PERFECTLY BAKED BEANS

Provided by Ree Drummond : Food Network

Categories     side-dish

Time 2h30m

Yield 18 servings

Number Of Ingredients 13

4 slices regular bacon, diced
1 medium onion, cut into small dice
1 medium green bell pepper, cut into small dice
1 red bell pepper, cut into small dice
1 fresh jalapeno, chopped
4 large cans (28 ounces each) pork and beans
1 cup barbecue sauce
1/2 cup brown sugar
1/4 cup distilled or cider vinegar
2 tablespoons ketchup
1 tablespoon yellow mustard
2 chipotle peppers, minced
6 slices thin bacon

Steps:

  • Adjust the oven rack to the lower-middle position and preheat the oven to 325 degrees F.
  • Fry the regular chopped bacon in a large, deep skillet until the bacon has partially cooked and released about 1/4 cup drippings. Add the onions, peppers and jalapenos, and saute until tender, about 5 minutes. Add the beans, barbecue sauce, brown sugar, vinegar, ketchup, mustard and chipotles, and bring to a simmer. (If the skillet is not large enough, add the beans and heat to a simmer and then transfer to a large bowl and stir in the remaining ingredients). Pour the flavored beans into an aluminum pan. Top with the uncooked slices of bacon (you can halve the slices if you like). Then bake until the beans are bubbly and the sauce is the consistency of pancake syrup, about 2 hours. Let stand to thicken slightly and serve.

UNCLE ALBERT'S BAKED BEANS

Uncle Albert's Baked Beans image

This is a very simple old time family recipe. It was used at every family reunion and for all family gatherings. *** contemporary additions if desired *** add 3 tbs dry mustard, 3 tsp pepper, 6 cloves minced garlic, and 3 minced medium onions. Saute together and added prior to baking *** These ingredients were not part of the original recipe and are not included in the nutritional value***

Categories     Beans

Time P2DT1h30m

Yield 20 serving(s)

Number Of Ingredients 4

3 lbs dried navy beans
1 lb salt pork
3 pints molasses
3 teaspoons salt

Steps:

  • Rinse beans until water comes out clean, removing any "bad" looking beans.
  • Soak beans covered in water at least 5 hours or overnight in a large pan.
  • Boil in same water with 3/4 of salt pork (cut up either in chunks or slices).
  • Bring pot to a boil with the salt pork. Reduce heat to medium, and simmer 1 1/2 hrs till tender. (However tender the beans are going into the pot is how they will be in the end).
  • In a heavy baking pan sprayed with Pam, add beans, salt pork, salt (add contemporary additions if desired). Cover with water used to boil the beans. Add rest of salt pork in slices on the top.
  • Bake at 200°F for 8 hours.
  • Add water used from boiling when stirring to prevent sticking and for a moist bean. My family however, did not stir the beans, they just added the water every 30-s60 minute.

UNCLE BOB'S GREEN BEANS

Uncle Bob's Green Beans image

This started out as Aunt Lynn's but has been so heavily modified (I don't like French Green Beans) that I decided to post it as a different recipe. I have been making this for all my family gatherings for over 10 years by request. I usually triple the recipe because everyone wants to take some home.
