TURNIPS BRAISED IN BEEF BROTH
I made this at Thanksgiving and everyone loved it. It came from a north Ga. newspaper I subscribe to. The recipe is different from the way I normally cook rudabagas and I wasn't sure I would like it when I read it. But I love to cook and I love to eat even better so, I tried it. Loved it.. thought I'd share with you guys. Try it...

Steps:
- 1. Bring a large pot of water to a boil, add the turnips and cook for 5 minutes. Drain and set aside.
- 2. Again in a large pot, melt the butter over a medium flame. Add the diced bacon and cook till very lightly browned. Add the onions, reduce the heat, and cook over a low flame until the onions are soft but not brown. Add the flour and cook, stirring, for a couple of minutes.
- 3. Stir in the turnips, broth, sugar, sage, pepper. Cover and simmer slowly for about half an hour, or until the turnips are tender. Every 10 min. or so give it a stir to make sure the mixture is cooking evenly.
- 4. Taste for seasoning. You might need a little bit of salt, or you might not, depending on the beef broth and the bacon you used.
BRAISED BEEF WITH RADISH OR TURNIPS
Beef is slowly braised in a rich liquid flavored with soy sauce and other seasonings in this recipe from Eastern China.This is a basic recipe for Braised Beef - feel free to add a few whole cloves of star anise or other seasonings if you have them, or to substitute 1 cup of the water with beef broth if desired.

Steps:
- Cut the beef into cubes about 1 - 1 1/2 inch thick. Peel the radish or turnips and cut into cubes about the same size. (If using regular radishes, peel and thinly slice).
- Combine the dark soy sauce, rice wine or sherry and green onion in a small bowl. Set aside.
- Heat 1 tablespoon oil in large pot on medium heat. Add the ginger and garlic and then the beef. Cook for 4 - 5 minutes to brown the beef, turning it over at least once.
- Stir in the soy sauce mixture and allow to cook for a minute. Add the water and bring to a boil. (Add the pepper at this time if using). Turn down the heat, cover, and simmer for 1 hour (in simmering the temperature is just below the boiling point).
- Add the radish and stir in the sugar. Simmer, uncovered, for 20 more minutes. Taste and adjust seasoning, add more pepper and/or salt if desired.

- Add the butter to a large skillet set over medium-high heat. Add the turnips to the pan and cook until slightly browned and just tender, about 10 minutes. Add the greens and stock, and simmer until the turnips are cooked through and greens are tender, 10 to 12 minutes. Stir in the vinegar and season with salt and pepper to serve.

- Put the turnips, chicken stock, 1/2 tablespoon of the butter, sugar and 1/2 teaspoon salt in a medium skillet. Bring to a boil over medium-high heat. Reduce the heat to a bare simmer and cook, covered, until the turnips are just tender, about 10 minutes. With a slotted spoon, transfer the turnips to a bowl.
- Increase the heat to medium high and boil the remaining chicken stock until it reduces to 2 tablespoons, about 7 minutes. Off the heat, return the turnips to the skillet. Add the remaining tablespoon butter and the tarragon; stir until the butter is melted and the turnips are well coated. Garnish with additional chopped tarragon.
CHINESE-STYLE BRAISED BEEF WITH TURNIPS

- In a 1 1/2-quart microwave-safe dish stir together the water, the soy sauce, the Sherry, the gingerroot, the cinnamon, the sugar, the salt, and the aniseed, add the chuck, spreading it evenly, and microwave the mixture, covered, at high power (100%) for 20 minutes. Stir in the turnips and microwave the mixture, covered, at high power for 15 minutes. Stir the cornstarch mixture, stir it into the stew, and microwave the stew, covered, at high power for 2 minutes. Sprinkle the stew with the coriander and serve it with the rice.
MY CHICKEN BROTH-BRAISED BABY TURNIPS
These small turnips are perfect with duck or roast chicken.

- Peel the turnips and put them in a large bowl with the sugar and pinch of fine salt. Toss to coat the turnips thoroughly.
- In a large pot, melt the butter. When it is blond and foamy, add the turnips to the pot in a single layer and brown on all sides. When they are golden brown, add a third of the chicken broth and cook, covered, over low heat until the broth has been completely absorbed. Repeat a second and then a third time: When this is done, the turnips are cooked. (Turnips should never be left dry in the pot. If the broth reduces too quickly, add a bit of water when necessary.)
- Drizzle with a few spoons of chicken jus or olive oil and bring to a simmer. When it begins to bubble, sprinkle with parsley and serve immediately.
BEEF BROTH BRAISED BEEF STEW
Nothing compares to a simmering beef stew to warm up the family on a chilly day. Atlantic Canadians know a thing or two about using stew meats or tougher cuts of beef, and braising is the perfect way to do so.

- I like to use a Dutch oven to make the stew, but a good sized pot with a thick bottom will do the trick.
- In a Dutch oven, over medium high heat add the oil and garlic, once it starts to brown the oil will be hot enough to add the beef. Remove the meat, after browning on all sides, and place to the side; add butter and allow to melt.
- Sauté the onions, carrots and celery until soft, add the Dijon mustard, salt, pepper, thyme and red wine.
- Deglaze the pot making sure to get all the browned bits stuck to the bottom, these add flavor. Add beef, beef broth and bay leaves.
- Cover and bring to a boil for 5 minutes. Place in a 325F oven for 30 minutes, add potatoes, carrots and turnips. Gently incorporate into the stew, return to the oven for another 2 hours. Stir every 30 minutes.
- If time permits, make the day before, letting you stew sit overnight, it will enhance the flavors.
- If you do not use red wine, add 2 cups extra broth.

- Place the brisket in a shallow pan or container that will hold it snugly. Mix the wine, brown sugar, garlic, thyme and bay leaves and pour over the meat. Wrap with plastic wrap and refrigerate for 24 hours, turning the meat once.
- Heat the oven to 325 degrees. Lift the brisket from the pan and scrape off the garlic and herbs, adding them to the marinade. Save the marinade. Pat the meat dry and season it with three-fourths-teaspoon salt and one-half-teaspoon freshly ground black pepper on each side. Warm the olive oil on the stove at medium high in a Dutch oven that fits the meat. Brown the meat evenly and carefully for 7 to 10 minutes. Add the marinade and bring to a boil. Pour in the beef broth to cover. Bring to a boil, remove from the heat and cover. Braise in the oven for 3 hours.
- While the brisket is in the oven, bring a small pot of water to boil over high heat. Add the pearl onions, and blanch for about 1 minute. Remove the onions and shock in cold water. Cut off the ends of the onions, and squeeze off the outer skin. Peel, trim and quarter the turnips lengthwise.
