My wife and I have tried many waffle recipes and were never quite satisfied. We've combined them into this one that we love. Delicious and a great way to start the day. We usually add a touch more cinnamon and some syrup.

Steps:

  • Preheat a waffle iron according to manufacturer's instructions.
  • Mix flour, water, coconut oil, sugar, apple cider vinegar, baking powder, cinnamon, and salt together in a bowl until batter is smooth.
  • Ladle batter into the waffle iron and cook according to manufacturer's instructions until crisp, about 5 minutes.

Cinnamon apple waffles made in 1 bowl and 30 minutes. Wholesome, simple, vegan, and perfect for both everyday and special occasions.

3 medium apples ((2 tart, 1 sweet // peeled and cubed))
1 Tbsp vegan butter or olive oil
1-2 Tbsp brown sugar ((optional))
1/4 tsp cinnamon
1 Tbsp flaxseed meal ((to make flax egg))
2 ½ Tbsp water ((to make flax egg))
1 Tbsp vegan butter ((melted // or sub avocado or coconut oil))
1 scant cup unsweetened almond milk
1 Tbsp maple syrup or agave ((or honey if not vegan))
1/4 cup unsweetened applesauce or pumpkin puree
1/4 cup brown sugar
3/4 tsp cinnamon
1/4 tsp salt
1/2 Tbsp baking powder
1 cup whole-wheat pastry flour
1/4 cup oats

Steps:

  • Start by sautéing your apples. Heat a large skillet over medium heat. Once hot add butter, then apples and stir. After a few minutes add in brown sugar and cinnamon. Cover to let steam and soften, stirring frequently. Once softened (about 4-5 minutes) remove lid to let caramelize a bit more. Remove from heat.
  • Next, prepare your waffles. Start by preparing flax egg by combining water and flaxseed in a large bowl and letting rest for 5 minutes.
  • Add maple syrup, applesauce, melted butter or oil, brown sugar and whisk. Add almond milk and stir once more.
  • Add flour, baking powder, salt and cinnamon to a sifter and sift over wet ingredients. Stir until just combined. Gently fold in oats, then half of the apples. If batter appears too thick, add a little almond milk. Let batter rest for 5 minutes while preheating waffle iron.
  • Once preheated, generously spray the waffle iron with non-stick cooking spray and spoon about 1/2 cup of the batter onto the center of the iron, press down to spread the batter, and cook according to your machine's instructions. I like to set mine to the darkest setting so it gets extra crispy.
  • Once done, remove and place on cooling rack to let steam roll off and crisp up a bit. Serve warm with vegan butter (such as Earth Balance) and maple syrup, and the leftover apples. Store in an airtight container in the freezer and warm in the toaster or oven.

2 cups (250g) flour (spelt, light whole wheat, all-purpose flour, or GF flour blend), see notes
2 tablespoons sugar (coconut, pure cane, or turbinado)
1 tablespoon baking powder
1 3/4 cups (403ml) unsweetened vanilla almond milk
1/4 cup olive oil, applesauce (see notes), or vegan butter (I recommend Miyoko's)
pinch of mineral salt, optional

Steps:

  • Preheat waffle maker according to manufacturer's instructions. Also, preheat oven to 200 degrees F., for keeping the waffles warm.
  • In a medium sized mixing bowl, combine the flour, sugar, baking powder, oil and non-dairy milk, mix well, until most of the flour lumps are gone.
  • If not using a non-stick waffle iron, spray waffle plate with cooking oil. Using a 1/2 measuring cup (amounts will vary depending on your waffle iron), scoop up batter and pour in the center of waffle plate. Close the cover and cook as directed by manufacturer's instructions. For crispier waffles, let cook 5 - 12 seconds longer, depending on your waffle iron.
  • Gently remove with the tip of a fork and place on a wire rack in the oven until the remaining waffles are made.
  • Pair your waffles with fresh blueberries, strawberries, raspberries or blackberries, and top with pure maple syrup or this easy homemade Blueberry Compote. You may even like to drizzle with vegan chocolate syrup and add a dollop of whipped coconut cream.
  • Makes 4 - 5 waffles.
  • Leftover waffles can be kept in the refrigerator for up to a week, or store in the freezer for up to 1- 2 months. When ready to eat, pop them in the toaster oven. Larger batches can be warmed in a preheated oven set to 350 degrees for 10 - 15 minutes, using a greased or lined baking sheet.

1/2 cup oil
1 teaspoon vanilla
2 eggs
2 cups flour
4 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons sugar
2 teaspoons cinnamon

Steps:

  • In a small bowl, whisk together the flour, baking powder, salt, sugar, and cinnamon until blended. In a medium bowl, whisk together the milk, oil, vanilla, and eggs.
  • Add the wet ingredients to the dry ingredients, and mix until just combined (a few small lumps are okay). Let rest five minutes.
  • While the batter is resting, preheat your waffle iron. Add the batter and cook according to your waffle maker's directions. (For my belgian waffle maker, 1 cup of batter cooked for 4 minutes was perfect.)
  • Serve warm, and top with syrup, whipped cream, and cinnamon, if desired.

1 1/4 cup Soy Milk ((300ml) or other non-dairy milk)
2 Tbsp Coconut Oil (Melted)
2 tsp Vanilla Extract

Steps:

  • Set your waffle iron to preheat while you mix the batter.
  • Sift all purpose flour into a mixing bowl and add sugar, baking powder and salt. Mix together.
  • Add soy milk, melted coconut oil and vanilla extract and mix into a batter. Don't overmix.
  • When your waffle maker is heated, grease the waffle iron or spray it with non-stick spray (see notes). Pour even amounts of batter into the waffle machine and close the machine.
  • Cook for 3-5 minutes or until golden.
  • Serve with vegan butter, powdered sugar and fresh berries with loads of syrup drizzled over the top.

4 cups water
3 tablespoons olive oil
1/4 cup natural cane sugar
2 teaspoons vanilla
1 teaspoon salt
3 cups rolled oats
3/4 cup cornmeal or 3/4 cup millet flour
3/4 cup whole wheat flour

Steps:

  • Process all ingredients in a blender until smooth. For small blenders, blend with less of the water, then pour into a pitcher and add remaining water.
  • Pour onto preheated, nonstick waffle iron, using enough batter to cover grids and edges.
  • Bake until steaming stops, from 7 to 14 minutes, depending on the waffle iron style. If batter gets too thick, add more water and blend before pouring. In my waffle iron I have to make sure to put a generous amount of batter on the iron or it will stick. Waffles may be frozen and reheated in toaster or oven. For variation, blend in a banana.
