Olive oil
1 cup onions, diced medium
2 cups carrots, chopped
1 cup celery, chopped
6 cloves garlic, smashed
2 tablespoons cornstarch
2 cups beefsteak tomatoes, chopped
1/2 teaspoon turmeric
1/2 teaspoon red pepper flakes
1 1/2 pounds stew beef, cubed
24 ounces beef stock
Salt and pepper

Steps:

  • In a large stew pot over medium-high heat, add 4 tablespoons olive oil. Add onions, carrots, celery, garlic, cornstarch, tomatoes, turmeric, and red pepper flakes. Saute for 5 to 7 minutes.
  • Add the stew beef and the beef stock. Add salt and pepper to taste. Reduce heat and let stew simmer for 1 hour 30 minutes. Stir periodically. Serve hot.

1 onion
2 parsnips
½ a butternut squash
1 handful of Jerusalem artichokes, optional
a few sprigs of fresh sage
olive oil
1 knob of unsalted butter
4 carrots
800 g stewing steak or beef skirt, cut into 5cm pieces
plain flour
500 g small potatoes
2 tablespoons tomato purée
½ a bottle of red wine
285 ml organic beef or vegetable stock
1 lemon
a few sprigs of fresh rosemary
1 clove of garlic

Steps:

  • Preheat the oven to 160ºC/300ºF/gas 2.
  • Peel and roughly chop the onion, peel and quarter the parsnips and peel and halve the carrots. Deseed and roughly dice the squash, and peel and halve the Jerusalem artichokes (if using). Pick the sage leaves.
  • Heat a little oil and the butter in a casserole pan on a medium heat, add the onion and sage leaves, then fry for 3 to 4 minutes.
  • Meanwhile, toss the meat in a little seasoned flour, then add it to the pan with all the vegetables, the tomato purée, wine and stock, then gently stir together. Season generously with black pepper and just a little sea salt.
  • Bring to the boil, place a lid on top, then place in the oven until the meat is tender - sometimes this takes 3 hours, sometimes 4 - it depends on what cut of meat you're using and how fresh it is. The only way to test is to mash up a piece of meat and if it falls apart easily it's ready.
  • Once cooked, turn the oven down to about 110°C/225°F/gas ¼ and just hold it there until you're ready to eat.
  • The best way to serve this is by ladling big spoonfuls into bowls, accompanied by a glass of French red wine and some really fresh, warmed bread.
  • Finely grate the lemon zest, pick and finely chop the rosemary and peel and finely chop the garlic, then mix together and sprinkle over the stew before serving. Just the smallest amount will make a world of difference - as soon as it hits the hot stew it will release an amazing fragrance.

Don't let the fact that it's made with V-8 fool you. The sauce thickens and becomes almost unrecognizable as having V-8 in it. I cobbled this recipe together between BH&G, mom, and Joy. It makes a lot, but that's ok, because the leftovers get more delicious with time, as the flavors blend with each other.

3 lbs beef chuck, cut into 2 inch cubes
1 teaspoon dried thyme (for the meat)
1 teaspoon dried marjoram (for the meat)
1 teaspoon salt
1 teaspoon ground black pepper
1/2 cup flour
3 tablespoons vegetable oil or 3 tablespoons bacon fat
1 cup onion, chopped
2 -3 cloves garlic, minced
6 cups v-8 vegetable juice cocktail
2 cups water
2 teaspoons beef bouillon granules or 2 teaspoons crushed beef bouillon cubes
2 bay leaves
1 teaspoon dried thyme (for the stew)
1 teaspoon dried marjoram (for the stew)
3 -5 dashes hot pepper sauce (use as much or as little as you'd like) (optional)
3 cups celery, sliced
3 cups carrots, sliced
4 medium potatoes, peeled and cubed

Steps:

  • Season the beef with the thyme, marjoram, salt, and pepper.
  • Place flour in a covered bowl or a large sealable plastic bag.
  • Add the beef, a small batch at a time, and shake to coat pieces.
  • Shake off excess flour.
  • Repeat until all the meat is coated.
  • In a large non-stick skillet, heat the oil or fat over medium-high heat.
  • Add the meat in batches and brown the meat on all sides.
  • Do not crowd the pan or scorch the meat.
  • Remove each batch with a slotted spoon and set aside.
  • Repeat until all the meat is browned.
  • Reserve 2 Tbsp of fat from the pan (if there is not enough, add enough to make 2 Tbsp).
  • In a Dutch oven or a large stockpot, heat the oil or fat over medium heat.
  • Add the onions and garlic, stirring occasionally, until the onions are softened, about 5 minutes.
  • Return the meat to the pan and stir to coat and combine.
  • Stir in vegetable juice, bouillon, hot pepper sauce, bay leaves, thyme, marjoram, and water.
  • Bring to boiling; reduce heat.
  • Cover; simmer for 1 1/4 hours, stirring every 10 minutes or so (making sure no residue thickens on the bottom of the pan).
  • Stir in celery, potatoes, and carrot.
  • Cover; simmer 30 minutes or until vegetables are tender, stirring every 10 minutes or so.
  • Skim off fat.
  • Serve over fresh-cooked egg noodles or white rice.

3 lb top of the round, or beef chuck roast, cubed
1 tsp dried marjoram
1 1/2 Tbsp granulated garlic powder
1 Tbsp granulated onion powder
2 tsp kosher salt
2 tsp dried thyme
1 Tbsp paprika
1 1/2 tsp coarsely grated black pepper
1/2 c all purpose flour
6 Tbsp canola or olive oil, divided
1 c spanish onions, chopped
2 clove garlic minced
1 large can (48 oz) v-8 tomato juice cocktail
16 oz beef broth
3 bay leaves
1/8 tsp red pepper flakes, optional
3-4 ribs, celery, chopped (about 3 cups)
3 c carrots, chopped
6 medium red red skin potatoes, peeled & quartered into eights
1 c dry red wine
1 1/2 Tbsp brown sugar
6 oz can tomato paste
32 oz diced tomatoes, undrained

Steps:

  • 1. In a gallon size zip lock bag, add flour, marjoram, garlic & onion powder, salt, thyme, black pepper & paprika. Shake to mix. Add cubed beef a few pieces at a time,coat evenly and remove to a large platter, till all meat has been coated.
  • 2. Heat 4 tablespoons oil in a large cast iron skillet, add meat a few pieces at a time, being careful not to over crowd the skillet, and brown meat on all sides. Repeat till all meat has been cooked and browned on all sides. Remove from skillet with a large slotted spoon to a large platter.
  • 3. In a dutch oven or stock pot, heat 2 tablespoons of oil over medium heat, add onions & garlic, and saute till onions are soft and transparent, about 5 minutes.. Then add meat, V-8 Juice, pepper flakes, if using, bay leaves, beef broth, brown sugar, & stir to mix and allow to cook over low heat for 1 and a half hours, being sure to stir ever 10 to 15 minutes to prevent sticking. Preheat oven to 300 degrees F.
  • 4. After 1 1/2 hours stir in carrots, celery & potatoes, red wine, diced tomatoes,& tomatoe paste. Stir till well mixed. Cover with a tight fitting lid & place in preheated oven and allow to continue to cook for an additional 1 1/2 to 2 hours. Remove from oven, skim off any excess fat, remove bay leaves, and serve over noodles or rice, or with your favorite corn bread recipe.

Steps:

  • Place ground beef in a Dutch oven or slow cooker. Cook over medium-high heat until evenly brown. Drain excess fat, and crumble. Add juice cocktail and mixed vegetables.
  • In a Dutch oven, simmer for 30 minutes.

3 potatoes, cubed
4 celery ribs, sliced
1 lb carrot, sliced
1 onion, chopped
1 (14 ounce) can beef broth
2 (12 ounce) cans V8 vegetable juice

  • Place stew meat into crock pot. Clean, peel and slice or cube vegetables and place in crock pot.
  • Mix to combine. Add the V-8, beef broth and tapioca. Stir until well combined. Turn on low for 8-10 hours.

  • Bring to a boil, stirring occasionally.

Steps:

  • In Instant Pot, add onion, carrot, celery, 2 garlic cloves, potatoes and beef as you are cutting them. Then add tomato paste, bouillon + water or stock, oregano, thyme, salt, pepper, bay leaves and peppercorns. No need to stir, just flatten tomato paste with a spoon.
  • Close the lid, set pressure vent to Sealing and press Pressure Cook on High for 30 minutes. Display will say ON, Instant Pot will take about 20 minutes to come to pressure, you will see a bit of steam coming out from a valve, then float valve will rise and countdown from 30 minutes will begin.
  • When display says OFF, stew is ready. Now your Instant Pot needs to bring pressure down before you can open it, which will be indicated by a dropped down float valve. You can let it do it on its own which will take about 15-20 minutes - Natural Release. OR you can do Quick Release by turning pressure valve to Venting position, which takes 2-3 minutes. I recommend doing so outside to avoid countertop mess and house smelling like stew for days.
  • Open the lid, add peas, remaining 2 cloves of garlic and dill. Stir.
  • To thicken beef stew: Switch electric pressure cooker to Saute. In a small bowl, whisk cold water with cornstarch, add to the pot and stir gently. Cook for a few minutes until thickened.
  • Serve hot.

A satisfying soup that warms you from the inside out. The beef is slowly simmered and what remains is delicious broth that is made richer with the addition of red wine and spicy V-8 Juice.

3 pounds beef chuck - blade cut - 2 1/4 pounds ground and 3/4 pound diced (may sub pork ** see notes below)
2 Tablespoons butter
2 Tablespoons olive oil
4 medium stalks celery (chopped)
2 medium onions (chopped)
5 cloves garlic (chopped)
1/4 cup Italian parsley (chopped)
Thyme - 4 sprigs
3 bay leaves
1 quart Spicy V-8 Juice
1/4 cup red wine
2 cups beef broth
3/4 cup barley -- not instant (***see notes if gluten intolerant. )
Salt and Pepper to taste

Steps:

  • In a Dutch oven or heavy soup pot, over medium-high heat, brown the beef in 1 Tablespoon butter and 1 Tablespoon olive oil. Salt and pepper the meat as it is browning. Once the beef is browned remove it and all the juices and place in a heat proof dish.
  • In the Dutch oven melt the remaining butter in the olive oil and sauté the celery and onion until they become soft and translucent. Do not brown. Stir in the garlic; sauté 1 minute.
  • Add the parsley, thyme sprigs and bay leaves . Continue to sauté for another minutes.
  • Add the beef back into the pot and mix thoroughly. Once all of the ingredients are evenly mixed add the Spicy V-8 Juice, beef broth and red wine. Heat to a low boil, add the barley and let it come to a simmer and cover.
  • Continue to cook covered stirring occasionally. Simmer for 4 - 5 hours until meat is tender and barley is done.
  • Taste to make sure the salt and pepper is to your taste.
  • In a Dutch oven or heavy soup pot, over medium-high heat, brown the beef in 1 Tablespoon butter and 1 Tablespoon olive oil. Salt and pepper the meat as it is browning. Once the beef is browned remove it and all the juices and place in a slow cooker.
  • In the Dutch oven melt the remaining butter in the olive oil and sauté the celery and onion until they become soft and translucent. Do not brown. Stir in the garlic; sauté 1 minute.
  • Add the parsley, thyme sprigs and bay leaves . Continue to sauté for another minutes.
  • Add the ingredients to the beef in the crockpot and mix thoroughly. Once all of the ingredients are evenly mixed add the Spicy V-8 Juice, beef broth and red wine. Heat on high for 1 hour then continue to on low, add the barley and continue for an additional 7 hours.
  • Check to make sure the meat is tender and the barley is done. Taste to make sure the salt and pepper is to your taste.

1 pound extra lean stewing beef, cut into bite-sized pieces
2 tablespoons olive oil, or more to taste
1 large onion, diced
3 cloves garlic, finely chopped
1 splash red wine
3 cups chopped carrots
2 cups chopped celery
1 ½ cups canned diced tomatoes
1 ½ cups chicken broth
1 sprig chopped fresh thyme
1 bay leaf
salt and ground black pepper to taste
⅓ cup chicken broth
2 tablespoons cornstarch

Steps:

  • Heat oil in the pot of an electric pressure cooker set on Saute mode. Add beef; cook until browned on all sides, about 5 minutes. Add onion and cook, stirring constantly, until soft, 3 to 5 minutes. Add garlic; cook until fragrant, about 1 minute.
  • Pour wine into the pot and bring to a boil while scraping the browned bits of food off the bottom with a wooden spoon to deglaze. Add carrots, celery, and tomatoes; stir well. Add 1 1/2 cups chicken broth, thyme, bay leaf, salt, and pepper.
  • Close and lock the lid. Select Meat/Stew option or high pressure according to manufacturer's instructions; set timer for 35 minutes. Allow 10 to 15 minutes for pressure to build.
  • Mix 1/3 cup broth with cornstarch to make the slurry.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Select Saute option and bring mixture to a boil. Slowly add in the slurry. Let simmer until stew thickens slightly, 3 to 5 minutes.

2 1/2 pounds beef chuck, cut into 2-inch cubes
Kosher salt and freshly ground black pepper
2 tablespoons unsalted butter
2 medium onions, cut into 6ths
5 cloves garlic, crushed
1 tablespoon tomato paste
1/3 cup all-purpose flour, or to cover
10 cups cold water, or chicken or beef broth, homemade or low-sodium canned
6 sprigs parsley
6 sprigs fresh thyme
2 bay leaves
1 1/4 pounds medium red potatoes, quartered
4 medium carrots, cut into 2-inch pieces
2 celery stalks, cut into 2-inch pieces
7 canned whole, peeled tomatoes, lightly crushed
2 to 3 teaspoons red wine vinegar, or to taste

Steps:

  • Heat a large Dutch oven with a tight-fitting lid over medium-high heat. Pour in enough oil to fill the pan about 1/4-inch deep. Season the beef generously with salt and pepper, and add to the pan. Saute half the meat, uncovered, stirring only occasionally, until well-browned, about 8 minutes. Using a slotted spoon, transfer the beef to a plate. Repeat with the remaining beef. Discard the oil and wipe out the pan.
  • Preheat the oven to 325 degrees F. Return the pot to the stove and melt the butter over medium high heat. Add the onion and cook, stirring, until lightly browned, about 5 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. Add the tomato paste and cook, stirring, until lightly browned, about 1 minute more. Add the reserved beef and scatter the flour over the vegetable and beef mixture (enough to lightly coat) and cook stirring until lightly toasted. Add the water or broth, and bring to a simmer. Tie the parsley, thyme, and bay leaves together with a piece of kitchen twine and add the bundle to the pot. Season with 2 teaspoons salt, or to taste. Cover and transfer to the oven. Cook the meat until just tender, about 1 1/2 hours. (This can also be done on the stove at a low simmer.)
  • Remove pot from the oven. Skim the fat from the cooking liquid with a spoon or ladle. Add the potatoes, carrots, celery, and the tomatoes, and bring to a simmer on top of the stove. Cook, uncovered, stirring occasionally, until the liquid thickens and the vegetables are tender, about 1 hour. Remove and discard the herb bundle. Stir in the vinegar and season with salt and pepper, to taste. Divide among bowls and serve immediately.

4 slices bacon, chopped
One 4- to 5-pound chuck roast, cut into 1 1/2-inch cubes
Kosher salt and freshly ground black pepper
1 onion, finely chopped
1 stalk celery, finely chopped
5 carrots, 1 finely chopped, 4 cut into 1-inch pieces
2 heaping tablespoons tomato paste
1 tablespoon all-purpose flour
6 cloves garlic, finely chopped
1 bottle Burgundy wine
1 pound button mushrooms
One 14-ounce package frozen pearl onions
3 to 4 cups low-sodium beef broth
Chopped fresh parsley, for serving

Steps:

  • Preheat the oven to 325 degrees F.
  • Put a large, heavy-bottomed, ovenproof pot over medium heat and add the bacon. Cook until crisp, 5 to 7 minutes. Remove the bacon from the pot and reserve for serving.
  • Pat the beef dry and season it with salt and pepper. Turn up the heat under the pot to medium high and brown the beef on all sides in batches, 4 to 5 minutes per batch. Remove the meat from the pot and set aside. If there is a lot of oil left, pour off all but 2 tablespoons.
  • Add the onion, celery and finely chopped carrot to the pot and cook until the vegetables begin to wilt, 5 to 6 minutes. Stir in the tomato paste, flour and garlic and cook for another minute or 2. Pour in the wine, whisking to combine, and bring to a boil. Add the mushrooms, pearl onions and 1-inch carrot pieces. Return the beef to the pot. Pour in enough broth to just cover the meat and bring to a simmer. Cover and put into the oven. Cook until the beef is tender, 1 1/2 to 2 hours.
  • Skim off any excess fat from the top of the stew and serve garnished with parsley and the reserved bacon.

2 green bell peppers
3 tablespoons flour
3 tablespoons water

Steps:

  • Place beef and flour in a plastic baggie, Shake.
  • Pour oil into a large dutch oven, heat.
  • Add beef cook until brown, stirring occasionally.
  • Add water and next 4 ingredients.
  • Bring to a boil.
  • Cover.
  • Reduce heat and simmer 2 hours or until beef is tender.
  • Discard bay leaves.
  • Cut carrots, celery, potatoes, onion, and bell pepper, add to stew.
  • Cover and simmer 30 minutes, or until tender.
  • Combine water and flour, stirring well.
  • Pour into stew.
  • Boil, stirring constantly till thick and bubbly.
