COMFORTING TUNA PATTIES



Comforting Tuna Patties image

My grandmother and mother made these tuna patties on Fridays during Lent. I'm not the biggest fan of tuna, but it's perfect in this dish. These patties are even good cold the next day, if there are any leftovers. -Ann Marie Eberhart, Gig Harbor, Washington

Number Of Ingredients 10

2 tablespoons butter
3 tablespoons all-purpose flour
1 cup evaporated milk
1 pouch (6.4 ounces) light tuna in water
1/3 cup plus 1/2 cup dry bread crumbs, divided
1 green onion, finely chopped
2 tablespoons lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper
Oil for frying

Steps:

  • In a small saucepan, melt butter over medium heat. Stir in flour until smooth; gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir until thickened, 2-3 minutes. Remove from heat. Transfer to a small bowl; cool., Stir in tuna, 1/3 cup bread crumbs, green onion, lemon juice, salt and pepper. Refrigerate, covered, at least 30 minutes., Place remaining 1/2 cup bread crumbs in a shallow bowl. Drop 1/3 cup tuna mixture into crumbs. Gently coat and shape into a 1/2-in.-thick patty. Repeat. In a large skillet, heat oil over medium heat. Add tuna patties in batches; cook until golden brown, 2-3 minutes on each side. Drain on paper towels., Freeze option: Freeze cooled tuna patties in freezer containers, separating layers with waxed paper. To use, reheat tuna patties on a baking sheet in a preheated 325° oven until heated through.

1 (6 ounce) can tuna
3 tablespoons flour
1 1/2-2 cups milk
salt
pepper
toast or biscuit

Steps:

  • Melt butter in skillet.
  • Add tuna with any juices.
  • Stir in flour.
  • Remove from heat and gradually add milk, a little at a time, mixing till smooth.
  • Return to heat and stir till it is bubbly and thickens, adding more milk as needed.
  • Serve over crisp toast or biscuits.

Times were tough for my newly divorced mom in the 70's. I remember eating creamed tuna on toast with a green salad on the side at least weekly. It was one of my favorite meals, and I had no idea we were eating it out of necessity. Times aren't so tough now, but I still make this about once a month. It's great when you're in a hurry, or have limited supplies on hand. My kids love it too!

2 tablespoons butter
2 tablespoons all-purpose flour
1 ½ cups milk
1 (5 ounce) can chunk light tuna in water, drained and flaked
salt and ground black pepper to taste
4 slices bread, toasted, or to taste

Steps:

  • Melt butter in a small saucepan over medium heat. Stir flour into melted butter until smooth and slowly stream milk into the mixture while whisking continually. Bring mixture to a simmer and cook until thickened, about 5 minutes.
  • Reduce heat to medium-low. Stir tuna into the milk mixture; season with salt and pepper. Cook until tuna is warmed, 2 to 3 minutes.
  • Ladle tuna mixture over toasted bread to serve.

2 (6 to 8-ounce) jars imported tuna packed in olive oil, drained
1/2 cup (1/4-inch) diced hearts of celery
1/2 cup minced scallions, white and light green parts (3 scallions)
3 tablespoons minced fresh dill
2 tablespoons freshly squeezed lemon juice
Kosher salt and freshly ground black pepper
3/4 cup good mayonnaise, such as Hellmann's
1 teaspoon anchovy paste (optional)
4 large slices bread, such as Pepperidge Farm Farmhouse Hearty White
4 ounces Swiss cheese, such as Emmentaler, grated
1 ounce microgreens

Steps:

  • In a medium bowl, flake the tuna finely with a fork. Add the celery, scallions, and dill, and continue mixing and fluffing with the fork until combined. Add the lemon juice, 1 1/2 teaspoons salt, and 3/4 teaspoon pepper. Combine the mayonnaise and anchovy paste, if using, and mix into the tuna.
  • Preheat the broiler. Toast the bread in a toaster and place the slices in a single layer on a sheet pan. Spread a quarter of the tuna mixture thickly and evenly on each piece of bread, covering the entire slice. Sprinkle the cheese evenly on the 4 sandwiches, covering the tuna completely. Broil for 1 to 2 minutes, just until the cheese melts and starts to brown. (Watch it carefully!) Sprinkle with the microgreens and serve hot.

frozen puff pastry, thawed (about 1/3 sheet , or 3 ounces)
1 tablespoon unsalted butter
1 tablespoon all-purpose flour
1/2 cup milk, plus more if needed
kosher salt
freshly ground black pepper
2 (6 ounce) cans chunk light tuna in oil, drained
2 tablespoons freshly finely grated parmesan cheese
1 teaspoon finely grated lemon zest
2 teaspoons fresh lemon juice, plus more to taste

Steps:

  • Preheat oven to 400°; on a lightly floured surface, roll the dough lightly just to smooth it, then cut it into two pieces, each about 3 by 4 1/2 inches.
  • Put pastry on a small baking sheet and bake in the hot oven until puffed and nicely browned, 20 minutes.
  • Meanwhile, in a small saucepan, melt the butter over medium heat.
  • Add in the flour and whisk until smooth, then whisk for about 30 seconds.
  • Add in the milk, whisk vigorously until the sauce is smooth, then reduce the heat to low and cook, whisking often, another 2-3 minutes to cook off the floury taste.
  • Season generously with salt and pepper, or lemon juice to taste.
  • The tuna should be creamy and loose, but not runny.
  • Add a little more milk, and reheat gently, if necessary.
  • Split the pastries in half horizontally, with your knife parallel to the work surface, as though you were splitting open a sandwich roll, and put the bottoms on two small plates.
  • Spoon the creamed tuna on the base, then cover with the top; serve immediately.
