SPINACH, MUSHROOM AND CHEESE BREAKFAST CASSEROLE

Spinach, Mushroom and Cheese Breakfast Casserole image

This hearty meatless breakfast casserole is a great way to use up stale bread. The cubes on top bake into a delicious crunchy crust that just might be the best part! The whole thing can be assembled the night before and popped into the oven in the morning.

Provided by Food Network Kitchen

Categories     main-dish

Time 7h45m

Yield 8 to 10 servings

Number Of Ingredients 11

4 tablespoons extra-virgin olive oil, plus more for greasing the dish
8 cups rustic Italian bread, crust removed, cut into 1-inch cubes
Kosher salt and freshly ground black pepper
10 ounces cremini mushrooms, sliced (about 4 cups)
2 cloves garlic, minced
5 ounces fresh baby spinach (about 5 cups)
4 ounces Gruyere, shredded on the large holes of a box grater (about 1 1/2 cups)
1/3 cup grated Parmesan
8 large eggs
2 1/2 cups half-and-half
1 teaspoon fresh thyme leaves, roughly chopped

Steps:

  • Grease a 9-by-13-inch (3-quart) casserole dish with oil.
  • Toss the bread cubes with 2 tablespoons of the oil, 1/4 teaspoon salt and a few grinds of pepper in a large bowl. Heat a large skillet over medium heat. Add the bread to the skillet, and cook, tossing occasionally, until toasted and golden brown, about 8 minutes. Return the toasted bread to the bowl to cool.
  • Wipe out the skillet. Heat the remaining 2 tablespoons oil over medium-high heat until it starts to shimmer. Add the mushrooms in one layer (resist the urge to stir right away), and cook until they start to brown, about 3 minutes; stir, then continue to brown for 2 minutes more. Add the garlic, thyme, 1/4 teaspoon salt and some pepper, stir continuously for 1 minute, then fold in the spinach and another 1/4 teaspoon salt. Continue to cook, stirring often, until the spinach is wilted, 1 to 2 minutes. Remove from the heat.
  • Place half the bread cubes in the prepared casserole dish, and sprinkle them with half each of the Gruyere and Parmesan. Add the mushroom-spinach mixture in an even layer. Top with the remaining bread cubes, Gruyere and Parmesan.
  • In a large bowl, whisk together the eggs, half-and-half, 1/2 teaspoon salt and several grinds of pepper. Pour the egg mixture into the casserole dish. Cover with plastic wrap, and refrigerate for at least 6 hours up to overnight. Remove the casserole from the refrigerator 30 minutes before baking.
  • Preheat the oven to 350 degrees F. Bake the casserole until the custard is set and the top is golden brown, 50 to 55 minutes. Cool for at least 15 minutes before serving warm or at room temperature.

KETO BREAKFAST CASSEROLE WITH SAUSAGE AND CHEESE

Keto Breakfast Casserole with Sausage and Cheese image

This keto breakfast casserole is a complete meal. It's made with sausage, eggs, cheese, and fresh spinach. It's so delicious and - just as important - it's very filling!

Provided by Vered DeLeeuw

Categories     Breakfast

Time 55m

Number Of Ingredients 9

8 large eggs
1/4 cup heavy cream
½ teaspoon Diamond Crystal kosher salt
¼ teaspoon black pepper
½ teaspoon garlic powder
¼ teaspoon red pepper flakes
1 cup shredded cheddar cheese (divided (4 oz))
1 lb. pork breakfast sausage ((I use the Whole Foods brand which actually contains 14 oz))
2 cups baby spinach leaves ((2 oz))

Steps:

  • Preheat your oven to 400 degrees F. Lightly grease a square 9-inch pan.
  • In a large bowl, whisk the eggs with the heavy cream, salt, pepper, garlic powder, and red pepper flakes. Use a rubber spatula to mix in ½ cup of the shredded cheddar. Set aside.
  • Heat a large 12-inch nonstick skillet over medium-high heat. There's no need to add oil. Add the sausage and cook, stirring and breaking it up, until browned, 5-7 minutes.
  • Turn the heat off and mix in the spinach leaves (you can leave them whole), just until they are very slightly wilted from the pan's residual heat.
  • Transfer the sausage-spinach mixture to the prepared baking dish, spreading it evenly on the bottom.
  • Give the eggs another mix, and then pour them into the pan on top of the sausage mixture. If needed, you can gently stir the mixture inside the pan to more evenly spread out the sausage and spinach.
  • Sprinkle the remaining ½ cup of cheese on top.
  • Bake the casserole until the eggs are set and the cheese is golden brown. In my oven, this takes 25 minutes. Your first clue that it's ready will be the AMAZING smell that will fill your kitchen!
  • Allow the casserole to rest for 10 minutes before cutting it into nine squares and serving.

  • Heat oven to 325ºF. Place spinach in a large colander and set it in the sink. Grease a 9×13-inch pan lightly with butter or with nonstick spray.
  • In a medium skillet over medium-high heat, heat the oil till it shimmers. Cook the sausage till it browns and is nearly cooked through, about 5 minutes. Break it up with a spoon or a spatula as it cooks. Spoon the sausage over the spinach in the colander in the sink. Return the skillet to the stovetop, add a little bit more oil to the pan if necessary, and set it over medium heat. Add the onions. Season with salt. Cook the onions till they begin to caramelize, 7 to 10 minutes. Spoon the onions over the sausage and toss with a spatula or large spoon to gently wilt the spinach. Transfer the spinach-sausage mixture to the prepared pan. Spread the cheese over top.
  • Break the eggs into a large bowl, season with 1 to 1.5 teaspoons salt (when I am using Morton’s kosher salt, I use 1 teaspoon; when I use Diamond Crystal, I use 1.5 teaspoons) and fresh cracked pepper to taste. Add the half and half, and beat with a whisk until the mixture is well blended. Pour the eggs into the pan. Season with more pepper to taste. (Note: You can strategically pull leaves of the spinach from the custard so they are at the very top, where they will stay during the baking process — this is purely for visual effect.) Transfer pan to the oven and bake for 25-40 minutes, rotating the pan halfway through. Start checking at 25 minutes, then every 5 minutes thereafter till it’s done — depending on your oven and the material of the pan you are using, it may take more or less time to cook.

  • Shred the potatoes using a grater, and add 1/2 teaspoon salt to the potatoes. Drain the shredded potatoes by placing them in a colander in the sink. You might need to squeeze some of the water out by hand.
  • Spread the shredded potatoes (or thawed hash browned potatoes) on the bottom of the baking dish. Use 2-3 sheets of paper towels to absorb extra moisture by dabbing the potatoes. Bake the potatoes for 15 minutes, then remove the dish from the oven. It is OK if the potatoes are not fully cooked yet.
  • Meanwhile, heat your frying pan and add the sausage meat and onion slices to the pan. Cook stirring frequently for 10 minutes, breaking up the sausages into smaller chunks with a spatula. Add the baby spinach, stir, and cook for another 2 minutes until the spinach wilts.
