Yield Serves 4

Number Of Ingredients 6

3 medium sweet potatoes or garnet yams, scrubbed (about 3 pounds)
1 Fresno or other red chiles, thinly sliced
1/4 cup honey
4 tablespoons unsalted butter
Kosher salt
2 tablespoons apple cider vinegar

Steps:

  • Preheat oven to 350°F. Poke holes all over sweet potatoes and wrap each in foil. Place on a foil-lined rimmed baking sheet and roast until potatoes are tender, 60-70 minutes (if you have one, use a cake tester to poke right through foil). Unwrap and let sit until cool enough to handle. Increase oven temperature to 450°F. Meanwhile, combine chile, honey, and butter in a small saucepan; season with salt. Bring to a simmer over low heat, stirring to combine. Remove from heat and stir in vinegar.
  • Smash sweet potatoes with your palm, then tear into bite-sized pieces (including skin), the more irregular, the better. Place in a large bowl and add half of hot honey (do not include chile as it will burn); season with salt. Arrange pieces, skin side down, in a single layer on an unlined rimmed baking sheet and roast until browned and crisp around the edges, 20-25 minutes. Drizzle with remaining hot honey with chile.

ROASTED SWEET POTATOES WITH HOT HONEY BROWNED BUTTER

Roasted Sweet Potatoes With Hot Honey Browned Butter image

Doubling down on sweet potatoes' sweetness by adding honey is like adding fuel to the fire, but the nuttiness from the browned butter, heat from the crushed red pepper flakes and bright acidity from the vinegar all work together to bring it back from the brink. This hot honey browned butter is also good on roasted winter squash, over plain oatmeal and - if we are being honest -probably over ice cream. But that's a different conversation. (This recipe is adapted from "Dining In: Highly Cookable Recipes" by Alison Roman.)

Provided by Alison Roman

Categories     vegetables, side dish

Time 1h

Yield 4 servings

Number Of Ingredients 7

4 small to medium sweet potatoes (about 1½ pounds), scrubbed
6 tablespoons unsalted butter (3/4 stick)
2 tablespoons honey
1 tablespoon white wine vinegar or apple cider vinegar
1 teaspoon crushed red pepper flakes
Kosher salt and freshly ground pepper
Flaky sea salt

Steps:

  • Heat the oven to 425 degrees. Poke sweet potatoes all over with a fork and place them all directly on the oven rack. Roast until they are very tender, with bits of sweet potato sugar caramelizing in the spots they've been poked, 50 to 60 minutes.
  • Meanwhile, melt the butter in a small pot over medium heat, swirling the pot just until the butter starts to bubble and brown, about 5 minutes. Add the honey, vinegar and red pepper flakes, swirling to combine (it will bubble up quite a bit), and season with salt and pepper. Remove from heat and set aside.
  • Once the sweet potatoes are out of the oven, slit them down the middle. Warm the browned butter mixture, and pour over the sweet potatoes. (Alternatively, scoop the flesh out of the skins and transfer to a bowl or serving dish, then drizzle with the browned butter sauce.) Generously sprinkle with flaky sea salt.

SAVORY TWICE BAKED SWEET POTATOES

Savory Twice Baked Sweet Potatoes image

I was looking for an easy dinner that didn't involve a trip to the grocery store, and this is what I came up with based on what I had lying around. This is a pretty nice way to prepare a sweet potato, if you aren't in the mood for something overly sweet. I paired half of a potato with a large serving of steamed spinach for a light but satisfying vegetarian dinner.

Categories     Yam/Sweet Potato

Time 50m

Yield 2 stuffed potato halves, 1-2 serving(s)

Number Of Ingredients 8

1 sweet potato
5 -6 white button mushrooms, chopped finely
1 small onion, chopped finely
1 teaspoon olive oil
1/4 teaspoon cayenne pepper
1/4 cup feta cheese
fresh ground pepper
salt

Steps:

  • Preheat oven to 375°F.
  • Wash sweet potato and cut in half lengthwise.
  • Place potato halves face down on a foil-covered greased cookie sheet ( i cover the potato halves in foil for more even cooking).
  • Bake potatoes for about 30 minutes.
  • While the potatoes are baking, saute onions and mushrooms in the olive oil over medium heat until the onions are translucent and the mushrooms give off liquid, about 10 minutes.
  • Take potatoes out of oven, carefully scoop the potato out of the skins and mash in a mixing bowl.
  • Add onions, mushroom, cayenne, feta, salt and pepper to the mashed sweet potatoes, mixing ingredients together.
  • Divide mixture in half and scoop it back into the empty potato skins.
  • Bake the potatoes for another 8-10 minutes on 375, broiling for the last minute or two of cooking time if you'd like to crisp the tops of the potatoes slightly.
