2 pounds sweet potatoes (about 5 small), peeled and cut into 1/2-inch pieces
2 pounds russet potatoes (about 7 small), peeled and cut into 1/2-inch pieces
Coarse salt and freshly ground pepper
3/4 cup whole milk, warmed
3/4 cup heavy cream, warmed
1 1/2 sticks unsalted butter, melted
2 tablespoons all-purpose flour
Pinch of cayenne pepper
1 leek, white and light-green parts only, cut into 1/4-inch rounds, washed well, and dried (about 2 cups)
Safflower oil, for frying

Steps:

  • Preheat oven to 425 degrees. Cover sweet potatoes and russet potatoes each with 1 inch water in 2 separate medium saucepans. Bring to a boil, salt generously, and boil until fork-tender, about 8 minutes. Drain and return potatoes to respective pans.
  • In a bowl, combine milk, cream, and butter. Divide milk mixture between saucepans. Mash potatoes until smooth; season with salt and pepper.
  • Spread mashed sweet potatoes evenly in the bottom of a shallow 2-quart baking dish. Top with mashed russet potatoes; spread evenly to edges. Bake until golden, about 25 minutes.
  • Meanwhile, in a bowl, combine flour and cayenne. Add leeks; toss to coat. In a medium saucepan, heat 2 inches oil over medium-high heat until a thermometer registers 350 degrees. Working in batches, add leeks and cook, turning, until crisp and light golden around edges, about 1 minute. With a slotted spoon, transfer to paper towels to drain. Season with salt.
  • Sprinkle fried leeks over potatoes; serve.

1 shallot, minced
1/2 cup sour cream
2 tablespoons minced fresh chives, plus more for topping
2 cups grated white cheddar cheese (about 8 ounces)
Kosher salt and freshly cracked black pepper

Steps:

  • Preheat the oven to 425 degrees F. Pierce the potatoes with a fork or paring knife a few times on all sides. Place on a baking sheet and bake until fork-tender, 60 to 80 minutes. Let cool slightly (but keep the oven on).
  • Meanwhile, melt the butter in a small skillet over medium heat. Add the garlic and shallot and cook until softened but not browned, about 2 minutes. Set aside.
  • Once the potatoes are cool enough to handle, cut them in half lengthwise. Using a spoon or melon baller, scoop out the flesh, leaving a 1/4-inch rim to preserve the shape of the shells.
  • In a large bowl, mash the potato insides until mostly smooth. Add the butter mixture, sour cream, chives and 1 cup cheese and mix together. Season with salt and pepper to taste.
  • Spoon the mixture evenly into the 8 potato shells. Top with the remaining 1 cup cheese. Bake until the cheese is golden brown and bubbly, 25 to 30 minutes. Top with more chives. Serve warm.

4 large baking potatoes 2 medium sized leeks 1 1/2 TBS butter salt and black pepper to taste 124g grated four cheese blend, plus a bit more for sprinkling (1 generous cup)

Steps:

  • Preheat the oven to 200*C/400*F/ gas mark 6. Scrub the potatoes clean and prick with a fork. Place into the oven directly onto the oven rack. Bake for about 1 1/2 hours, until the potatoes give a bit when gently squeezed. Remove and set aside to cool while you cook the leeks. Keep the oven on. Trim the dark green parts from the leeks and discard, or save to use in making stocks. Cut the remaining stalk in half lengthwise and rinse well in cold water to remove any grit or dirt. Slice thinly. Melt the butter in a large skillet. Add the leeks and saute gently for about 5 minutes until softened. Set aside. Cut the potatoes in half lengthwise. Carefully scoop out the flesh into a bowl, leaving a thin shell. (I find a teaspoon works beautifully for this.) Mash together with the softened leeks and some salt and black pepper to taste. Stir in the cheese. Mix well together. Place the potato halves on a baking sheet and then stuff lightly with the potato/leek/cheese mixture. Try not to compact it. Leave it loose, you get more crunchy bits that way. Sprinkle with a bit more cheese. A pinch works well for each. Return to the oven and bake for a further 10 minutes, until heated through and golden, with some crispy bits.

3 tablespoons canola oil
2 sticks salted butter
1 cup bacon bits (fry your own!)
1 cup sour cream
1 cup Cheddar or Jack cheese (or a mix of both), plus more for topping
1 cup whole milk
2 teaspoons seasoned salt
3 green onions, sliced
Freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Place the potatoes on a baking sheet. Rub them with the canola oil and bake for 1 hour, making sure they're sufficiently cooked through.
  • Slice the butter into pats. Place in a large mixing bowl and add the bacon bits and sour cream. Remove the potatoes from the oven. Lower the heat to 350 degrees F.
  • With a sharp knife, cut each potato in half lengthwise. Scrape out the insides into the mixing bowl, being careful not to tear the shell. Leave a small rim of potato intact for support. Lay the hollowed out potato shells on a baking sheet.
  • Smash the potatoes into the butter, bacon and sour cream. Add the cheese, milk, seasoned salt, green onions and black pepper to taste and mix together well. (IMPORTANT: If you plan to freeze the twice-baked potatoes, do NOT add the green onions.)
  • Fill the potato shells with the filling. I like to fill the shells so they look abundant and heaping. Top each potato with a little more grated cheese and pop 'em in the oven until the potato is warmed through, 15 to 20 minutes.

These are easy to cook and assemble and can be frozen to be used as needed. I use large potatoes, so 1/2 stuffed potato shell is one serving.

1/4 cup milk

Steps:

  • Bake potatoes in a 375 degree oven 1 to 1 1/2 hours until done.
  • When potatoes are done let them cool 10-15 minutes.

  • Using a spoon carefully scoop out the potato, leaving a little on skin so they don't break. Save the skins.

But if you dream of other flavor combinations, like bacon, scallions and sour cream; blue cheese and chives; or cauliflower and Parmesan, just follow the recipe below and stir in any additions (reserving some for garnish) after the dairy in Step 3. Shower the top with more grated cheese if you like, then bake, garnish and dig in.

  • Position racks in the top and middle of the oven, and heat oven to 400 degrees. Take the butter out of the refrigerator to soften. Scrub the potatoes clean and pat them dry.   • Mash the potato flesh with a fork or potato masher. Add the butter, and stir until smooth (try not to overwork). Add the milk, sour cream and cheese and stir to combine. (If you want the filling softer, add more milk.) Season generously with salt and pepper. Stir in the chives, if using.
  • Mound each potato skin with a quarter of the filling. Bake the potatoes until warmed through, about 10 minutes. Serve immediately.

I love the combination of leeks and potatoes, and I love twice-baked potatoes, so this recipe is ideal for me. This is a great presentation, with leeks in the potatoes and garnished with frizzled leeks as well. To make ahead, you can fill the potato skins and chill; then bake for 30 minutes.

8 baking potatoes
3 leeks, white and light green parts only
3 tablespoons butter
1 cup milk
1 (8 ounce) container cream cheese with chives
1/2 teaspoon salt

Steps:

  • Heat oven to 400 degrees. Pierce potatoes with fork; bake until tender, about 1 hour.
  • Chop 2 leeks. Cut remaining leeks into thin strips about 2" long. In nonstick skillet, melt 1 T. butter over medium heat. Add chopped leeks; cook, stirirng, 5 minutes.
  • Horizontally cut top 1/3 from each potato. Scoop potato from skins, leaving 1/4"-thick shells. Heat milk and remaining butter until hot; add to potatoes with cheese, salt and pepper. Mash; stir in cooked leeks. Pipe or spoon mixture into potato shells. On baking sheet, bake until golden, 20-25 minutes.
  • In nonstick skillet, heat 1/4" oil over medium heat. Add sliced leeks; cook, stirring, 2 minutes. Drain on paper towels. Top potatoes with leeks and, if desired, sour cream.

These potatoes still taste buttery and rich but are much lighter than the full fat version by using a small amount of butter to saute sweet leeks and some chive flavored reduced fat cream cheese. This is a great side dish for any time of year and for special gatherings, like Thanksgiving. Simply double the recipe, or halve the potatoes after the first bake and the dish serves more.

4 medium russet potatoes, about 6 ounces each
1 teaspoon vegetable oil
Kosher salt
1 tablespoon unsalted butter
2 leeks, (white and light green parts), halved lengthwise and thinly sliced

2 cloves garlic, minced
2 teaspoons freshly chopped thyme
4 ounces 1/3-less fat chive-and-onion flavored cream cheese
1/2 cup skim milk
1 tablespoon chopped fresh parsley, plus extra for garnish

Steps:

  • Preheat the oven to 375 degrees F. Rub the potatoes with the oil and season generously with kosher salt. Place on a baking sheet and bake until the potatoes are very tender on the inside and crisp on the outside, about 1 hour, 15 minutes. Let stand 5 minutes.
  • Meanwhile, heat the butter in a large nonstick skillet set over medium heat. Add the leeks and season with salt and pepper, cook until soft, about 6 to 8 minutes. Add the garlic and thyme and cook until fragrant, 1 minute. Cool slightly.
  • Cut lengthwise, opening down the center of each potato, stopping about 1-inch from each end. Scoop out the insides into a large bowl, keeping about 1/4-inch shell of potato next to the skin.
  • Add the leek mixture, cream cheese and milk to the potato and mash well with a fork until combined but slightly chunky. Stir in the chopped parsley. Spoon the filling back into the potato shells, about 1/2 cup of filling for each potato and place back on the baking sheet. These potatoes are my own riff on twice baked. Leeks are a classic pairing with potatoes, and the ricotta lends a fluffy creaminess. These are great with steak or just about anything else.

6 large russet potatoes or 6 large yukon gold potatoes
2 leeks
2 garlic cloves
1/3 cup ricotta cheese
4 tablespoons butter
1/2 cup half-and-half cream
3/4 cup shredded pizza cheese (or any white cheese such as provolone, mozzarella, parmesan, etc.)

Steps:

  • Bake the potatoes at 400 degrees until done. You can start them in the microwave to save time but finish them in the oven. Let them cool. Slice in half. Scoop the potato from the skins leaving a thin layer of potato on the skin. Run the potato through a ricer if you have one or mash the potatoes until smooth.
  • Cut off the root side and dark green part of the leeks. Slice in half lengthwise and wash thoroughly. Cut lengthwise again then slice. Saute the leeks in the butter on medium low heat. Add the garlic at the last 2 minutes. Remove brown bits if necessary.
  • Combine the leeks with the potato and remaining ingredients. Fill the skins with the mixture. You may not need all of the skins. These can be refrigerated several hours in advance.
  • Bake in a 400 degree oven for 30-40 minutes until golden brown. Lightly broil to brown if necessary.

The original also called for 4 small sweet potatoes, which I've never found; the ones I get are a pound or more so I've adjusted the cooking time to reflect this. If you can find small ones, cut back the first baking time to 30 minutes.

2 large sweet potatoes (I like the Garnet variety, with dark skins and orange flesh)
1/2 lb sweet Italian sausage, casings removed
1 tablespoon butter
1 large leek, chopped (white part only)
1 teaspoon fresh sage, chopped
1/4 teaspoon fresh thyme, chopped
1/2 cup sour cream
1/2 teaspoon kosher salt (to taste)
1/4 cup gruyere cheese, grated

Steps:

  • Heat the oven to 375 degrees Fahrenheit.
  • Prick the sweet potatoes with the tip of a knife; place on a baking sheet.
  • Bake for 1 hour, or until completely tender.
  • In a medium skillet over medium high heat, crumble the sausage.
  • Cook until all trace of pink is gone. It doesn't need to be brown, just cooked through.
  • Drain any excess fat and set aside.
  • In the same pan, melt the butter over medium low heat.
  • Add the leeks, sage, and thyme.
  • Cook until the leeks are soft and starting to turn golden.
  • Remove the leeks from the pan and set aside with the sausage.
  • Cut the sweet potatoes in half lengthwise.
  • Carefully scoop the flesh into a mixing bowl, leaving 1/8 inch of flesh around the edge, so the skin will not fall apart when you fill it.
  • Place the empty skins on a baking sheet.
  • Preheat broiler, placing the rack about 6 inches from the heat.
  • Mash the sweet potato flesh until smooth; add the sour cream and kosher salt, mixing to combine.
  • Add the sausage and leeks and mix well.
  • Taste for seasoning, and add more salt if needed.
  • Scoop the sweet potato mixture back into the skins; top with the grated cheese.
  • Place in the oven and broil until the cheese starts to brown, about 4 to 5 minutes. Remove from oven.
  • Cut each potato in half to make two servings. (If you used small potaotes, you won't need to do this).

1 chopped onion
1/2 cup butter
1/8 teaspoon red pepper

  • Scrub potatoes, dry and pierce.
  • Bake at 450 degrees for about 1 hour on rack w/o foil (or cook in the microwave).

  • Scoop out the pulp leaving shells intact.
  • Mash potatoes; add red pepper, salt, black pepper, butter, onion and cheese.

Try to avoid tearing or ripping your skins. Add the scooped out interior to the pan/bowl containing your sauteed leeks.
  • Make your filling: Mash together your leeks, potato innards and the remaining 1 tbsp of butter. Season with salt and pepper to taste.
