Steps:
- In a small pot over medium heat, add the rice vinegar, sugar, and salt and whisk to combine. Bring to a boil and continue whisking until the salt and sugar have dissolved. Remove the pot from the heat.
- Add the cooked sushi rice to a large bowl and the cooked black rice to a separate medium bowl. Add ¾ of the rice vinegar mixture to the sushi rice and the remaining ¼ to the forbidden rice. Mix until the vinegar mixture is well distributed.
- Make the shiitake veggie roll: Heat the sesame oil in a medium pan over medium heat. Once the oil is simmering, add the shiitake mushrooms, soy sauce, garlic powder, and pepper and cook for 6-8 minutes, until the mushrooms have released their juices and begin to crisp up.
- Place 1 sheet of nori over a bamboo sushi mat. Scoop 1 cup (230 g) of sushi rice on top of the nori. Fill a small bowl with water to dip your fingers into--this will prevent them from getting sticky when handling the rice. Using your fingers, spread the rice in an even layer over the nori, leaving a 1-inch (2-cm) border at the top to seal the roll.
- Over the bottom quarter of the nori, layer the spinach, cucumber, carrot, and shiitake mushrooms. Use your fingers to hold the vegetables in place while you begin to roll the nori. Squeeze the bamboo mat around the roll as you go to ensure a tight sushi roll. Transfer the sushi roll to a cutting board and cut it in half, then cut each half into quarters for a total of 8 sushi pieces.
- Make the sweet potato tempura roll: Heat the vegetable oil in a medium pot until it reaches 375ºF (190ºC).
- In a medium bowl, combine the flour, baking powder, salt, and pepper and mix well with a fork. Pour in the ice water and mix until incorporated--some lumps are okay. Drop the sweet potato sticks into the batter and toss with your fingers to ensure they are thoroughly coated.
- Transfer a few of the sweet potato sticks at a time to a spider and carefully drop them into the hot oil. Cook for 3-4 minutes, until crispy, then transfer to a paper towel-lined plate.
- Place 1 sheet of nori over a bamboo sushi mat. Scoop 1 cup (230 g) of sushi rice on top of the nori. Using your fingers, spread the rice in an even layer over the nori, leaving a 1-inch (2-cm) border at the top to seal the roll.
- Over the bottom quarter of the nori, layer the sweet potato tempura and avocado.
- Make the avocado cucumber mango roll: Place 1 sheet of nori over a bamboo sushi mat. Scoop the forbidden rice on top of the nori. Using your fingers, spread the rice in an even layer over the nori, leaving a 1-inch (2-cm) border at the top to seal the roll.
- Over the bottom quarter of the nori, layer the avocado, cucumber, and mango. Use your fingers to hold the filling in place while you begin to roll the nori. Squeeze the bamboo mat around the roll as you go to ensure a tight sushi roll. Transfer the sushi roll to a cutting board and cut it in half, then cut each half into quarters for a total of 8 sushi pieces.
- Make the teriyaki tofu roll: Place 1 sheet of nori over a bamboo sushi mat. Scoop the remaining cup of sushi rice on top of the nori. Using your fingers, spread the rice in an even layer over the nori, leaving a 1-inch (2-cm) border at the top to seal the roll.
- Over the bottom quarter of the roll, layer the teriyaki tofu, red bell pepper, and carrot.
- Serve the sushi with wasabi, pickled ginger, and soy sauce.
- Enjoy!
VEGAN SUSHI
Steps:
- Rinse the sushi rice in a fine mesh colander under cold water.
- Either cook the rice in your Instant Pot or cook it on the stove top. If you are using an Instant Pot use the rice setting (low pressure for 12 minutes). Allow the pressure to release naturally. The rice should be tender and the water should be completely absorbed. If you are cooking it on the stove top, bring the rice with the water to a boil, then reduce the heat to low, cover, and cook for 20 minutes. I usually prefer to make sushi rice in my Instant Pot.
- Combine the rice vinegar, the sugar, and the salt in a small bowl. Add the cooked rice to a large bowl and stir in the vinegar sugar mixture until well combined. Let it cool down. Cover the bowl of rice with a damp napkin or kitchen cloth until it's ready to use.
- In the meanwhile, cut the cucumber, the carrots, the avocado, and the tofu in thin strips. Heat some oil in a flat pan and cook the tofu strips for about 4 minutes on high heat until crispy. Add a tablespoon of soy sauce while cooking.
- Place a nori sheet lengthwise on a bamboo rolling mat with the shiny side down. Fill a shallow bowl with cool water and wet your hands. Take a handful of rice and place it in the center of the nori sheet. Spread evenly, leaving a 3/4 - inch strip of the nori sheet uncovered on the top.
- Place some thin strips of cucumber, carrot, tofu and avocado in a line on the near edge of the nori sheet. Make sure not to overfill the nori.
- Tuck your thumbs underneath the bamboo mat and hold the ingredients with your fingers. Then roll the bamboo mat and the nori sheet towards your fingers with slight pressure. Make sure that the ingredients are fully covered with the rice and the nori sheet. Roll slowly to ensure that the sushi is rolled evenly.
- Wet your fingers again in the shallow bowl of cool water and moisturize the uncovered strip of the nori sheet. Then completely roll up the nori sheet with the bamboo mat.
- Place the sushi roll on a cutting board and carefully cut it in half with a sharp knife. Put the knife under cold water before and after cutting. Put the sushi halves beside each other and carefully cut them into small slices.
- Sprinkle the vegan sushi rolls with sesame seeds and serve with soy sauce. If you want you could also add wasabi and pickled ginger.

VEGAN BLACK RICE SUSHI ROLLS RECIPE BY TASTY
Here's what you need: organic tempeh, soy sauce, medium carrot, purple cabbage, toasted nori, black rice, avocado, english cucumber, cashews, water, olive oil, lime juice, maple syrup, white miso paste, black sesame seeds, fresh ginger, bamboo sushi mat
Provided by Crystal Hatch

Yield 3 rolls

Steps:
- In a medium bowl, pour the soy sauce over the tempeh. Set aside to marinate for at least 25 minutes. While the tempeh marinates, prepare the rest of the ingredients.
- Heat a medium nonstick pan over medium-high heat. Add the marinated tempeh strips. Cook for 1-2 minutes on each side, until golden brown and lightly charred. Remove from the pan and set aside to cool.
- In a medium bowl, toss together the carrot and cabbage.
- Build the sushi rolls: Lay a sheet of toasted nori, shiny side down, on the bamboo mat or clean work surface. Pat about ¼ of the rice evenly over the nori, leaving about a ½ inch (1 ¼ cm) of space at the top. Layer a few slices of avocado over the rice toward the bottom of the nori sheet. Top with a few pieces of cucumber, some of the carrot-cabbage mixture, a couple of pieces of tempeh, and about 1 tablespoon of chopped cashews.
- To close the sushi roll, brush a bit of water across the empty edge of the nori. Using both hands, roll the filled end of the nori sheet over onto itself, carefully tucking all of the ingredients inside. Continue rolling until the nori sheet covers the rice and seal with the damp edge. Repeat with remaining nori sheets and fillings.
- With a sharp knife, cut each roll into 6-8 pieces, depending on preference. Pro tip: If you wet the knife before slicing, it will cut through the nori more cleanly. But be careful!
- Make the sesame miso sauce: In a small bowl, combine the olive oil, lime juice, maple syrup, miso, sesame seeds, and ginger, if using. Whisk to combine.
- Serve the sushi rolls with the sauce for dipping.
- Enjoy!

HOW TO THROW A SUSHI PARTY RECIPE BY TASTY
Here's what you need: short grain white rice, water, sugar, salt, rice vinegar, sushi-grade tuna, mayonnaise, sriracha sauce, imitation crabs, mayonnaise, chicken thighs, teriyaki sauce, cucumber, carrot, avocados, sushi grade nori, soy sauce, wasabi, ginger
Provided by Hitomi Aihara

Steps:
- In a bowl wash the rice 3 times with water.
- In a pot add rice and water and cover and bring it to boil. Reduce heat and simmer for 10 minutes. Then take off heat and rest for another 15 minutes.
- In a microwave safe bowl heat sugar, salt and vinegar for a minute or until the sugar is completely melted.
- Transfer the rice onto a serving bowl and pour the vinegar over the rice.
- Using a spatula fold in the vinegar and cut into the rice. Have another person fan the rice while mixing to get it down to room temperature.
- Prep the fix-ins. Slice tuna and chop until the meat is mashed together. Transfer into a small bowl.
- Mix in mayonnaise and sriracha sauce. Set aside
- In a medium bowl marinate chicken with your favorite teriyaki sauce. Fully cook chicken and slice and set aside in a bowl.
- Cut imitation crab into small pieces. Mix in mayonnaise until fully coated. Set aside.
- Cut veggies into thin slices. Cut avocado into bite size pieces as well.
- Set up the table: After placing your rice and fix-ins place each sushi rolling station with a bamboo rolling mat. Set out a bowl of water so the rice does not stick to your hands. Have a cutting board close by with a knife. Let's roll.
- On the rolling mat place one sheet of nori. There is a smooth side and a rough side. The rough side will face up.
- Wet your hands and grab a handful of rice and place it on your nori. Spread the rice evenly throughout the nori without smushing the rice down. LEAVE SPACE AT THE BOTTOM. (This extra sliver of nori will stick onto the rice when rolling.)
- Place the fix-in at the bottom row of the rice.
- Grabbing both nori and the mat roll the mat over so the extra space at the bottom touches the other side.
- Squeeze down to make a nice tight roll.
- Grab the mat and continue rolling over the rice until your roll is complete. Squeeze down along the way to keep the roll from holding its shape.
- Transfer your roll onto a cutting board. Have a damp towel close by for your knife. Before you cut give you knife a wipe.
- NOTE: This will prevent the rice from sticking to the knife.
- Cut your roll into desired sizes.
- NOTE: Wrap mat with plastic wrap for inside out rolls.
- Repeat steps 13-20 for your veggie roll.
- Repeat steps 13-20 for your teriyaki chicken roll.
- Repeat steps 13-20 for your California roll.
- Enjoy!

- Rinse the rice and add it and 3 cups of water to a medium size pan and bring to a boil over medium-high heat. Reduce the heat to low, add a tight fitting lid and cook for 30-35 minutes until all the water is absorbed.
- While the rice is cooking, slice and cut the fish and vegetables and set up a station to assemble the rolls. Add the vinegar, sugar and salt to a small dish and zap it a couple seconds in the microwave to dissolve completely. Allow the vinegar mixture to cool before adding to the rice.
- Transfer the cooked hot rice to a large non-metal shallow bowl and sprinkle the vinegar mixture over the top. Using a plastic or silicon spatula, slice and toss the rice gently to mix and cool it down. The grains of rice should be a little sticky and hold together when a lump is formed. You can also help the cooling and drying by fanning it with a hand-held item such as a magazine, or set up a table fan to blow on the rice as you lift it.
- Lay the bamboo mat flat on a cutting board and place one sheet of the seaweed on the mat shiny side down. Spoon about a 1/2 cup of the rice onto the seaweed and gently spread it to the edges but leave a 1-inch boarder at the far end.
