TWICE-BAKED SWEET POTATOES

8 sweet potatoes
3 tablespoons canola oil
1 stick (8 tablespoons) butter
1 cup chopped crisp-cooked bacon
1 cup sour cream
2 cups grated jack cheese
2 teaspoons chili powder
3 green onions, sliced
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Put the potatoes on a baking sheet and rub them with the oil. Bake until soft, about 1 hour. Let cool enough so you can handle them.
  • Slice the butter into pats and add to a large bowl. Add the bacon and sour cream.
  • Cut each potato in half lengthwise and scrape out the insides into the bowl, being careful not to tear the skins. Leave a small rim of potato intact for support. Lay the hollowed-out skins on a baking sheet.
  • Smash the potatoes into the butter, bacon and sour cream. Add the cheese, chili powder, green onions and some salt and pepper and mash until smooth. Spoon the filling into the potato skins.
  • If baking right away, lower the oven temperature to 350 degrees F. Bake until the cheese is melted and the tops are brown, about 15 minutes.
  • If cooking later, cover the stuffed potato skins with plastic wrap and refrigerate. Bake at 350 degrees F until the cheese is melted and the tops are brown, 15 to 20 minutes.

5 tablespoons light brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Pinch cayenne pepper
1/2 stick unsalted butter
Vegetable oil, for greasing roasting tray
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 375 degrees F.
  • Lightly scrub the sweet potatoes under cold running water. Place the potatoes on a roasting tray and bake until tender, 1 hour 15 minutes. Remove from the oven and allow the potatoes to cool slightly before cutting off the top third of the potatoes lengthwise. Scoop out the flesh using a large spoon (leave enough on the base so the skin holds its shape) and reserve bases.
  • Add the potato flesh, 2 tablespoons of the sugar, cinnamon, nutmeg, cayenne pepper and butter to a food processor. Process until the ingredients are completely combined and the puree is smooth. Season with salt and pepper. Drizzle a roasting tray with a little oil. Set the potato skin bases upright on the tray and fill with the mixture.
  • Combine the remaining 3 tablespoons sugar and pecans in a small bowl. Sprinkle the top of each stuffed sweet potato with the sugar-pecan topping. Bake 10 minutes. Finish the potatoes under the broiler for the top to brown, 1 minute, if desired.

3 small to medium sweet potatoes
2 links sweet Italian sausage, crumbled
1 shallot, minced
1/4 cup pine nuts
1/4 cup dark raisins
2 tablespoons fresh sage, minced
1/4 teaspoon ground nutmeg
3 ounces ricotta
1 large egg, lightly beaten
2 ounces Parmesan, grated
Freshly ground black pepper
Chopped fresh herbs for garnish, such as parsley, optional

Steps:

  • Preheat the oven to 375 degrees F.
  • Pierce the sweet potatoes all over with a fork. Bake on a sheet tray until tender, about 1 hour to 1 hour and 20 minutes. Allow the sweet potatoes to cool slightly, then cut them in half and scoop the flesh into a bowl, keeping the skins intact. Set aside the skins on a sheet tray.
  • Heat a medium saute pan over medium heat. Add the sausage and cook until browned, about 4 minutes, then add the shallots and allow to soften for about 1 minute. Add the pine nuts and stir to combine, allowing them to be coated in the fat. Stir in the raisins, sage and nutmeg, then remove from the heat. Transfer the mixture to the bowl with the sweet potato flesh and allow to cool completely in the refrigerator, about 1 hour.
  • Meanwhile, place the ricotta in a strainer over a bowl and allow to strain for 15 minutes.
  • Preheat the oven to 375 degrees F.
  • Mix the egg, ricotta, Parmesan and pepper to taste into the filling mixture, being sure to keep the mixture chunky.
  • Spoon the mixture into the skins. Bake until the tops are crispy and golden, 35 to 40 minutes. Garnish with fresh herbs if desired.

I found some sweet potatoes in my fridge that I hadn't used and decided to try it. Everyone at work flipped over them! They're great with pork chops or steak, too!

6 sweet potatoes
2 tablespoons salad oil
1 (8 ounce) package cream cheese, softened
⅓ cup brown sugar
2 tablespoons margarine
1 tablespoon vanilla extract
¾ teaspoon salt
½ teaspoon pepper
⅓ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Rub sweet potato skins with salad oil. Wrap potatoes in aluminum foil and bake in preheated oven for 1 hour, or until soft.
  • Meanwhile, in a large bowl combine cream cheese, brown sugar, margarine, vanilla, salt and pepper.

The original also called for 4 small sweet potatoes, which I've never found; the ones I get are a pound or more so I've adjusted the cooking time to reflect this. If you can find small ones, cut back the first baking time to 30 minutes.

2 large sweet potatoes (I like the Garnet variety, with dark skins and orange flesh)
1/2 lb sweet Italian sausage, casings removed
1 tablespoon butter
1 large leek, chopped (white part only)
1 teaspoon fresh sage, chopped
1/4 teaspoon fresh thyme, chopped
1/2 cup sour cream
1/2 teaspoon kosher salt (to taste)
1/4 cup gruyere cheese, grated

Steps:

  • Heat the oven to 375 degrees Fahrenheit.
  • Prick the sweet potatoes with the tip of a knife; place on a baking sheet.
  • Bake for 1 hour, or until completely tender.
  • In a medium skillet over medium high heat, crumble the sausage.
  • Cook until all trace of pink is gone. It doesn't need to be brown, just cooked through.
  • Drain any excess fat and set aside.
  • In the same pan, melt the butter over medium low heat.
  • Add the leeks, sage, and thyme.
  • Cook until the leeks are soft and starting to turn golden.
  • Remove the leeks from the pan and set aside with the sausage.
  • Cut the sweet potatoes in half lengthwise.
  • Carefully scoop the flesh into a mixing bowl, leaving 1/8 inch of flesh around the edge, so the skin will not fall apart when you fill it.
  • Place the empty skins on a baking sheet.
  • Preheat broiler, placing the rack about 6 inches from the heat.
  • Mash the sweet potato flesh until smooth; add the sour cream and kosher salt, mixing to combine.
  • Add the sausage and leeks and mix well.
  • Taste for seasoning, and add more salt if needed.
  • Scoop the sweet potato mixture back into the skins; top with the grated cheese.
  • Place in the oven and broil until the cheese starts to brown, about 4 to 5 minutes. Remove from oven.
  • Cut each potato in half to make two servings. (If you used small potaotes, you won't need to do this).

4 tablespoons butter, room temperature
4 ounces cream cheese, room temperature

Steps:

  • Preheat oven to 375 degrees F.

2 tablespoons olive oil
2 medium leeks, white and light green parts sliced lengthwise and thinly sliced crosswise
Salt and freshly ground pepper
1 tablespoon fresh thyme leaves
1/2 cup heavy cream
1 large sweet potato (about 1 pound), peeled and sliced into 1/2-inch-thick rounds
1 large or 2 medium red skinned apples, such as Gala or Honeycrisp (about 12 ounces), halved, cored and cut into 1/4-inch slices
1/4 cup freshly grated Parmesan

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large skillet, heat 1 tablespoon of the oil over medium heat. Add the leeks and 2 tablespoons water; season with salt and pepper. Cook, stirring occasionally, until tender but not browned, about 8 minutes. Add the thyme and then the cream and cook until the liquid thickens, about 2 minutes; set aside.
  • In a 2-quart shallow baking dish, arrange the sweet potato in overlapping layers. Spread the leek mixture evenly over the potatoes. Arrange the apples in an overlapping layer on the leeks. Brush the apples with the remaining tablespoon of oil and sprinkle with the Parmesan. Cover tightly with aluminum foil and bake 40 minutes. Uncover and continue to bake until the Parmesan is golden brown and melted, about 20 minutes more. The tip of a paring knife should easily pierce the apples and potatoes. Let cool 10 minutes before serving.

2 red onions, peeled and quartered
2 corn cobs, cut into 4-6 pieces
1 mango, stoned and chopped
2 large sweet potatoes, cut into wedges
8-12 pork sausages
2 tsp ground cumin
2 tsp ground paprika
2 tsp fennel seeds
2 tsp dried oregano
2 tbsp barbecue sauce
2 tbsp vegetable, rapeseed or olive oil
chopped coriander
chopped chillies (for the grown-ups)

Steps:

  • Heat the oven to 200C/180C fan/ gas 6. Mix together the ingredients for the spiced sauce in a bowl. Tip the onion quarters, corn, mango, sweet potatoes and sausages into a roasting tin, then pour over the sauce and stir to coat. Add a pinch each of salt and pepper.
  • Bake for 45-50 mins, giving it a toss halfway through, until the sausages are cooked through and the sweet potato is soft. If freezing, leave to cool completely first. Can be frozen for up to one month. Defrost thoroughly before reheating in the oven at 200C/180C fan/gas 6 for 35-40 mins. Serve sprinkled with the coriander and chilli, if you like.

This recipe is different than others posted here. It is a fancy and tasty addition to any meal, especially great for the holidays. It comes together more quickly than others because it starts in the microwave.

6 small sweet potatoes (5 to 6 oz. each)
2 tablespoons flour
2 tablespoons packed brown sugar
2 tablespoons butter or 2 tablespoons margarine, softened
1/4 cup chopped pecans
2 tablespoons butter or 2 tablespoons margarine, softened
2 tablespoons milk
1 teaspoon pumpkin pie spice
1/4 teaspoon salt

Steps:

  • Pierce each potato twice with point of sharp knife to vent steam. Place in single layer in microwave oven. Microwave on High 5 minutes. If potatoes are not cooked through, turn potatoes over and continue microwaving 1 minue at a time until softened. Remove any fully cooked potatoes from microwave while cooking remaining potatoes. Cool potatoes 10 minutes.
  • Meanwhile, in small bowl, mix flour, brown sugar, 2 tablespoons butter and the pecans; set aside.
  • Heat oven to 350. Cut off top 1/3 of each potato. Using spoon, scoop flesh into large bowl, being careful not to tear potato skins; discard potato tops. Add 2 tablespoons butter, milk, pumpkin pie spice and salt to potatoes. Mash potato mixture with potato masher or beat with electric mixer on medium speed until creamy. Spoon potato mixture back into skins. Place filled potatoes in 13X9 inch pan. (Potatoes can be covered and refrigerated at this point up to 8 hours.).
  • Sprinkle pecan mixture over tops of potatoes. Bake uncovered 30 to 35 minutes or until topping is brown and potatoes are hot. (If filled potatoes were refrigerated, remove from refrigerator 30 minutes before ready to bake; top and bake as directed.).

1/3 cup sugar
1 tablespoon white sesame seeds

2 teaspoons fresh ginger, peeled and finely grated

Steps:

  • Line a rimmed baking sheet with a silicone baking mat or parchment paper.
  • Cook bacon in a medium nonstick skillet over medium heat until most of the fat is rendered and bacon is starting to crisp. Transfer bacon to a sieve set over a small bowl; reserve drippings.
  • Return bacon, 1 Tbsp. drippings, sugar, and sesame seeds to same skillet. Cook over medium heat, stirring frequently, until sugar turns the color of milk chocolate, about 5 minutes (do not burn).   • Bake potatoes until the tops are lightly puffed and golden brown, 30-35 minutes (potatoes will take longer if they've been chilled). Top potatoes with bacon-sesame brittle and scallions.

  • Preheat the oven to 375. Line a baking sheet with aluminum foil or parchment. Wash and scrub the sweet potatoes and pierce them in a few places with a small knife or fork. Place on the baking sheet and roast for 40-60 minutes (depending on the size). Remove from oven and set aside until cool enough to handle.
  • Add the oil to a skillet over medium high heat. Add the sausage and reduce the heat to medium. Brown, breaking up the sausage into bits, about 5 or 6 minutes. Remove from pan. You can either pour off most of the fat and add the butter, or just leave the fat in like I did and omit the butter. Add the leeks, thyme, sage, and salt to the pan and saute until golden about 10 minutes.
  • Cut the sweet potatoes in half and gently scoop out the flesh leaving about 1/4 inch around the skin. Place the scooped out flesh into a medium bowl and mash it a bit with a fork or spoon. Stir in the sour cream and season with salt. Add the sausage and leeks and stir to combine. Spoon the filling carefully back into the sweet potato shells, mounding it up. Place them back on a lined sheet pan and top with the grated cheese.
