Forget the loaf pan; we used the waffle iron to make fresh, warm banana bread in a fraction of the usual baking time. If you like your bread a little chunkier, go easy on your bananas when you're mashing them.

1 1/4 cups all-purpose flour
3/4 cup sugar
1/2 cup chopped walnuts
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon freshly grated nutmeg
1/4 teaspoon fine salt
1 cup smashed banana (2 to 3 small bananas)
1/2 cup vegetable oil, plus more for brushing waffle iron
1/2 cup sour cream or Greek yogurt
1 teaspoon pure vanilla extract
2 large eggs
Soft unsalted butter and confectioners' sugar, for dusting, optional

Steps:

  • Preheat a waffle iron to medium-high. Preheat the oven to 200 degrees F (to keep cooked waffles warm). Whisk together the flour, sugar, walnuts, baking powder, baking soda, cinnamon, nutmeg and salt in a large bowl. Whisk together the banana, oil, sour cream, vanilla and eggs in another bowl. Fold the banana mixture into the flour mixture until just combined (it's ok if there are lumps).
  • Lightly brush the top and bottom of the waffle iron with oil. Fill each section about three-quarters of the way full (there should still be some waffle iron showing). Close and cook until the waffles are golden brown, 4 to 6 minutes. Keep the waffles warm in the oven or covered with foil on a plate while you cook the remaining batter.
  • Spread with butter and dust with confectioners' sugar if you'd like.

3 large black bananas
75ml vegetable oil or sunflower oil, plus extra for the tin
100g brown sugar
225g plain flour (or use self-raising flour and reduce the baking powder to 2 heaped tsp)
3 heaped tsp baking powder
3 tsp cinnamon or mixed spice
50g dried fruit or nuts (optional)

Steps:

  • Heat oven to 200C/180C fan/gas 6. Mash 3 large black peeled bananas with a fork, then mix well with 75g vegetable or sunflower oil and 100g brown sugar.
  • Add 225g plain flour, 3 heaped tsp baking powder and 3 tsp cinnamon or mixed spice, and combine well. Add 50g dried fruit or nuts, if using.
  • Bake in an oiled, lined 2lb loaf tin for 20 minutes. Check and cover with foil if the cake is browning.
  • Bake for another 20 minutes, or until a skewer comes out clean.
  • Allow to cool a little before slicing. It's delicious freshly baked, but develops a lovely gooey quality the day after.

2 ½ cups pecan halves
1 ½ cups rolled oats
6 large over-ripe bananas, mashed
1 cup cane sugar
1 ¾ cups white whole wheat flour
1 tablespoon baking powder
½ cup coconut oil, melted
1 teaspoon sea salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line two 9x5-inch loaf pans with parchment paper.
  • Process pecan halves in a food processor until a flour forms; transfer to a bowl. Process oats in the food processor until a flour forms; add to pecan flour. Mix bananas and sugar together in a bowl; add to pecan flour mixture. Stir white whole wheat flour, baking powder, coconut oil, and salt into pecan flour mixture until batter is thick and well mixed. Spoon batter into prepared loaf pans.
  • Bake in the preheated oven until a toothpick inserted in the center of a loaf comes out clean, about 45 minutes.

½ cup vegan butter, melted
½ cup coconut sugar
¼ cup brown sugar
2 cups mashed bananas
½ cup plain applesauce
2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon baking powder
¼ teaspoon salt
½ cup chopped walnuts

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x5-inch loaf pan with cooking spray.
  • Combine butter, coconut sugar, and brown sugar in a large bowl; beat with an electric mixer until smooth and creamy, 2 to 3 minutes. Stir in mashed bananas and applesauce until well blended.
  • Combine flour, baking soda, baking powder, and salt in a separate bowl. Add banana mixture, stirring just enough to moisten. Fold in walnuts. Pour batter into the prepared loaf pan.
  • Bake in the preheated oven until a toothpick inserted into center of the loaf comes out clean, 60 to 65 minutes. Let bread cool in the pan for 10 minutes, then turn out onto a wire rack.
