This classic baked meatball recipe is easy to make, full of great flavor, and totally versatile. Pair it with your favorite Italian marinara sauce, BBQ sauce, Swedish cream sauce...and beyond!

Number Of Ingredients 14

1 cup Panko breadcrumbs
1/3 cup milk
1 pound ground beef
1 pound ground pork
4 cloves garlic, pressed or minced
2 eggs
1 cup (1 1/2 ounces) finely-grated Parmesan cheese
1/4 cup finely-chopped fresh Italian herbs (I used half parsley, half basil)
1/4 cup grated yellow onion
2 teaspoons Worcestershire sauce
1 teaspoon dried oregano
1 teaspoon fine sea salt
1/2 teaspoon black pepper
1/4 teaspoon crushed red pepper flakes

Steps:

  • In a large mixing bowl, stir together the panko and milk until combined. Set mixture aside to soak for 5 to 10 minutes while you prepare the other ingredients.
  • Add the ground beef, ground pork, garlic, eggs, Parmesan, fresh herbs, onion and Worcestershire sauce to the (same) mixing bowl. Sprinkle the oregano, salt, black pepper and crushed red pepper flakes evenly on top. Use your hands to mix the ingredients until evenly combined, being careful not to over-mix the ingredients.
  • To make the meatballs easier to form, I recommend covering and chilling the mixture in the refrigerator for 1 hour. But if you're pressed for time, you can skip this step.
  • Heat the oven to 425°F and line a large rimmed baking sheet with parchment paper.
  • Using a medium cookie scoop or a spoon, scoop and roll the mixture into 2-tablespoon balls and place them on the prepared baking sheet. (I recommend greasing your hands with a bit of olive oil to prevent the mixture from sticking.)
  • Bake for 10-12 minutes, or until an instant-read thermometer measures the internal temperature of the meatballs to be 160°F. Remove pan and transfer to a wire cooling rack.
  • Serve meatballs immediately and enjoy!

These Flavorful and juicy homemade meatballs are make-ahead and freezer friendly so they're perfect for meal prep. The meatballs can be baked or sauteed and served as appetizers or the main course.

3 slices white bread (crusts removed, diced)
2/3 cup cold water
1 lb lean ground beef (85/15 fat content)
1 lb ground pork
1/4 cup parmesan cheese (shredded)
1 large egg
3 garlic cloves (minced)
2 Tbsp parsley (finely chopped)
1 tsp sea salt
1/2 tsp black pepper
2 Tbsp olive oil (to sautee)

Steps:

  • Combine diced bread in a large bowl with 2/3 cup water. Set aside 5 minutes then mash with a fork. Meanwhile, prepare the remaining ingredients.
  • Into the bowl of mashed bread crumbs, add ground beef, ground pork, 1/4 cup parmesan cheese, 1 egg, 3 minced garlic cloves, 2 Tbsp parsley, 1 tsp salt and 1/2 tsp black pepper. Use your hands to stir the mixture together just until well combined. Do not overmix.
  • Portion onto a lined baking sheet (about 2 Tbsp per meatball - an ice cream scoop makes it easy). With wet hands, roll meatballs into 1 1/2" diameter balls.
  • To Sautee: Heat a large non-stick pan over medium heat. Add 2 Tbsp oil. Once the oil is hot, add meatballs to the skillet, placing them in one at a time and cook in batches to get a good sear. Sautee turning every 2 minutes (total 6-8 minutes), or until evenly browned and the internal temperature reaches 160˚F on an instant-read thermometer. Serve as is or in any recipe that calls for meatballs.
  • To Bake Meatballs: Place on a lined baking sheet 2" apart and bake in a fully preheated oven at 400˚F for 20-23 minutes, or until fully cooked and the centers reach 160˚F. If you want a prettier color to your meatballs, broil for the last 2-3 minutes.

Easy, easy, easy! These taste yummy freshly made or from the freezer. They are also very versatile since they aren't highly seasoned. The only thing hard about this recipe is rolling the little things. I originally got the idea from a Food and Family magazine, but modified it a little.

1 lb ground beef
10 saltine crackers, crushed
1/4 cup Italian salad dressing, divided
1 beef bouillon cube, dissolved in 1/2 c. boiling water

Steps:

  • Mix ground beef, cracker crumbs, and half salad dressing until well blended. Roll into 32 one inch balls.
  • Heat the rest of the dressing in a non stick skillet on medium high heat. Add meatballs to skillet. Cook, turning occasionally, about 8 minutes, or until brown. Add bouillon. Simmer about 5 minutes or until meatballs are cooked through.
  • At this point, you can bag them and freeze, or add sauce. Pasta sauce of all kinds is good, so is a can of cream of mushroom soup, thinned out with milk.

With a full pantry, a freezer bag of meatballs, and a handful of pasta, you can make a really filling soup. Of course this soup can also be made with fresh or frozen veggies, canned was just what I had one night when I needed dinner in a hurry. ETA after a few reviews mentioned this: We like our soups very thick, more like stews than soups. If you like more liquid in your soup, you're going to want to add one to three cans of water according to the reviewers, because the pasta will soak almost all of the liquid while it cooks.

1 lb meatballs, I use User Friendly Meatballs
3 garlic cloves, minced
1 cup chicken stock
1 (15 ounce) can diced tomatoes with garlic, undrained
1 (15 ounce) can whole canned tomatoes, cut up, undrained
1 (15 ounce) can mixed vegetables, undrained
15 ounces water
salt and pepper
3 cups rotini pasta
2 tablespoons fresh basil, minced
1 tablespoon fresh oregano, minced

Steps:

  • Using a big soup pot on medium high heat, warm up the meatballs. If there is some fat still frozen to them, you will not need to add any oil, but if you froze them without fat or are using storebought, you will need to add some olive oil to get this started.
  • Once the meatballs are good and warmed, add in the garlic and saute just until you start smelling it, about a minute. Don't burn the garlic! *grins*.
  • Next add the cans, the stock, and the water, and bring to a boil.
  • Drop the heat and keep your soup at a simmer for at least 5 minutes. At this point your soup can simmer for hours (and if you aren't using canned veggies, you will want to simmer it a while).
  • About 10 minutes before you want to serve, add the pasta and season to taste. When you are ready to serve, turn off the heat and stir in the fresh herbs.

These oven-baked meatballs are fast and easy to prepare and very kid-friendly. You can serve them with pasta and spaghetti sauce or just eat them with ketchup, as my children do. Feel free to substitute lean ground beef for the ground turkey. The turkey should have at least 7% fat.

2 tablespoons olive oil
1 (20 ounce) package ground turkey
1 egg, beaten
⅓ cup Italian seasoned bread crumbs

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish with the olive oil, and place it in the oven while preheating.
  • In a medium bowl, mix together the ground turkey, egg, and bread crumbs using your hands. Using an ice cream scoop if possible, form the meat into golf ball sized meatballs. Place about 1 inch apart in the hot baking dish. Press down to flatten the bottom just slightly.
  • Bake for 15 minutes in the preheated oven, then turn them over, and continue baking for about 5 more minutes, or until somewhat crispy on the outside. Serve with pasta and sauce or however you'd like.
