7 tablespoons unsalted butter, room temperature, plus more for baking pan
3/4 cup plus 2 tablespoons unbleached all-purpose flour
1/4 teaspoon baking powder
1/2 teaspoon kosher salt
7 ounces unsweetened chocolate, finely chopped (1 1/3 cups)
3 tablespoons safflower or coconut oil
1 cup granulated sugar
1 cup packed light-brown sugar
3 large eggs, room temperature

Steps:

  • Preheat oven to 350 degrees. Butter a 9-inch square baking pan. Line with parchment, leaving a 2-inch overhang on two sides; butter parchment.
  • In a medium bowl, whisk together flour, baking powder, and salt. In a heatproof bowl set over a pot of simmering water, melt chocolate and butter with oil. Remove from heat. Add both sugars and whisk 10 seconds. Add eggs and whisk vigorously until glossy and smooth,45 seconds. Using a rubber spatula, stir in dry ingredients. Pour batter evenly into prepared pan, smoothing top with spatula.
  • Bake until set and a tester inserted in center comes out with moist crumbs, 35 to 40 minutes. Let cool in pan on a wire rack 20 minutes, then remove using parchment; let cool completely on rack before cutting into squares. Brownies can be stored in an airtight container up to 2 days.

⅓ cup unsweetened cocoa powder
1 ½ teaspoons espresso powder (optional)
⅔ cup boiling water
⅓ cup semi-sweet chocolate chips
4 tablespoons unsalted butter (melted)
⅔ cup vegetable oil
2 large eggs
2 large egg yolks (room temperature)
1 tablespoon vanilla extract
2 cups granulated sugar
1 ¾ cups all-purpose flour
¾ teaspoon kosher salt
1 cup semi-sweet chocolate chips

Steps:

  • Preheat oven to 350ºF (180ºC).
  • Line an 8×8-inch square baking pan with parchment paper, allowing excess to overhang pan edges. Set aside.
  • In a large bowl, whisk together the cocoa powder, espresso powder (if using), and boiling water until smooth.
  • Add ⅓ cup chocolate chips and whisk until chocolate is melted.
  • Whisk in melted butter and oil. (Mixture may look curdled.)
  • Add eggs, egg yolks, and vanilla and continue to whisk until smooth.
  • Whisk in sugar until fully incorporated.
  • Add flour and salt and mix with rubber spatula until combined.
  • Fold in remaining 1 cup chocolate chips.
  • Scrape batter into the prepared pan and bake until a toothpick inserted in the center comes out with just a few moist crumbs attached, 50-60 minutes. Transfer pan to wire rack and cool 1 hour.
  • Using parchment overhang, lift brownies from the pan. Return brownies to the wire rack and let cool completely, about 1 hour. Cut into 16 squares and serve.

½ cup melted butter
2 cups white sugar
2 eggs
¼ teaspoon salt
1 cup all-purpose flour
2 teaspoons vanilla extract
⅓ cup confectioners' sugar for decoration

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Line one 9x13 inch pan with greased parchment paper.
  • Combine the cocoa, melted butter, sugar, eggs, salt , flour and vanilla. Mix until well combined. It should be very thick and sticky.
  • Spread mixture into the prepared pan. Bake at 300 degrees F (150 degrees C) for 30 minutes. Cool completely before cutting into squares.

Steps:

  • Preheat oven to 375 degrees.

1 (8 ounce) box semi-sweet chocolate baking squares, Nestle Toll House, broken into pieces
2 large eggs
2 teaspoons vanilla extract
1 cup all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup nuts, chopped (optional)

Steps:

  • Preheat oven to 350 degrees. Grease 13 x 9 inch baking pan.
  • Microwave sugar, butter and water in a large, microwavable bowl on high (100%) power for 3 minutes or until mixture boils, stirring once. Add baking bars; stir until melted.
  • Add eggs one at a time, stirring well after each addition.
  • Stir in vanilla extract.
  • Add flour, baking soda and salt; stir well.
  • Stir in nuts.
  • Pour into prepared baking pan.
  • Bake for 16 to 20 minutes or until wooden pick inserted in center comes out slightly sticky.
