VEGAN GREEK PIZZA

Hummus and tomato sauce are slathered onto a thick crust and piled with Kalamata olives, artichoke hearts and fresh herbs to create this flavor-packed Greek-inspired pizza.

1 pound pizza dough, (store-bought or homemade)
1 tablespoon olive oil
1-2 tablespoons cornmeal, (optional)
1 15 ounce can crushed tomatoes
3 garlic cloves, (minced)
2 teaspoons dried oregano
1 teaspoon vegan granulated sugar
Salt and pepper to taste
1 15 ounce can chickpeas, (drained and rinsed)
3 tablespoons tahini
3 tablespoons olive oil
2 tablespoons lemon juice
2 garlic cloves
1/2 teaspoon ground cumin
Salt to taste
1 cup Kalamata olives, (halved)
1/2 cup marinated artichoke hearts
1/4 cup sliced fresh basil leaves
2 scallions, (chopped)

Steps:

  • Preheat the oven to 400°.­ Lightly oil a baking sheet.
  • Roll the dough to a 12 to 14 inch circle and carefully transfer to the baking sheet. Brush the edges with olive oil and optionally sprinkle with cornmeal. Place into the oven and bake until browned and puffy, about 20 minutes.
  • Make the sauce while the crust bakes. Place tomatoes, garlic, oregano, and sugar into a small saucepan and set over medium heat. Bring to a simmer, lower heat, and allow to simmer, stirring occasionally, until it thickens up a bit, about 20 minutes. Season with salt and pepper to taste.
  • While the crust bakes and the sauce simmers, make the hummus. Place the chickpeas, tahini, olive oil, lemon juice, garlic, and cumin into a food processor bowl and blend until smooth. You can thin the mixture with 1 to 2 tablespoons of water in order to smooth it out if you like, but try to keep it relatively thick. Season with salt to taste.
  • When the crust has finished baking, spread the top with hummus in an even layer. Spread the sauce over the hummus, then distribute the olives, artichoke hearts, basil and scallions over the sauce.
  • Slice and serve.

After coming in late from a trip, I picked up a Greek Pizza at a deli for a quick meal. We all loved it. Here's my attempt at duplicating the taste at home, which actually turned out better than the original!

2 (14 inch) pizza crusts, unbaked (I use Pizza Dough and Sauce)
1 (6 ounce) can tomato paste
1/2 cup red wine or 1/2 cup water
1 teaspoon italian seasoning
1 teaspoon salt
1 tablespoon sugar
1 tablespoon olive oil
1 lb mozzarella cheese, shredded
1/4 cup small fresh spinach leaves
1/2 red onions or 1/2 sweet vidalia onion, sliced very thin
1/2 red bell pepper, sliced thin
4 -6 ounces sliced black olives
4 ounces feta cheese, crumbled
black pepper

Steps:

  • Pat the crust dough out on two greased pizza pans.
  • Combine all the sauce ingredients, stirring until smooth. Divide between crusts.
  • Top each pizza with half the mozzarella cheese, followed by other ingredients in order given.
  • Bake in a preheated oven at 400°F for 20 minutes or until cheese is browned and bubbly.

  • Whisk all feta ingredients, except for the tofu, in a medium sized bowl until combined. Use your hands to crumble the tofu into the bowl and stir to make sure all of tofu is coated. Cover and let sit in the refrigerator for at least an hour. It will become more flavorful the longer it sits.
  • Pre-cook pizza dough if recipe requires. Spread desired amount of marinara sauce over crust and then evenly distribute all of the toppings. You may not use all of the feta, depending on how big your crust is, but you can enjoy it on many other things!
  • Place pizza in a 450 degree oven and bake until pizza dough is cooked through and toppings are heated through. Time will depend on whether or not you pre-cook your pizza dough. Sprinkle finished pizza with chopped basil leaves and enjoy!
