ICEBOX VANILLA WAFER FRUIT CAKE
This recipe was given to my mother by an old family friend when I was a young girl. I don't like traditional fruit cake very much, but this one is a great variation with the vanilla wafers. It could be classified somewhere between a cake and a candy.

- 1. First, you must save the vanilla wafer box for this recipe. Pulverize the vanilla wafers to a powder consistency in a food processor. Drain the cherries well on a paper towel and then chop. Except for the condensed milk, mix all the other ingredients into the powdered vanilla wafers throughly..
- 2. You will need plastic gloves for the next method since it is a sticky method. Pour in the condensed milk and mix until completely mixed and wet. Place mixture back into the vanilla wafer box and beat down evenly into a square.
- 3. Allow the fruit cake to set about 4 days to a week. Tear off the vanilla wafer box and cut into small squares. It is rich, so be conservative. Serve. Leftovers should be refrigerated.
VANILLA WAFER CAKE
Steps:
- Preheat the oven to 350 degrees F and grease and flour a tube or Bundt pan.
- In a large bowl, beat the eggs well. Mix the sugar, vanilla wafers, coconut, pecans and milk into the eggs.
- Pour the mixture into the tube or Bundt pan. Bake until a toothpick inserted in the center comes out clean, about 1 hour. Let sit in the pan for 10 minutes, and then turn out onto a plate. Allow to cool completely.
- If desired, heat 1 tablespoon butter in a small saute pan. Cut a 1-inch slice of cake, butter both sides and toast in the butter. Add a dollop of whipped cream and serve with berries. Drizzle with caramel sauce. Repeat with remaining cake slices.
NO BAKE FRUITCAKE
This fruitcake recipe using crushed vanilla wafer cookies, cherries, pecans, raisins, and coconut is easy to make and requires no baking whatsoever.

- In a large bowl mix the candied cherries, chopped pecans, sweetened condensed milk, coconut milk, flaked coconut, raisins, vanilla, and crushed vanilla wafers. Batter will be very stiff. Place into pan and store in the refrigerator.

I don't know if this is a regional dish or what ... but NO ONE I talk to seems to have ever heard of it except the people in my family... and most people act like it's sooooo ODD ... but it's really yummy and it's really simple common ingredients ...

- In a medium bowl, stir together the pecans, raisins, walnuts, cherries, condensed milk and vanilla wafers. Dough will be very thick, you will need to use your hands.
- Form dough into a ring shape on top of a dinner plate. Wrap in many layers of plastic wrap and/or aluminum foil. Allow to age in the refrigerator for at least a week. The flavors will have a chance to blend and all of the milk will be absorbed into the cake.

Don't turn your nose up at this one! I don't even know why it is called fruitcake really! My ENTIRE family hates fruitcake in any way, shape, or form - this is one that we all LOVE!

- Chop pecans, cherries and pineapple and mix together.
- Mash wafers and mix with above ingredients.
- Add sweetened condensed milk and mix well.
- Press into large loaf pan and put into icebox for at least 24 hours.

- 1.Preheat oven to 325 degrees F. 2.In a large bowl, crush vanilla wafers. Add cherries, pineapple, nuts, and raisins; mix well. 3.In another bowl, beat eggs; add sugar, evaporated milk, and salt. Add to fruit mixture and mix well. 4.Cup Cakes: Spoon batter loosely into cupcake pans using paper or foil liners which you have sprayed lightly with oil spray. Bake in center of oven for approximately 30 minutes. Remove from oven and let cool. 5.Cake: Pack into a waxed paper-lined 10-inch tube pan. Decorate top with reserved candied whole cherries and pineapple. Bake approximately 45 minutes. Remove from oven and let stand 10 minutes. Run a sharp knife around edge, turn cake out of pan, then back over again so decorations are on top. Note: Cake and/or cupcakes can be made ahead and frozen; taste improves with age.

A friend at church made this and I had to have the recipe. This is so simple and yet so yummy! My kids request this for b-days! I hope you like it as much as we do.

- Grease 13x9 pan.
- Crush vanilla wafers, mix with melted butter (reserve 1 Cup for topping).
- Press cookie crumbs in greased pan.
- Melt chocolate chips and combine evap. milk and salt.
- Pour over crust, freeze until firm (about 20 min.).
- Spread softened ice cream over chocolate layer, top with remaining cookie crumbs.
- Freeze until firm.
