SPLIT PEA SOUP WITH CRISPY KIELBASA
One of my all-time favorite comfort foods is a bowl of split pea soup, dating back to the days when my mother served us canned pea soup with cut-up hot dogs (very '50s!). Now I prefer a big pot of homemade soup to serve with sautéed kielbasa on top. I love the way the earthy, creamy soup contrasts with the crispy, spicy sausage.

- Heat 1/4 cup olive oil in a large (11 to 12-inch) pot or Dutch oven, such as Le Creuset, over medium-high heat. Add the leeks, onion, and carrots and cook for 7 to 8 minutes, stirring occasionally, until tender and starting to brown. Stir in the garlic and cook for one minute. Stir in the peas to coat with oil and cook for one minute. Add 8 cups of the chicken stock, 2 cups water, the ham hock, thyme bundle, bay leaves, 2 teaspoons salt, and 1 teaspoon pepper. Bring to a boil, lower the heat, and simmer, partially covered, for 1 1/4 hours, stirring occasionally, until the peas are very tender and falling apart. After 45 minutes, stir more frequently, scraping the bottom of the pot to be sure the soup doesn't burn.
- Discard the thyme bundle, bay leaves, and ham hock. Transfer 2 cups of the soup to the bowl of a food processor fitted with the steel blade and purée. Return the purée to the pot, adding more chicken stock or water if the soup is too thick.
- To serve, heat 2 tablespoons olive oil in a medium (10 to 11-inch) sauté pan over medium heat. Add the kielbasa and sauté for 5 to 6 minutes, tossing occasionally, until the kielbasa is browned. Serve the soup hot with the kielbasa and parsley sprinkled on top.
- Make ahead: Reheat the soup over low heat, adding chicken stock or water to thin.

- Heat the oil in a large soup pot over medium heat. Add the celery, pork bone, ham and onions. Cook stirring for 5 to 10 minutes.
- Add the peas, stock, and salt and pepper, to taste. Cook over low heat until thickened and the peas are broken down, stirring constantly so the mixture doesn't burn.
- Strain into a large serving bowl, using a strainer with large holes, to force the pulp through the holes. Cook's Note: The ham can be chopped into small pieces and added to the soup before serving, if desired.
- Ladle the soup into serving bowls and top each serving with croutons.

- Cover ingredients with water about 2 inches above the top of the ingredients.
- Bring to a boil.
- Reduce heat and simmer for about 3 hours, or until peas are pureed and slightly thickened.

- decide how much soup you want to make and put your peas to soak in water overnight.
- next day rinse and bring them to a boil in the liquid leftover from New England boiled dinner. Cook until soft. I usually simmer a few hours, thenn add the leftover meat and veggies cut up about 1/2 to 1 hour before serving. Adjust water befor adding meat and veggies. I usually make mine in a 2 qt casserole pan for top of stove cooking
- we served it with a easy garlic cheese bread Easy cheesy garlic bread 1 loaf frozen bread dough thawed 1/2 stick butter 1 tablespoon garlic 1 tablespoon Italian seasoning 2 cups mozzerella cheese Mix soft butter garlic and italian seasonings together. Lightly grease and flour a cookie sheet, spread the dough out to make a 7-12 or bigger rectangle and spread a little butter over top and let raise 30 minutes or so. put in an 350 oven for 25 minutes or until lightly brown and remove from oven. spread with garlic butter and sprinkle with cheese and return to melt the cheese. Cut with a pizza cutter into squares or sticks.
RACHEL'S SPECIAL EASY SPLIT PEA SOUP (VEGAN)
Feel free to use 1 cup split green peas to be more traditional; what makes my soup special is the mix of the two peas. This soup is dense and hearty (but also vegan and healthy!) and I made it up using some ideas from other vegan soups I like and because most split pea soups I tried had a nice "starter" but bad aftertaste to me (I think namely from the use of cream or a slimier broth; this one's totally vegan.) So you don't have to feel guilty if you wanna make a meal out of this soup! :) This is year-round vegan comfort food at its best. And it's so easy to make but tastes complex!! (Especially if it's a 32-oz jug of veggie stock-- you can just dump the whole thing in, you don't even have to measure it.)

- In a large saucepan, put the split peas and veggie stock along with the salt, and simmer about 20-25 minutes or until the peas have really softened and somewhat disintegrated.
