Fancy a change from porridge? This healthy rice-based vanilla and cinnamon breakfast is topped with apricots and walnuts, and will fill you up for the morning

200g wholemeal basmati rice
200ml whole milk
2 tsp vanilla extract
3 bay leaves
1 cinnamon stick
12 dried apricots split in half widthways (so they still look whole)
4 x 100ml pots bio yogurt
12 walnut halves, broken into pieces

Steps:

  • Tip the rice into a large, deep non-stick pan with 600ml water, the milk, vanilla, bay leaves and cinnamon stick. Bring to the boil, then cover with a lid and simmer for 25-30 mins until the rice is tender. Keep an eye on it to ensure it doesn't boil dry towards the end of its cooking time.
  • Meanwhile, tip the apricots into a small pan with 300ml water and cook over a low-medium heat until tender, about 10-15 mins. Set aside.
  • Remove the bay leaves and cinnamon stick from the rice, then stir in half the yogurt. Both the rice and the apricots will keep chilled, separately, for up to 24 hrs. Spoon the rice into bowls and top with the remaining yogurt, the apricots and their juices and the walnuts. If you've prepared the rice and apricots the day before, eat cold or reheat until warm, adding a splash of milk to the rice to loosen.

2 cups water
2 cups instant white rice (such as Minute®)
½ teaspoon butter
⅛ teaspoon salt
1 cup milk
2 tablespoons brown sugar, or to taste
1 teaspoon cornstarch
½ teaspoon vanilla extract
½ teaspoon ground cinnamon, or more to taste

Steps:

  • Bring water to a boil in a saucepan. Stir rice, butter, and salt into water until the butter melts. Cover saucepan and remove from heat. Set aside until water is absorbed, about 5 minutes.
  • Stir milk, brown sugar, cornstarch, and vanilla extract into the rice; bring to a simmer over medium heat while stirring; cook until the rice has the consistency of loose oatmeal, about 5 minutes. Ladle pudding into bowls and dust with cinnamon.

3 quarts milk
2 tablespoons ground cinnamon
¼ cup butter
2 cups white sugar
1 cup heavy cream
4 eggs
1 cup uncooked white rice

Steps:

  • Combine the milk, cinnamon, butter, and rice in a large pot. Bring to a boil, then reduce heat to low, and simmer for 30 minutes, or until rice is tender. Gradually stir in the sugar.
  • In a medium bowl, whisk together the heavy cream and eggs until smooth. Gradually whisk in about a cup of the hot milk mixture, or enough to raise the temperature to just above body temperature. Gradually stir the warmed egg mixture into the pot. This will keep you from having scrambled egg in your pudding!
  • Simmer the pudding over low heat for about 10 minutes, stirring constantly until thickened. Pour into a baking dish or bowl, and allow to cool for 10 to 15 minutes before refrigerating. Refrigerate for at least 2 hours before serving.

2 cups water
2 tablespoons nonfat milk
5 tablespoons raisins
2 teaspoons margarine
½ teaspoon ground cinnamon
1 teaspoon sugar

Steps:

  • Bring rice, water, milk, raisins, and margarine to a boil in a saucepan over medium-high heat, stirring occasionally. Reduce heat to low, cover, and cook until liquid has absorbed and rice is tender, about 15 minutes. Mix together cinnamon and sugar, sprinkle over rice to serve.

I made this adapting the recipe for biscuits on the Bisquick box, and really enjoyed the results. This is not a particularly sweet biscuit recipe, which makes it a wonderful accompaniment for your morning cuppa! You can experiment by adding chocolate chips in the batter for added sweetness, or increase the amount of sugar. This tastes best served warm with a pat of butter or maple syrup.

2 1/4 cups original Bisquick baking mix
2 -3 tablespoons sugar (I use 2)
1/2 teaspoon ground cinnamon
2/3 cup milk
1/2 teaspoon vanilla extract
cooking spray

Steps:

  • Preheat oven to 450°F (230°C).
  • Combine Bisquick, sugar and cinnamon in a medium bowl.
  • Stir in milk and vanilla and mix well.
  • Spray a baking sheet lightly with cooking spray (a non-stick baking sheet works best; you don't need cooking spray then) and drop the batter onto it by heaping teaspoons, 1 inch apart.
  • Bake for 12 to 15 minutes, or until golden brown.
  • Serve warm with a pat of butter or maple syrup.

1 medium onion, diced

1 teaspoon cinnamon
1 cup uncooked basmati rice
3/4 cup golden raisin
1 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Melt butter in medium saucepan. Saute onion, cloves, and cinammon until the onion is translucent.
  • Rinse the uncooked rice in a sieve with cold running water. Add rice to pan, sirring to coat.
  • Add raisins, salt, and pepper. Add 2 cups water. Increase the heat and bring to a boil. Reduce heat and cover. Cook 10-15 minutes until water has been absorbed & rice is cooked.
  • Remove from heat and let stand, covered, for 5 more minutes. Season with additional salt and pepper if desired.
