While traveling in Thailand, my husband sampled a local version of this tasty soup from street vendors. We have tried many variations, and this comes the closest to his recollection. We double the recipe so we have lots of leftovers. -Donna Noecker, Plano, Texas

6 ounces dried Japanese udon noodles or fettuccine
1 small bunch bok choy, coarsely chopped
1 pork tenderloin (1 pound), cut into 1/4-inch slices
6 cups reduced-sodium chicken broth
3 tablespoons reduced-sodium soy sauce
4 teaspoons minced fresh gingerroot
3 garlic cloves, minced
Optional: Thinly sliced green onions and Sriracha chili sauce

Steps:

  • Cook noodles according to package directions; drain and rinse with water. Meanwhile, in a Dutch oven, combine bok choy, pork, broth, soy sauce, ginger and garlic; bring just to a boil. Reduce heat; gently simmer, uncovered, 5-7 minutes or just until bok choy and pork are tender., Add noodles to soup. Serve immediately. If desired, sprinkle with green onions and serve with chili sauce.

This incredibly easy soup, which was developed for a special kids edition of The Times, is just the thing to warm you from fingertips to toes on a chilly day. It starts with a simple garlic-ginger broth, to which you add pretty much any vegetable, tofu or cooked meat that you like (meatballs are fun). Just be sure to slice any firm vegetables thinly, so they can cook quickly. Toss a tangle of cooked noodles in to the broth, and add a frenzy of toppings - halved hard-boiled eggs, roasted peanuts, sliced scallions, sprouts, nori (a type of seaweed), a drizzle of sriracha - whatever excites you. As for noodles, we like udon, because they're delightfully soft and chewy, but you can also use spaghetti, bucatini or even ramen. (Fun fact: Udon dough is traditionally kneaded with your feet.)

5 ounces dried udon (2/3 of an 8-ounce package) or 2 7-ounce packages fresh or frozen noodles (spaghetti or bucatini also work)
1 teaspoon sesame, olive, vegetable or canola oil
1 tablespoon olive oil
Fresh ginger, about 1-inch, peeled and finely minced, or grated on the smallest holes of a box grater
2 to 4 garlic cloves, peeled and finely minced, or grated on the smallest holes of a box grater
3 cups low-sodium vegetable or chicken broth
2 cups, total, fresh or frozen vegetables, like thinly sliced carrots, bok choy, mushrooms, snow or snap peas, green beans, baby corn, corn kernels, peas, edamame, fresh spinach
1/2 cup cubed firm tofu, precooked chicken, pork or beef (optional)
1 tablespoon white miso paste or 3 to 4 tablespoons soy sauce, plus more soy sauce as needed

Steps:

  • Prepare noodles according to package directions, and drain. Toss with a teaspoon of sesame, olive, vegetable or canola oil to prevent them from sticking together, and set aside.
  • In a medium saucepan over medium heat, heat 1 tablespoon of olive oil until it shimmers, and sauté the grated ginger and garlic until you smell it (less than a minute). Do your best not to burn it. Add 2 cups of stock to the pot. Be careful - it might splatter.
  • Bring the stock to a boil, and lower the heat to a simmer (about medium-low). Add carrots (or any hard, root vegetables, if using), and cook until they are crisp-tender, about 1 to 2 minutes. Add tofu or any vegetables (except spinach), and cook until tender but still bright in color, about 1 to 2 minutes. Turn off heat, and cover to keep warm.
  • In a small pot, heat the remaining 1 cup of stock until it steams. Remove from the heat, and whisk in the miso paste until the miso is completely dissolved, then pour the entire miso mixture into the pot with the soup. (If using soy sauce instead of miso, skip this part and add the rest of the stock and soy sauce.) Stir in the cooked noodles and fresh spinach, if using, and heat through over medium-low, if necessary. Do not bring the soup to a boil with the miso: Some cooks believe this can ruin the miso's delicate flavor. Top as desired and season additionally, if desired, with soy sauce.

I've been experimenting with my new wok and I think this stir-fried udon meal came out pretty good. My husband liked it, so it can't be that bad. It is a relatively easy recipe.

1 (7 ounce) package udon noodles
¼ cup vegetable oil
2 tablespoons cornstarch
1 tablespoon minced garlic
¼ teaspoon ground ginger
2 (10 ounce) packages frozen Asian vegetable medley
5 tablespoons soy sauce
2 ½ tablespoons water
2 tablespoons rice wine vinegar
1 teaspoon white sugar
2 tablespoons sesame oil
1 pound pork tenderloin, cut into strips

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook udon in boiling water, stirring occasionally, until noodles are tender yet firm to the bite, 10 to 12 minutes. Drain and set aside.
  • While noodles are cooking, blend vegetable oil, cornstarch, garlic, and ginger together in a large bowl until cornstarch is dissolved. Mix in frozen vegetables, tossing to lightly coat.
  • Whisk soy sauce, water, vinegar, and sugar together in a small bowl.
  • Heat sesame oil in a wok over medium-high heat. Cook and stir pork strips in the hot oil until just browned, 5 to 7 minutes. Add frozen vegetables and cook, stirring constantly to prevent burning, about 2 minutes. Stir in soy sauce mixture. Add drained udon and stir-fry until vegetables are tender and pork strips are no longer pink in the centers, about 2 minutes more.

1 pound pork tenderloin, trimmed
Kosher salt and freshly ground pepper
1/2 cup plus 1 teaspoon canned coconut milk
2 tablespoons plus 1 teaspoon fish sauce
2 tablespoons plus 1 teaspoon packed light brown sugar
2 tablespoons fresh lime juice, plus wedges for serving
2 teaspoons chili-garlic sauce
3 7-ounce packages fresh or frozen udon noodles
1 12-ounce Asian salad kit (dressing reserved for another use)
1 cup bean sprouts
1 cup fresh mint, torn
1 cup fresh basil, torn

Steps:

  • Preheat the broiler. Line a rimmed baking sheet with foil. Season the pork with salt and pepper. Mix 1 teaspoon each coconut milk, fish sauce and brown sugar in a small bowl. Rub all over the pork, place on the prepared pan and broil until browned on top, about 7 minutes. Flip and broil until a thermometer inserted into the thickest part registers 145˚, 5 to 8 minutes. Transfer to a cutting board and let rest, 10 minutes. Thinly slice the pork against the grain, then cut the slices into strips.
  • Meanwhile, bring a large pot of water to a boil. Microwave the remaining 1/2 cup coconut milk in a microwave-safe bowl to melt any solids, about 30 seconds (do not boil). Stir in the lime juice, chili-garlic sauce and the remaining 2 tablespoons each fish sauce and brown sugar.
  • Add the noodles to the boiling water; cook until tender but still chewy, about 30 seconds for fresh and 2 minutes for frozen. Drain and rinse under cold water to cool. Shake off any excess water.
  • Toss the noodles, pork, vegetables from the salad kit, bean sprouts and half the coconut dressing in a large bowl; season with salt and pepper. Divide among plates and drizzle with the remaining dressing. Sprinkle with the crunchy toppings from the salad kit and top with the mint and basil; serve with lime wedges.

1 (12 ounce) package dried udon noodles
8 cups chicken stock (low sodium canned or homemade)
1 tablespoon thinly sliced peeled fresh ginger
1/2 cup thinly sliced carrot
1/2 cup trimmed snow peas, sliced 1/2-inch on the diagonal
1/2 cup thinly sliced small brown button mushroom
2 tablespoons white miso
1/2 tablespoon soy sauce
1/2 cup thinly sliced scallion (white and light green parts only)

Steps:

  • Cook the udon noodles according to the package directions; drain and set aside.
  • In a large saucepan, bring the stock to a boil; decrease heat to medium and add in the ginger and carrots.
  • Cook until the carrots are crisp-tender, 1-2 minutes.
  • Add in the snow peas and cook until slightly tender but still bright green, about 1 minute.
  • Add the mushrooms, cook for 30 minutes, and remove from heat.
  • Place the miso on a medium bowl and add a ladleful of hot broth.
  • Whisk until the miso is completely dissolved, then stir the mixture back into the soup.
  • Do not let the soup come to a boil, or the mixo will lose some of its flavor.
  • Taste the soup for saltiness and add soy sauce to taste.
  • Stir in the scallions.
  • With tongs, place noodles in each soup bowl (allowing 3/4 cup for 6 servings, 1 1/4 cups for 4 servings).
  • Ladle in the soup and serve hot.

In fact, noodles of any kind. It's a food that is very easy to eat; it's very soothing and comfortable, too. If it was raining soup, I would go out with forks.

2 tablespoons extra virgin olive oil
2 garlic cloves, finely chopped
1 cup fresh broccoli, stems and florets separated and chopped into bite-size pieces
1 carrot, thinly sliced
1/2 cup finely chopped onion
2 (7 ounce) packages fresh udon noodles
3 -4 tablespoons soy sauce
4 -5 cups low sodium vegetable broth
salt, to taste

Steps:

  • In a small pan bring vegetable broth to a boil, lower heat and let it simmer. In the meanwhile get started on the below step.
  • Heat the olive oil in a medium saucepan over medium heat; add garlic and onion, saute until light brown. Add all the remaining vegetables, udon noodles and soy sauce. Season with the salt, and cook until tender, about 3-4 minutes. To this add the vegetable broth and let the it simmer for 5-6 minutes, check noodles for thorough cooking. Season with freshly ground pepper and additional salt, to taste.
