Easy Vegan Applesauce Cake image

I am a very picky eater and I love this cake! My husband and my kids (ages 7, 6, and 2) also love it. The entire batch is gone in less than one day and I don't mind making it a few times a week because it's so easy! It's healthy too so I made it for breakfast once :)

1/3 cup oil
3/4 cup sugar
1 1/2 cups unsweetened applesauce
2 cups whole wheat flour
1/2 teaspoon salt
1 1/2 teaspoons baking soda
1 teaspoon cinnamon

Steps:

  • Preheat oven to 350 degrees.
  • Mix oil and sugar; then add applesauce.
  • Combine dry ingredients and add to applesauce mixture; beat until smooth.
  • Pour into a greased and floured 8-inch square baking dish.
  • Bake for 40-45 minutes
  • Use icing if desired.

2 cups flour
1 cup sugar
1 tablespoon cornstarch
2 teaspoons baking soda
1/4 teaspoon salt
1/3 cup cocoa
1 1/2 cups applesauce

Steps:

  • Pre-heat oven to 325 degrees. Grease and flour a bundt cake pan. Note: You can use other cake pans, but because this cake is a bit heavy, layered cake pans are not recommended.
  • Mix all of the dry ingredients together in a large bowl.
  • Add applesauce and mix well until batter is smooth.
  • Bake for 50-55 minutes, until done. You can always tell that a cake is finished baking by sticking a toothpick in the center of the cake. If the toothpick comes out clean, that is, not covered in batter, then your cakes is done baking.
  • Frost, if desired, and enjoy!

Many of the ingredients used here are staples of the vegan pantry: Coconut oil adds body, and tapioca flour and xanthan gum mimic the thickening qualities of eggs.

3/4 cup all-purpose flour
1/2 cup pastry flour
3 tablespoons tapioca flour
1/2 cup unsweetened cocoa powder
2 teaspoons baking powder
1/2 teaspoon fine salt
1/2 teaspoon xanthan gum
1 1/2 cups vegan sugar or organic unbleached cane sugar
1/2 cup applesauce
1/2 cup raw organic coconut oil, melted
3 tablespoons grapeseed oil
1/2 teaspoon apple cider vinegar
1 cup vegan chocolate chips

Steps:

  • Preheat the oven to 375 degrees F. Line three baking pans with parchment paper and set aside.
  • Whisk the flours, cocoa powder, baking powder, salt and xanthan gum together in a medium bowl.
  • Put the sugar, applesauce, coconut oil, grapeseed oil and vinegar in a large bowl and beat with an electric mixer on low speed until combined, about 1 minute. Add the flour mixture to the bowl with the wet ingredients, alternating with 1/3 cup water, until fully combined. Fold in the chocolate chips.
  • Spoon heaping tablespoons (or a small scoop) of the dough onto the baking sheets, 1 inch to 1 1/2 inches apart. Bake the cookies in two batches, two sheets at a time, until the cookies are set and beginning to crack on the top, 16 to 18 minutes. Rotate the sheets halfway through for even baking.
  • Remove from the oven and let the cookies cool on the sheets for 2 minutes, and then remove to a rack and cool completely. Bake the remaining cookies on the third pan following the above directions.

Super moist, easy and doesn't need icing. I've had many people request this recipe and have had it described as "the best chocolate cake I've ever eaten." To make this healthier, I change the applesauce amount to 2 1/4 c. and use only 1/4 c. of oil.

2 cups applesauce

1 cup semi-sweet chocolate chips

Steps:

  • Preheat oven to 375 degrees F.
  • Beat sugar, oil, eggs, and applesauce.
  • Add flour, soda, salt, cinnamon, and cocoa. Beat well.
  • Pour into 9x13 inch pan.
  • Bake at 375 degree F oven for 15 minutes.
  • Remove cake and sprinkle chocolate chips over the top.
  • Return to oven and bake 15-25 minutes longer.
  • Does not need icing.
  • ENJOY!
