Steps:
- Toast pecans at 300 degrees on a cookie sheet for 5 to 6 minutes until fragrant. Let cool.
- Line 2 large cookie sheets with parchment paper and spray lightly with non stick cooking spray.
- Arrange the pecans on the sheet in small groups of 3.
- To make the caramel, melt butter in a medium sized sauce pan.
- Add brown sugar, corn syrup, 7 ounces sweetened condensed milk.
- Cook and stir over medium high heat until it reaches 235 degrees on your candy thermometer or the soft ball stage. (Clings together well when you drop 1/2 teaspoon of caramel in cold water).
- Then remove the caramel from heat and stir in vanilla. Carefully spoon caramel over each nut cluster covering all the nuts.
- For the chocolate topping melt the chocolate chips in a microwave safe bowl or big glass measuring cup. Heat for 30 seconds at a time stirring after each interval until all melted and smooth.
- Then add in 1/2 teaspoon shortening to the melted chocolate chips. Stir all together until its blended in.
- Spoon the melted chocolate over the caramel and spread around with the back of a spoon.
- Once they set up you can eat them or store them in an airtight container.
- Great for gift giving and holiday parties.

- Freeze 15 min. or until caramel sauce is firm.
- Melt chocolate as directed on package. Dip nut clusters, 1 at a time, into chocolate, turning to completely coat nuts. Return to baking sheet. Refrigerate 15 min. or until chocolate is firm.

- Lay the pecans out on the pans, forming turtles. Use two pecan halves for the body, and half of one (cut the long way) for the head. (See blog post for more details.)
- Melt the caramel and half and half in microwave, stirring every 45 seconds, until melted. I use 50% power. Spoon about a teaspoon in the center of each little turtle. This gets sticky, so you may need another spoon (or your finger) to scoop the caramel off. Refrigerate until set.
- Melt the chocolate in the microwave, at 50% power. This should only take a minute or so. Spoon a mound of chocolate over each mound of caramel. Sprinkle lightly with kosher salt, and return trays to the refrigerator until set.

- Place pecans in a single layer on a baking sheet. Bake at 350° for about 10 minutes or till lightly browned and fragrant. Let cool. Arrange in clusters of 3-4 on silicone liners or parchment paper.
- Combine butter, brown sugar, corn syrup, and salt in a 6 quart pot. Bring to a boil over medium heat. Add the sweetened condensed milk and vanilla.
- Continue cooking and stirring till mixture reaches 235-240 degrees. I like to use the ice water test, it's more accurate. Drop a small spoonful of the hot caramel into a bowl of ice water. When you take it out, you should be able to roll it into a ball. Then it's done.
- Quickly spoon the caramel over the pecan clusters, making sure caramel is touching each of the pecans. Let sit to harden.

- Spread the pecans on a baking sheet and toast for 10 minutes, flipping halfway through. Remove from the oven and allow to cool completely.
- With a sharp knife, roughly chop the pecans reserving 15 halves to top the turtles. No need to be precise with the chopping, we are just looking for small pieces. Fifthteen halves will make for half the batch being pecan topped and the other half being sea salt topped.
- On a baking sheet lined with parchment paper or a silicone baking liner, make little piles of chopped pecans (about 1 tablespoon each).
