Texas-Sized Vanilla Sheet Cake with Cream Cheese Frosting image

Texas-sized vanilla sheet cake with a fork-tender crumb and lots of lightly sweet cream cheese frosting. This Texas sheet cake feeds a crowd and is absolutely perfect!

2¼ cup all-purpose flour
2 tablespoons cornstarch
1 teaspoon baking soda
1 cup (2 sticks) salted butter, room temperature (see notes)
2 cups granulated sugar
3 large eggs, room temperature
1 tablespoon vanilla
½ cup sour cream, room temperature
1 cup buttermilk, room temperature
½ cup (4 ounces) salted butter, room temperature
8 ounces cream cheese, room temperature
2 teaspoons lemon juice
3 ½ - 4 ½ cups confectioners sugar (sifted)
sanding sugar and fresh berries, for decorating

Steps:

  • CAKE: Position a rack in the center of the oven and preheat the oven to 350ºF. Generously grease a 12x17 inch half sheet pan. Set aside.
  • Place a sieve over a large bowl. Add the flour, cornstarch, and baking soda and sift. Set aside. In a 2 cup measuring cup, combine the buttermilk and sour cream and whisk to combine, set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, cream the butter for about 1 minute on medium speed. When the butter starts to lighten in color, reduce the speed to low and add the sugar. Increase the speed to medium and allow the butter and sugar mixture to become fluffy. Stop the mixture scrape the sides of the bowl to get it all mixed. Start the mixture and beat in the eggs one at a time waiting until each is incorporated before adding the next. Add the vanilla. Reduce the speed to low and add in 1/3 of the flour mixture, followed by 1/2 of the buttermilk, and continue until you finish the last of the flour mixture. Do not overmix. Using a rubber spatula, give the mixture a final mix.
  • Spread the cake batter into the prepared sheet pan. Smooth it out into an even layer with your rubber spatula. Bake the cake for 21-25 minutes stopping at the 12 minutes mark and rotating the pan. The cake is done when a toothpick inserted in the center comes out clean. Mine took exactly 22 minutes. Allow the cake to cool completely before frosting. See notes.
  • FROSTING: In the bowl of an electric mixer fitted with the whisk attachment, whip the butter for 1-2 minutes or until the butter is light and fluffy. Using a rubber spatula, remove the butter from the bowl into a small bowl. Add the cream cheese and whip for 30 seconds or until the cream cheese is light and fluffy. Add the butter back into the cream cheese mixture along with the lemon juice and 3 1/2 cups of the powdered sugar. Start the machine on the stir setting until mostly combined, then increase the speed and whisk for another 1-2 minutes. If your frosting isn't holding its shape, add the remaining 1 cup of confectioners sugar in and whisk to combine.
  • Spread the frosting all over the cooled cake. Top with sanding sugar and fresh berries if desired. The cake will last covered in the refrigerator for up to 5 days.

3 tablespoons demerara or turbinado sugar, such as Sugar in the Raw
3/4 pound (3 sticks) unsalted butter, at room temperature
8 ounces cream cheese, at room temperature
2 1/2 cups granulated sugar
6 extra-large eggs, at room temperature
1 tablespoon pure vanilla extract
Seeds scraped from 1 vanilla bean
3 cups sifted cake flour (measured after sifting)
1 teaspoon kosher salt

Steps:

  • Preheat the oven to 325 degrees. Spray two 8 1/2 x 4 1/2 x 2 1/2-inch metal loaf pans with the baking spray and sprinkle the insides of the pans with the demerara sugar, tilting the pans to cover evenly.
  • Place the butter, cream cheese, and granulated sugar in the bowl of an electric mixer fitted with the paddle attachment and beat on medium speed for 2 1/2 to 3 minutes, until light and creamy. Scrape down the bowl with a rubber spatula to be sure it's well mixed. With the mixer on low, add the eggs, one at a time, mixing well and scraping down the bowl before adding the next egg. Mix in the vanilla extract and vanilla seeds.
  • Combine the cake flour and salt in a medium bowl. With the mixer on low, slowly add the flour mixture to the butter mixture, scraping down the bowl and beater with a rubber spatula. Mix the batter with the spatula to be sure it's well mixed. Divide the batter evenly between the two loaf pans, smooth the tops, and bake in the center of the oven for 60 to 70 minutes, until a toothpick inserted into the center of each cake comes out clean.
  • Allow the cakes to cool in the pans for 30 minutes, then carefully turn them out and cool completely on a baking rack.

The coconut can be used raw or toasted, although I prefer the later because it contributes a deeper flavor to the finished cake.

1 cup unsweetened full-fat coconut milk, shaken
3 large eggs, at room temperature
1/4 cup vegetable oil or melted unrefined coconut oil
1 tablespoon pure vanilla extract
2 2/3 cups (335 grams) all-purpose flour
1 2/3 cups (330 grams) granulated sugar
1 cup flaked coconut, sweetened or unsweetened, toasted if desired, chopped
2 3/4 teaspoons baking powder
1 teaspoon fine salt
10 tablespoons unsalted butter, cut into cubes and at room temperature
6 tablespoons unsalted butter, at room temperature
8 ounces cream cheese, at room temperature
Pinch fine salt
2 teaspoons pure vanilla extract
1 cup confectioners' sugar
2/3 cup marshmallow creme (1/2 a 7-ounce container)
1 1/4 cups flaked coconut, sweetened or unsweetened, toasted if desired

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Coat a 9-by-13-by-2-inch cake pan with baking spray with flour. Line the cake pan with parchment paper and coat the parchment with the baking spray.
  • Whisk the coconut milk, eggs, oil and vanilla together in a large measuring cup until smooth. In
  • the bowl of your stand mixer fitted with the paddle attachment, combine the flour, sugar, chopped coconut, baking powder and salt. Mix on low for 30 seconds to combine.
  • With the mixer still on low, begin adding the cubed butter and mix until no pieces of butter remain and the mixture looks like cornmeal, 2 to 3 minutes; it should hold together when squeezed.
  • With the mixer still on low, add half of the liquid ingredients and mix to combine. Scrape the bowl and paddle with a rubber spatula. Increase the speed to medium and beat for 20 seconds. Reduce the speed to low and add the remaining liquids. Mix just until combined. Scrape the bowl and give the batter a few folds with your spatula.
  • Pour the batter into the prepared pan. Bake until a toothpick inserted in the center comes out with moist crumbs, 32 to 34 minutes. Cool the cake on a wire rack completely before frosting.
  • For the marshmallow frosting: In the bowl of a stand mixer fitted with the paddle attachment, beat the butter until smooth, about 1 minute. Scrape the bowl and then add the cream cheese and beat on medium speed until smooth, 1 to 2 minutes. Scrape the bowl again and add the salt, vanilla and confectioners' sugar and mix on low until combined. Scrape the bowl and paddle. Mix on medium speed until completely smooth, 1 to 2 minutes. Add the marshmallow creme and then mix on high speed for 1 minute.
  • Spoon the frosting over the cooled cake and spread it evenly. Sprinkle with the flaked coconut and serve. Cover and refrigerate any leftovers for up to 2 days, making sure to bring the cake back to room temperature before enjoying.

Best Ever Banana Cake With Cream Cheese Frosting image

This is one of (if not) the BEST banana cake I have ever tasted! I thought the oven temp of 275° sounded a little low, but this cake baked up (and rose) beautifully in my oven at this temp after pretty much exactly one hour. I do not know if the little "freezer trick" to this recipe is what ensured its moistness or not, but I did it, and it was exceptionally moist & delicious. Would be interesting to see if it still came out as great if this step was skipped. All I know is that I followed this recipe EXACTLY as stated (except that I had no buttermilk, so I subbed with a mix of lemon juice & milk) and I got exceptional results. So moist and yummy...a dense cake, similar in texture to a carrot cake... I personally would not call this frosted banana bread :o) Depending on the amount of frosting you like you can decide whether to half the recipe or not. I used the full recipe and had some leftover. I sprinkled on the chopped walnuts and threw this baby in the fridge and cut it the next day...TO DIE FOR! I really liked it slightly chilled, but great at room temp too! It got better each day it sat, I always make this cake at least the day before I need or want it. I was extremely pleased with this cake and will be making it over & over again!! So glad I came across this one!! (on another website). (* * Just to update the recipe, (based on some of the reviews), the baking time may vary based on individual ovens.   • Add icing sugar and beat on low speed until combined, then on high speed until frosting is smooth.
  • Spread on cooled cake.
  • Sprinkle chopped walnuts over top of the frosting, if desired.

  • A little advance planning: Your butter, cream cheese, and eggs must be at room temperature before you make the cake and the frosting. The butter and cream cheese should be soft enough that you can easily squish them with your fingers, but not so soft that they’re greasy or starting to melt. If you have a cool kitchen and plan to bake the cake in the evening, set them out on the counter in the morning; if you plan to bake the cake in the morning, set them out the night before. To speed up the process, cut them into tablespoon-size pieces. And if you need to bring your eggs to room temperature quickly, place them in a medium bowl (a quart container also works) when you go to heat your oven and fill the bowl with hot tap water. They should be good to go by the time you are ready for them.
  • Place racks in upper and lower thirds of oven; preheat to 350°. Lightly coat two 9"-diameter cake pans with nonstick vegetable oil spray or butter generously. Line bottoms with parchment paper rounds and lightly coat with nonstick spray or butter. Whisk 2¾ cups (316 g) cake flour and 2¼ tsp. baking powder in another medium bowl.
