2 large portobello mushrooms, coarsely chopped
1 medium onion, chopped
3 garlic cloves, minced
2 tablespoons olive oil
1/2 cup white wine or vegetable broth
1 can (28 ounces) diced tomatoes, undrained
2 cups chopped fresh kale
1 bay leaf
1 teaspoon dried thyme
1/2 teaspoon dried basil
1/2 teaspoon dried rosemary, crushed
1/4 teaspoon salt
1/4 teaspoon pepper
2 cans (15 ounces each) cannellini beans, rinsed and drained

Steps:

  • In a large skillet, saute the mushrooms, onion and garlic in oil until tender. Add the wine. Bring to a boil; cook until liquid is reduced by half. Stir in the tomatoes, kale and seasonings. Bring to a boil. Reduce heat; cover and simmer for 8-10 minutes., Add beans; heat through. Discard bay leaf.

1 teaspoon olive oil
3 -4 cloves garlic, minced
1 medium white onions or 1 medium yellow onion, thinly sliced
1 (14 1/2 ounce) can low sodium beef broth or 1 (14 1/2 ounce) can low sodium chicken broth
1 cup water
1 teaspoon chopped fresh rosemary
1 teaspoon dried rosemary, crushed
1/4 teaspoon crushed red pepper flakes (optional)
1 (9 ounce) package refrigerated cheese ravioli or 1 (9 ounce) package refrigerated chicken ravioli
1 (10 ounce) package Baby Spinach, coarsely chopped
1 (14 ounce) can chopped tomatoes (can use italian recipe-ready version)
grated romano cheese (optional) or grated asiago cheese (optional)

Steps:

  • Heat oil in large saucepan over medium heat.
  • Add garlic and onion, saute 5 minutes.
  • Add broth, water, rosemary and red pepper and bring to a boil.
  • Add ravioli and undrained tomatoes, bring to boil again.
  • Cover, reduce heat and simmer for 5 minutes.
  • Add spinach, and cook another 3 minutes or until ravioli is tender.
  • Serve with grated cheese.

1 tablespoon olive oil
2 cups cubed eggplant (1/2 inch)
1 can (14-1/2 ounces) Italian diced tomatoes, undrained
1 can (14-1/2 ounces) reduced-sodium chicken broth
1 medium zucchini, halved lengthwise and cut into 1/2-inch slices
1 package (9 ounces) refrigerated cheese ravioli
1 can (15 ounces) cannellini beans, rinsed and drained
Shredded Parmesan cheese
Thinly sliced fresh basil

Steps:

  • In a large skillet, heat oil over medium heat; saute eggplant until lightly browned, 2-3 minutes., Stir in tomatoes, broth and zucchini; bring to a boil. Add ravioli; cook, uncovered, over medium heat until ravioli are tender, 7-9 minutes, stirring occasionally. Stir in beans; heat through. Sprinkle with cheese and basil.

1 (9 oz.) package refrigerated chicken/cheese filled ravioli
1/2 Tbsp. crushed rosemary
1/4 cup grated asiago cheese

Steps:

  • 1. Heat oil over medium heat. Add leek and garlic; cook for 5 minutes, stirring. Stir in beef broth, water and red pepper. Bring to boil. 2. Stir in broccoli, tomatoes, ravioli, and rosemary. Return to boil; reduce heat, simmer, covered, for 7-8 minutes. 3. Garnish with asigo after ladled into bowls.

This slow cooker stew is so easy to make, especially on busy days that I know I would not normally have time to cook a nice meal. Excellent with a slice of italian bread.

2 c sliced carrots
1 c chopped onions
2 can(s) 14.5 oz each of chicken broth
2 can(s) 14.5 oz each of italian style diced tomatoes, undrained
1 can(s) 19 oz of cannellini beans, drained
2 tsp dried basil
1 pkg 9 oz of refrigerated italian sausage or cheese filled ravioli

Steps:

  • 1. In a 3 1/4 to 4 quart slow cooker, combine all ingredients except ravioli, mix well. Cover, cook on low setting for 6 hours or until vegetables are tender.
  • 2. At serving time, increase heat to high setting. Add ravioli, cook an additional 8 minutes or until ravioli are tender. Sometimes I will buy a package of the sausage and cheese ravioli and mix half of each into the stew.
