- Add honey to a small saucepan over medium-low heat. Scrape the seeds from the vanilla pod into the honey, and then the pod itself. Stir. Warm honey until it is loose and runny, about 6 minutes, but do not allow it to come to a boil. Remove pan from heat and and let cool for 15-20 minutes. (This allows the flavor to deepen.) Transfer honey to a glass jar.

- When you are making brewed tea, it is important to use a pot that has NOT had regular use for greasy foods, tomato sauces, or soups. I reserve a medium pot exclusively for boiling water for tea. Of course, I am fussy about my tea. Good tasting tea needs good tasting water in a clean pan. Use a good bottled water from a natural spring if it's a available. It does make a difference, and so does the tea your using. A quality organic tea, i.e. ,St Balfours or Infusions, makes a cup of tea over which you will want to linger. The bouquet and body of organic teas are superior to other commerical teas.
- While your tea is brewing, warm a teapot and/or the cups that you will be using. Fill them with hot water, and let them sit under a cotton kitchen towel until you are ready to serve the tea.
- At high heat, boil the 4 cups of water containing the cardamom pods, ginger, cloves, vanilla and the pinch of salt (optional) for 5 minutes.
- Add the tea bags and simmer 3 to 4 minutes.
- Add the milk, and increase the heat until the mixture boils. Watch the mixture closely at this stage, so the milk won't scald. Occasionally, stir the tea.
- Remove from the heat, and strain the tea into the warmed teapot or cups.
- Add clover honey to taste.

HOT VANILLA HONEY MILK
an amazing drink to sip on a cold winter night, and also a great reliever to sore throats! Kids and adults alike love this delicious, comforting drink. The spices and sweetener can be ajusted to taste, but i think that below is the recipe perfected. Also, you can use any type of milk that you like, including whole, soy or rice, i just used skim to keep it light and healthy. Enjoy!

- 1. Get out mug of your choice, and put honey, vanilla extract and cinnamon in bottom. Set aside.
- 2. In a seperate mug, warm up milk for 2 minutes or until hot in microwave.
- 3. Poor hot milk over honey and spices, stir until dissolved. Taste to make sure it is sweet enough, if not add in more honey.
- 4. Microwave for one more minute, or until desired temperature is reached.

Honey coated nuts seeds and oats with sweet dried fruit make this an exceptional granola that is good for you. The hint of vanilla explodes in your mouth! I have tried many recipes and this is by far the best!!

- Preheat oven the oven to 275 degrees.
- Mix together the oats, seeds and nuts in a large bowl.
- Heat oil, vanilla, cinnamon, and honey together in a saucepan until blended.
- Add honey mixture to oat mixture and stir well.
- Spread out the granola on one or two baking sheets and bake for 50 minutes or until desired crispness. Stir occasionally to prevent mixture from clumping.
- leave to cool and store in zip lock baggies.

- Gather one quart of raw honey and three to six used vanilla beans from your home brewed vanilla. These beans will be smooshy and full of extract - they're perfect. You may also use fresh vanilla beans - start with two*.
- Open the vanilla beans and scrape out any remaining seeds - they look like tiny, tiny black bugs.
- Add the seeds and beans (and any remaining vanilla extract from previously used beans) to the quart of honey.
- Let this concoction sit for at least a month and if you decide it needs more vanilla flavor/smell, just add a judicious amount of your homemade vanilla and mix well. You don't want to water down the honey - just give it an extra vanilla boost if you don't feel it's not strong enough. I like mine to brew no less than two months, but longer is better!
