We added Cheddar and chives to this classic and quick side that goes from mixing bowl to oven in less than 10 minutes. It bakes up golden brown and puffy -- perfect for a potluck or holiday gathering.

One 15-ounce can whole corn kernels, drained
One 15-ounce can creamed corn
1 large egg
1 1/2 cups shredded sharp Cheddar
1 cup yellow cornmeal
1 cup sour cream
6 tablespoons unsalted butter, melted
1/4 cup chopped fresh chives
1/4 cup sugar
2 teaspoons baking soda
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Add the whole corn, creamed corn, egg, Cheddar, cornmeal, sour cream, butter, chives, sugar, baking soda, 1 1/2 teaspoons salt and a generous amount of black pepper to a large bowl and stir until well combined.
  • Pour the mixture into a 2-quart baking dish and bake until lightly golden on the outside and set in the middle, 30 to 35 minutes.

This recipe is one I have made for years. I figured it would be in the database and needed the nutritional values, although there is a two corn casserole in the data base it isn't this one. Every where I take this casserole I am asked for the recipe. Green Giant is the only company that makes 17 oz. cans but the smaller 15 something cans work fine.

1/2 cup margarine
3/4 cup green pepper, chopped
1/3 cup onion, chopped
17 ounces whole kernel corn, undrained
17 ounces cream-style corn
3 eggs, well beaten
8 1/2 ounces corn muffin mix
4 ounces cheddar cheese, shredded

Steps:

  • Heat oven to 350 degrees F.
  • Grease 2 quart casserole dish
  • In small skillet, melt margarine.
  • Add green pepper and onion; saute' until tender, (I do this in the microwave) Combine cream style corn, whole kernel corn, eggs and corn muffin mix, blend well.
  • Pour into casserole dish and sprinkle with cheese.
  • Bake 55-65 minutes until firm and set.
  • Let stand 5 minutes before serving.

This is nice "scratch" casserole, inspired by the great James Beard, and slightly modified by yours truly, which can be either offered as a side dish with supper or, served by itself for brunch. It also makes a nice covered dish to take to family reunions, etc. I especially like it because it incorporates no "can of soup" and, it's a particularly good way to get the kids to eat hominy. It also fits the "something different" bill!

24 ounces frozen corn, whole kernel
45 ounces hominy, drained and rinsed, divided
1/2 teaspoon black pepper, freshly milled
1/2 teaspoon salt
12 tablespoons diced green chilies (divided)
12 tablespoons sour cream (divided)
1 1/2 cups monterey jack cheese (shredded, divided)
9 tablespoons butter (softened and divided)
cooking spray
1 teaspoon dried chervil

Steps:

  • Spray a tall-sided casserole dish with cooking spray. Layer in 1/3 of the hominy and then 1/3 of the corn. (NOTE: you can use canned corn -- just drain it but don't rinse it). Sprinkle on all the pepper and salt and then 4 tablespoons of the green chilies. Next, add 4 tablespoons of the sour creme and 1/2 of the shredded cheese. Finally, Dot this layer with 3 tablespoons of the butter.
  • Make a second layer with 1/3 of the hominy, 1/3 of the corn, 4 tablespoons of the chilies, 4 tablespoons of sour creme and 3 tablespoons of the butter, (but no cheese or seasonings).
  • Make a final layer of remaining hominy, corn, chilies, sour creme, cheese, and dotting the cheese on top with the remaining 3 tablespoons of butter. Garnish the top by sprinkling on the chervil.
  • Bake the casserole, uncovered, in a pre-heated 350-degree F. oven for 40 minutes. Allow it to stand for just a few minutes prior to serving.

8 corn tortillas
1 1/2 cups shredded monterey jack cheese
1 cup frozen corn
4 green onions, sliced
2 eggs
1 cup buttermilk
1 (4 ounce) can diced green chilies

Steps:

  • Grease a 2-quart square baking dish.
  • Tear tortillas into bite-size pieces (pizza cutter works well).
  • Arrange HALF the tortillas in the baking dish.
  • Top with HALF of the cheese, HALF of the corn, HALF of the green onions.
  • Repeat layers with remaining tortillas, cheese, corn and onions.
  • Stir together eggs buttermilk, and green chilies.
  • Gently pour over tortilla mixture.
  • Bake uncovered in a 325 degree oven for about 30 minutes or until a knife inserted near the center comes out clean.
  • Serve warm with salsa or picante sauce.

Here is a from-scratch version of the classic corn casserole, a popular holiday side dish in the southeastern United States that is traditionally made using store-bought Jiffy cornbread mix. If you've never had corn casserole before, you're really missing out: It's like an incredibly moist cornbread studded with fresh corn kernels. (Frozen corn can be used in the cold weather months.) Two pounds of corn kernels are bound together with a simple batter of flour, baking powder, cornmeal, Cheddar, eggs, melted butter and sour cream, then poured into a baking pan, topped with more cheese, and baked until bubbly. Fresh rosemary and scallions, untraditional and optional additions, add savory notes that balance out the sweetness of the corn.

6 tablespoons unsalted butter
2 pounds frozen or fresh corn kernels (about 6 1/2 cups)
4 scallions, thinly sliced crosswise (optional)
1 fresh rosemary sprig (optional)
Kosher salt and black pepper
1/2 cup all-purpose flour
1/2 cup fine or coarse yellow cornmeal
2 teaspoons baking powder
1 cup sour cream
2 large eggs
1 1/2 cups freshly grated Cheddar or Parmesan

Steps:

  • Heat the oven to 350 degrees. Add 4 tablespoons butter to a 9-by-13-inch pan or other 3-quart casserole dish and transfer to the oven. Once the butter has melted, about 5 minutes, take the pan out of the oven and let cool.
  • In a medium pot, melt the remaining 2 tablespoons butter over medium-high. Add the corn, scallions and rosemary, if using, 1 teaspoon salt and several grinds of black pepper, and cook, stirring occasionally, until the corn starts to give off some liquid and softens, about 5 minutes. Remove from heat and discard the rosemary sprig.
  • Stir the flour, cornmeal, baking powder and 1 teaspoon salt into the corn mixture. Tilt the baking pan so that the bottom gets coated in the melted butter, then pour the excess butter (do not scrape the dish) into the pot with the corn mixture. Stir to combine.
  • In a small bowl, whisk together the sour cream and eggs with a fork until combined. Add to the corn mixture along with 1/2 cup grated cheese and stir just until combined, taking care not to overmix.
  • Pour the batter into the pan, spread evenly, then sprinkle with the remaining 1 cup of cheese. Bake until the cheese is melted and the casserole is set, 30 to 35 minutes. For a golden top, broil for a few minutes. Serve hot.
