2 to 2 ½ pounds boneless beef chuck or brisket ((cut into 1½-inch chunks))
2 cloves garlic ((minced))
3 tablespoons ginger ((minced))
5 tablespoons fish sauce
2½ teaspoons five-spice powder
1½ teaspoons brown sugar
3 tablespoons oil
1 stalk lemongrass ((cut into 3-inch lengths, after removing any tough woody parts))
2 stalks lemongrass ((minced, after removing any tough woody parts))
8 cloves garlic ((minced))
1 onion ((sliced thinly))
4 tablespoons tomato paste
8 cups water
2 cups pure coconut water/juice
2 star anise
1 teaspoon ground black pepper
1 teaspoon chili powder
1 teaspoon ground annatto ((optional))
1 tablespoon paprika
8 large carrots ((peeled and cut on the bias into 1½ -inch chunks))
1 teaspoon salt
3 tablespoons soy sauce
3 tablespoons chili oil ((or to taste))
wide rice noodles or egg noodles
¼ cup coarsely chopped fresh cilantro leaves
1/2 cup Thai basil leaves
1/2 cup Thinly sliced raw onion
Lime wedges

Steps:

  • First marinate the beef. Combine the beef with the garlic, ginger, fish sauce, five-spice powder, and brown sugar until each piece is evenly coated. Marinate for 30 minutes.
  • Next, heat 3 tablespoons of oil in a large stock pot or Dutch oven over high heat. Add the stalks of lemongrass and allow them to infuse the oil for 1 minute. Next, add the minced lemongrass and garlic. Cook for 2 minutes.
  • Add the onions and cook until translucent. Then add all of the beef to the pot, and brown evenly on all sides. Add the tomato paste.
  • Stir and cook uncovered for 5 minutes. Add the water, coconut water, star anise, ground black pepper, chili powder, annatto, and paprika. Bring the mixture to a boil, reduce the heat to medium low, and simmer, covered, for 1 hour.
  • After an hour has passed, add the carrots, salt, soy sauce, and chili oil. Simmer for another 40 minutes.
  • To serve, remove the large lemongrass stalks and any star anise pods you can fish out. Cook your noodles per package instructions, transfer to bowls, and ladle the soup over the top.
  • Garnish with cilantro, Thai basil, and raw onion, and serve with some lime wedges on the side.

1 lb beef (eg cheap sirloin, thinly sliced 1/8" thickness)
3 tbsp sugar
1" ginger (minced, about 30g/2 tbsp)
6 cloves garlic (crushed)
2 stalks lemongrass (minced, about 30g/2 tbsp)
8 Thai chilies (sliced, or other red chili of choice)
3 tbsp fish sauce (see note)
1 tbsp oyster sauce
1 tbsp oil
4 portions vermicelli
1/4 English cucumber (thinly sliced)
1/4 cup lettuce or cabbage (thinly sliced)
4 wedges lime
1/4 cup cilantro (roughly chopped)
1/4 cup mint (roughly chopped)
1/4 cup fried shallots (commercially available)

Steps:

  • At least 1 hour before (overnight is better), marinate the beef: crush 1 tablespoon of sugar, half the ginger, 2 cloves of garlic, half the lemongrass, and 1 Thai chili in a mortar and pestle. Combine with the thinly sliced beef, along with 1 tablespoon each of fish sauce, oyster sauce, and oil. Mix well, then cover and store in the fridge.
  • At the same time, make your fish sauce: combine the remaining 2 tablespoons of sugar, 1 tablespoon of ginger, 4 cloves of garlic, and 2-4 Thai chilies (as comfortable) in a mortar and pestle. Crush into a fine paste, then transfer to a jar along with 2 tablespoons of fish sauce and 1 cup of water. Store in the fridge.
  • When you are ready to eat, cook your vermicelli to the time indicated on the package (usually 3 minutes), then drain and rinse well with cold water. Set aside. Prepare your vegetables. In the photo, I used quick pickled cucumbers, purple cabbage, lettuce, cilantro, lime, and fried onions.
  • To make quick pickled cucumbers, thinly slice 1/4 of an English cucumber, then toss with 1 teaspoon salt and 1 tablespoon sugar. Let sit for 15 minutes, then rinse in cold water.
  • Heat a large nonstick skillet with 1 tablespoon of oil over medium heat. Fry your remaining 1 tablespoon of minced lemongrass until crispy and golden brown, then drain and set aside, reserving the oil.
  • Add the marinated meat to the skillet and fry until well charred on both sides. You may need to do this in batches depending on the size of your nonstick skillet.
  • Arrange vermicelli, vegetables, and beef in a bowl. Toss with 1/4 cup of the fish sauce, then top with fried lemongrass, fried shallots, a squeeze of lime, and sliced chilies, as desired.

This savory-sweet stir-fry, known as bo luc lac or "dice" in Vietnamese, gets its English name from the constant shaking of the pan performed by the cook while browning the meat. It can be tough work to move the hot wok constantly, and the intense heat can burn the ingredients in a wink. This recipe, adapted from the one served at Slanted Door, Charles Phan's immensely popular Vietnamese restaurant in San Francisco, has been simplified for the home cook. Once the meat is marinated, it is quick work - 20 minutes from start to finish - but don't try to expedite matters further by dumping all of the meat into the wok at once. Cook the meat in two batches (a pound at a time) so you get a nice, crisp sear.

1 1/2 to 2 pounds beef tenderloin (filet mignon), trimmed of excess fat and cut into 1-inch cubes
2 tablespoons chopped garlic
2 tablespoons sugar
Salt and pepper
5 tablespoons neutral oil, like corn or canola
1/4 cup rice-wine vinegar
1/4 cup rice or white wine
3 tablespoons soy sauce
1 tablespoon fish sauce
1 red onion, peeled and sliced thin
3 scallions, trimmed and cut in 1-inch lengths
2 tablespoons butter
2 bunches watercress, washed and dried, or 1 head red leaf lettuce, washed, dried and separated into leaves
2 limes, cut into wedges

Steps:

  • Marinate meat with garlic, half the sugar, 1 teaspoon salt, 1/4 teaspoon pepper and 1 tablespoon oil for about 2 hours. (Refrigerate if your kitchen is very warm.) Meanwhile, combine vinegar, remaining sugar, wine, soy sauce and fish sauce. Taste, and add salt and pepper if necessary. Mix about 1 tablespoon salt and 1 teaspoon pepper in a small bowl.
  • Divide the meat into 2 portions, and do the same with the onion and scallions. Put a wok or a large skillet over maximum heat, and add about 2 tablespoons oil. When the oil smokes, add the meat in one layer. Let it sit until a brown crust forms, and turn to brown the other side. Browning should take less than 5 minutes. Add half the onion and half the scallions, and cook, stirring, about 30 seconds. Add about half the vinegar mixture, and shake pan to release the beef, stirring if necessary. Add half the butter, and shake pan until butter melts. Remove meat, and repeat.
  • Serve beef over watercress or lettuce leaves, passing salt and pepper mixture and lime wedges at the table.

12 ounces risotto rice
beef broth, about 24 ounces
1 can coconut milk
1-inch nub fresh ginger, processed fine
1/2 bunch fresh cilantro
2 TB southern spain pinchito spice mix from Savory

A few dried lime leafs, optional
1 long red hot pepper, diced
3 small stalks lemongrass, processed fine, or lemon
verbena
Generous pinch saffron, optional
Cilantro leaves and/or lime leaves for garnish

Steps:

  • Sear beef in a little olive oil on medium high heat in large pan, searing all sides, about 5-7 minutes. Reduce heat to medium. Soften onions in beef juices, 5 minutes. Add rice and sautée for 2 minutes; then gradually stir in broth and coconut milk, 1 cup at a time, allowing rice to absorb liquid, while adding additional ingredients. Simmer until rice is tender, about 25 to 35 minutes. Garnish with cilantro leaves and/or lime wedges.

1/2 cup shredded carrot

Steps:

  • In 12-inch nonstick skillet, cook beef, onion, garlic and pepper over medium-high heat 5 to 7 minutes, stirring occasionally, until beef is thoroughly cooked; drain if desired. Stir in rice; cook 2 minutes, stirring constantly.
  • Stir in broth; heat to boiling. Reduce heat to medium-low. Cover; simmer 10 minutes.
  • Stir in carrot. Cook uncovered 5 to 7 minutes longer or until liquid is absorbed.
  • Remove skillet from heat. Stir in cheese. Cover; let stand 3 minutes. Sprinkle with chives.

2 tablespoons Vietnamese fish sauce, such as Red Boat
1 tablespoon brown sugar
2 tablespoons grated fresh ginger
2 teaspoons Chinese 5-spice powder
1/2 teaspoon black pepper

2 tablespoons vegetable oil
6 large shallots or 1 medium red onion, thinly sliced

Steps:

  • Make the marinade: Stir together fish sauce, sugar, ginger, 5-spice powder and pepper.
  • Put beef in a large bowl, add marinade and massage into meat. Let marinate for at least 15 minutes, or longer if time permits (may be wrapped and refrigerated overnight if desired).
  • Put oil in a Dutch oven or heavy-bottomed pot over medium-high heat. When oil is hot, fry the beef cubes in small batches, taking care not to crowd them, until nicely browned. When all beef is browned, return chunks to pot. Add shallots, stir to combine and continue cooking for 4 to 5 minutes, or until softened.
  • Add tomato, ginger, garlic, lemongrass, salt and annatto, if using, and stir well to coat, then add star anise, cinnamon and chile. Cover with 4 cups water and bring to a boil.
  • Reduce heat to a simmer, cover with lid ajar and cook for about 1 hour 15 minutes, or until fork-tender.
  • Add carrots to pot and cook 15 minutes more. Skim fat from surface of broth as necessary (or refrigerate overnight and remove congealed fat before reheating).
  • To serve, ladle into individual bowls. Garnish with scallions, cilantro, mint and basil.
