Time 2h

Yield 117

Number Of Ingredients 6

6 cups white sugar, divided
2 cups heavy cream
½ teaspoon baking soda
½ cup butter
1 teaspoon vanilla extract
2 pounds pecan halves or pieces

Steps:

  • Butter a 9x13 inch dish and a medium, heavy saucepan.
  • In the buttered saucepan, combine 4 cups sugar and the cream. Have ready.
  • In a large heavy skillet over medium heat, pour the remaining 2 cups sugar. Cook, stirring constantly, until sugar begins to melt. Place the saucepan over low heat, stirring occasionally. Continue to cook and stir the sugar in the skillet until it is completely melted and light brown. Pour the melted sugar very slowly, in a thin stream, into the lightly simmering cream, stirring constantly (This step may take five minutes, and works best if someone strong pours the melted sugar v-e-r-y s-l-o-w-l-y.)
  • Heat now, without stirring, to 242 to 248 degrees F (116 to 120 degrees C), or until a small amount of syrup dropped into cold water forms a firm but pliable ball. Remove from heat and stir in baking soda (mixture will foam). Drop the butter into the foaming mixture and let rest without stirring 30 minutes.
  • Stir in the vanilla with a wooden spoon and continue to stir vigorously until mixture loses its gloss, 10 to 15 minutes. Then fold in pecans and quickly turn candy into the prepared 9x13 inch dish. Let cool until just warm and cut in 1 inch pieces.

Categories     dessert

Time 3h55m

Yield about 30 cookies

Number Of Ingredients 12

2 1/2 cups all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon fine salt
3/4 cup packed light brown sugar
1 1/2 sticks (3/4 cup) unsalted butter, cut into small pieces, at room temperature
1 large egg, lightly beaten
1 teaspoon pure vanilla extract
4 cups confectioners' sugar
1/4 cup meringue powder
Food coloring, optional
Decorating sugar, for topping, optional
Sprinkles, for topping, optional

Steps:

  • For the cookies: Whisk together the flour, baking powder and salt in a small bowl.
  • Beat the brown sugar and butter with an electric mixer on medium speed in a large bowl until light and fluffy, about 5 minutes; beat in the egg, then the vanilla. Add the flour mixture and mix on medium-low speed until completely incorporated. Divide the dough in half, pat into 2 discs about 1/4 inch thick, wrap in plastic wrap and refrigerate until firm, about 1 hour and up to overnight.
  • Position oven racks in the top and bottom thirds of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment paper.
  • Let the dough sit at room temperature for a few minutes to make rolling easier. Roll out 1 disc of dough at a time between 2 pieces of parchment paper until 1/8 inch thick. Cut out shapes with the cookie cutters and arrange about 2 inches apart on the prepared baking sheets.
  • Bake until the cookies are golden brown on the bottom, 10 to 12 minutes. Let the cookies cool on the baking sheets until firm enough to transfer to a wire rack; let cool completely.
  • Gently gather any scraps into a ball and press into a disc; wrap in plastic wrap and refrigerate the disc until firm enough to roll, about 1 hour. Cut out as many cookies as possible and bake.
  • For the royal icing: Beat the confectioners' sugar, meringue powder and 1/3 cup water with an electric mixer in a large bowl until stiff peaks form. Beat in the food coloring if using. (The icing can be stored in an airtight container at room temperature for up to 2 days.)
  • Decorate the cookies with the icing; top with decorating sugar and sprinkles if using.

  • Kala Chana. Let’s start with something pretty new in the US. Kala Chana are dark brown chickpeas widely used in Indian cuisine. They’re rich in natural fiber, packed with protein, and taste delicious.
  • Caramel. Caramel, made by boiling white sugar and water, is one of the most mouth-watering ways to add a delicious additional sweetness to desserts and treats.
  • Peanut Butter. Mass-produced peanut butter, delicious though it is, often contains an array of unwanted additives to preserve its shelf life. It’s simple to make peanut butter at home.
  • Brown Bread. Brown bread can be made in two ways. When part of the wheat bran is left in the flour, it’s called wheat germ or wheat grain bread. Sometimes, brown dye is added to white flour to make it look more healthy and justify the more expensive price tag.
  • Brown Mushrooms. Baby bellas, portabellos, and portabellinis, all brown mushrooms, are considered tastier than their white button cousins. Their chewy texture adds a welcome burst of umami-richness to all kinds of dishes, from steamed vegetables to rich meaty stews.
