QUICK HOMEMADE APPLESAUCE - NO SUGAR ADDED
A quick, easy homemade applesauce recipe that I served with potato latkes this year. It has no added sugar, which makes it a better option for diabetics and low-carb people and others who avoid cane sugar. But if you prefer a sweeter sauce, add 1/2 cup of sugar. I recommend using 1/2 sweet apples (I like Braeburn) and 1/2 tart apples (Granny Smith, for example). Don't leave out the salt, it's a necessary ingredient for a good applesauce!

- Peel and core apples (I prefer to leave the skin on a few of them because I like the taste and texture). Cut apples into approximately 1 inch cubes.
- Add all ingredients to pot, and turn heat on high. Bring to a boil, then cover and reduce heat to low. Simmer for 20 minutes or until the apples have softened significantly.
- Stir frequently, making sure that the apples are not sticking to the bottom of the pot. Add more water if necessary. Remove lemon slices.
- Mash with a potato masher or use a food mill for a smoother consistency. Serve warm or at room temperature.

- Combine the apples, sugar, 1 cup water and 1/2 teaspoon salt in a large pot. Bring to a simmer over medium-high heat, stirring occasionally. Reduce the heat to medium-low. Cover with a tight-fitting lid and cook until the apples are very soft, 18 to 20 minutes.
- Stir in the lemon juice and cinnamon. Let cool for 5 minutes or so, then transfer the apple mixture to a blender, filling no more than halfway. Remove the center cap from the lid and place it on the blender. Cover the lid with a folded kitchen towel to catch splatters and pulse until smooth. Alternatively, puree in the pan with an immersion blender.
- Transfer the applesauce to a bowl and refrigerate until cool, about 1 hour. Store leftover applesauce in an airtight container in the refrigerator for up to 5 days.
EASY APPLESAUCE (COOKED IN RICE STEAMER)
This is an incredibly quick and tasty applesauce recipe. The unusual cooking method is both easier and yummier. Unlike stovetop applesauce recipes, this requires no added water so it's richer, and it is also impossible to burn!

- Peel, core, and coarsely chop the apples.
- Run apples through a blender until you have the desired consistency. I like mine slightly chunky. (Alternatively, you could finely chop the apples and not use the blender at all.).
- Pour into a heavy ceramic bowl that easily fits inside your rice cooker.
- Add sugar and lemon juice; stir together thoroughly.
- Place a cinnamon stick into the bowl of raw applesauce. Make sure that it is completely covered.
- Fill the metal bowl of your rice steamer so that the water is two inches high.
- Put the ceramic bowl filled with raw applesauce into the rice cooker. Cover and push the "cook" button.
- Walk away! Your rice steamer will do all the cooking, and no need to stir. The length of time it takes to cook probably varies according to your rice steamer, but I have the loveliest applesauce in about 10-15 minutes. Check back periodically and taste until it is done to your liking. Turn off the machine when it's done. You can leave the ceramic bowl in the rice cooker to cool, or remove it immediately with some tongs.

- Peel, core, and slice the apples.
- Using a vegetable peeler, peel 1 slice of lemon peel. Juice the same lemon.
- Add the water, cinnamon stick, the lemon peel, fresh lemon juice, and brown sugar to instant pot and stir to combine. Add apples and toss to mix
- Close the lid, make sure it's in the sealing position and turn toggle to seal.
- Press Pressure (it should automatically set to HIGH pressure). Set time to 8 minutes. Hit START. When finished do a controlled (carefully allow steam to release in short bursts to make sure nothing spews out) quick release.
- Remove the cinnamon stick. If you prefer a chunky apple sauce mash with a hand potato masher and transfer to a bowl. Or transfer the mixture to a blender, blending until smooth. Set aside to cool or serve as a warm apple sauce. Store leftovers in a lidded container. Store in the fridge for 7-10 days.

- Cut the apple quarters into small chunks. Put them directly into a non-reactive saucepan just large enough to hold them. Add the cloves, water and sugar. Sprinkle with raisins, if using.
