch cubes.
- Heat a large non-stick pan over high heat. Add in around ¼ cup of oil. Note that this will depend on the size of your pan. But a thin later of oil to cover the surface of the pan is good. Leave the oil to heat up.

- If using tofu (can use seitan or chickpeas instead), press it for 15 minutes or longer using a store-bought tofu press or a homemade one.
- It’s an optional step, but I find it adds a depth of flavor. I recommend soy sauce, non-alcoholic mirin (chinese cooking wine, sherry will also work), and a little water. Pour it over your freshly pressed tofu and it will soak it up like a sponge in just a few minutes.
- Cut up your veggies while your tofu is pressing or marinating, and measure out all the ingredients for the sauce. It will make everything go smoother when you start cooking.
- Start your garlic and ginger sauteing in a nonstick pan. You can use oil if you want, or just use a little water. Saute them for a minute over medium high heat until they become fragrant.
