Vegan Banana Bread (Nut Free) image

Vegan Banana Bread is made without using nuts or eggs and instead includes maple syrup, coconut oil, quick oats, and more! This moist, flavorful bread will knock your sugar cravings right out of the park.

1 cup quick oats (or pulse rolled oats in a blender)
1 cup gluten free 1-1 baking flour (I used Bob's Red Mill)
1/2 tsp cinnamon
1/2 tsp baking soda
1 tsp baking powder
1/4 tsp salt
1 1/3 cups mashed banana, about 3 large bananas
1/3 cup melted coconut oil - measure after melted.
1/3 cup maple syrup
2 tsps vanilla
3/4 cup chocolate chips, with extra for on top
optional: 3/4 cup chopped walnuts

Steps:

  • Preheat oven to 350F and grease 8×4 bread pan with nonstick spray and parchment paper.
  • In small bowl, mix oats, flour, cinnamon, baking soda, baking powder, and salt.
  • In a large bowl, mash bananas well. Then stir in oil, maple syrup, and vanilla.
  • Add dry ingredients to wet and stir till combined.
  • Fold in chocolate chips and optional nuts.
  • Pour into greased bread pan. Top with more chocolate chips.
  • Bake 40-50 minutes, cover with foil if getting too brown.

1 3/4 cups (210 g) spelt flour (whole wheat, unbleached all-purpose, or gluten free blend), see notes
1/3 cup (75 g) organic pure cane sugar (or 1/2 finely chopped dates)
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
pinch of mineral salt
1/3 cup (75 ml) neutral flavored oil (or coconut oil in liquid state, vegan butter at room temp or applesauce
1 teaspoon vanilla extract
4 small or 3 large overripe bananas (about 1 1/2 - 1 3/4 cups (338-410g)), mashed
1/4 cup (56 ml) almond milk, use only if needed
1/2 - 2/3 cup chopped walnuts
1/4 - 1/2 cup chocolate chips (mini or regular)
1 teaspoon cinnamon

Steps:

  • Preheat oven to 350 degrees F. Grease your loaf pan.
  • In a medium sized mixing bowl, mash 3 - 4 bananas (about 1 1/2 cups to 1 3/4 cups works well), add oil/applesauce and vanilla extract, mix again. Add the flour, sugar, baking soda, baking powder and salt, and mix well, but don't overmix, just enough until the flour is combined. Batter will be slightly thick and a few lumps is ok. If mixture seems too thick, add milk, especially if using heavier flours such as whole wheat or whole spelt (you're more inclined to need it).
  • Pour batter into a greased loaf pan. Bake for about 50 min - 1 hour. Ovens vary, mine usually takes 50 minutes. You can also do the toothpick test in the center of the loaf, if it comes out clean it should be ready. Remove from oven and let cool for 10 min before slicing.
  • Original method: In a medium/large size bowl, combine flour, sugar, baking powder, baking soda and salt, set aside. In a medium bowl, mash bananas. Add the oil, vanilla and bananas to the dry ingredients and mix until combined, do not overmix. If mixture seems too thick, add the almond milk (especially if using heavier flours such as whole wheat or whole spelt, you're more inclined to need it).
  • Pour batter into a greased loaf pan. Bake for about 50 min - 1 hour. Ovens vary, mine usually takes 50 minutes. You can also do the toothpick test in the center of the loaf, if it comes out clean it should be ready. Remove from oven and let cool for 10 min before slicing.
  • Keep covered on the counter for up to 3 days or in the refrigerator up to 1 week. Keep in the freezer for up to 2 months. Thaw the wrapped loaves overnight in the refrigerator. Reheat in the microwave or a toaster oven with a door.

Cooking spray
1 1/4 cups unbleached all-purpose flour
1 teaspoon baking soda
1/2 teaspoon kosher salt
3 very ripe medium bananas, mashed (about 1 1/4 cups)
3/4 cup sugar
1/2 cup plain soy milk yogurt
1/2 cup vegetable oil
1 teaspoon pure vanilla extract

Steps:

  • Preheat the oven to 350 degrees F. Line the bottom and two long sides of a 9-by-5-by-3-inch loaf pan with parchment, leaving a 2-inch overhang on each long side, and lightly coat with cooking spray.
  • Whisk the flour, baking soda and salt together in a medium bowl. Whisk the bananas, sugar, yogurt, oil and vanilla together in another medium bowl. Gently fold the wet ingredients into the dry ingredients with a rubber spatula until the batter just comes together (it's OK if there are lumps). Transfer the batter to the prepared loaf pan and bake until a tester inserted in the center comes out clean, 55 to 60 minutes; tent the loaf with foil if it is browning too quickly. Cool the loaf in the pan on a wire rack for 30 minutes, then lift it from the pan by the parchment overhangs and cool completely on the rack. Store the loaf in an airtight container at room temperature for up to 5 days.

4 ripe bananas (about 14-15oz or 390g peeled)
1 and 1/2 cups all-purpose flour
1/3 cup coconut sugar
1/4 cup refined coconut oil, melted
3 Tablespoons chopped walnut pieces
1 and 1/2 teaspoon baking powder
1/2 teaspoon baking soda
a pinch of nutmeg
a pinch of Himalayan pink salt

Steps:

  • Start by preheating the oven to 350ºF. Then oil the loaf pan/pans (or line with parchment paper) and chop the walnuts.
  • In a medium bowl, sift together the flour, baking powder, baking soda, nutmeg, and salt and set aside.
  • In a separate bowl, mash the bananas. Make sure not to leave any big chunks. Small chunks are fine though.
  • Add the sugar and oil to the bananas and mix until evenly combined.
  • Once the oil and sugar are incorporated, gently fold in the dry ingredients just enough for everything to come together.
  • Now, gently fold in your walnut pieces or other mix-ins.
  • Pour the batter into the prepared loaf pan(s).
  • Bake the banana bread at 350ºF for 30-40 minutes for mini loaves. Or 50-60 minutes for an 8x4-inch regular loaf. Test the bread with a toothpick for doneness. It will come out clean when the bread is ready. If the banana bread is still too moist bake at 5-minute intervals until done.

3 large black bananas
75ml vegetable oil or sunflower oil, plus extra for the tin
100g brown sugar
225g plain flour (or use self-raising flour and reduce the baking powder to 2 heaped tsp)
3 heaped tsp baking powder
3 tsp cinnamon or mixed spice
50g dried fruit or nuts (optional)

Steps:

  • Heat oven to 200C/180C fan/gas 6. Mash 3 large black peeled bananas with a fork, then mix well with 75g vegetable or sunflower oil and 100g brown sugar.
  • Add 225g plain flour, 3 heaped tsp baking powder and 3 tsp cinnamon or mixed spice, and combine well. Add 50g dried fruit or nuts, if using.
  • Bake in an oiled, lined 2lb loaf tin for 20 minutes. Check and cover with foil if the cake is browning.
  • Bake for another 20 minutes, or until a skewer comes out clean.
  • Allow to cool a little before slicing. It's delicious freshly baked, but develops a lovely gooey quality the day after.

1/3 cup butter (5 1/3 tablespoons)
1 cup sugar
1 egg
1 teaspoon vanilla
1 teaspoon baking soda

Steps:

  • Preheat oven for 350 degrees.
  • Smash bananas in a bowl. Mix together butter, sugar, egg, and vanilla and then put the bananas in the mixture and stir.
  • Mix flour, salt, and baking soda in a separate bowl and once both mixtures are stirred insert flour mixture into the sugar, butter, banana, egg, vanilla mixture. Stir thoroughly until all flour is mixed inches

  • In large bowl, beat sugar, bananas, coconut oil and vanilla until smooth. Stir in almond milk and vinegar. Add flour, baking soda and salt; stir just until moistened. Stir in walnuts. Pour into pan.
  • Bake 1 hour to 1 hour 10 minutes or until toothpick inserted in center comes out clean and crack in top of loaf appears dry. Cool 10 minutes. Loosen sides of loaf from pan; remove from pan, and place on cooling rack. Cool completely, about 1 hour, before slicing. Wrap cooled bread in plastic wrap, and store in refrigerator.
