This is a great way to use leftovers without seeming like you are using leftovers. We added jalapeno juice because we like things a bit spicy. But customize this recipe to what you like. These taquitos would be great for munching watching some football!

4 cup(s) use leftover turkey, clean that carcass lots of meat there!!
1/2 cup(s) diced onion
1 package(s) corn tortillas (12)
1 large avocado
1/2 cup(s) sour cream
- pickled jalapeno, diced fine and a little pickled jalapeno juice (optional for a bit of flavor and heat)
- salt and pepper, to taste for both turkey and guacamole

Steps:

  • To make the guacamole, remove the avocado from the skin. Mash with a fork and add about 1/2 cup sour cream. Dice the pickled jalapenos (1-2 or more depending on how hot you like it) and add. Next add salt, pepper, and about 1 Tbsp of the jalapeno juice from jar/can. Stir all ingredients until smooth.
  • Heat tortillas in a clean dishtowel until soft (about 2 min depending on microwave).
  • Meanwhile, fill a large pan with about 1-inch oil and let get hot; med-high flame.
  • Fill with meat and onion mixture roll seam side down.
  • Place in hot oil and fry until golden brown and crunchy.
  • Serve with salsa of your choice and guacamole.

Vegetable oil
1 pound leftover roast turkey, small-diced
1 cup leftover cooked spinach
1/2 cup mascarpone cheese
1 bunch cilantro, chopped
1 yellow onion, peeled and thinly sliced
2 teaspoons ground coriander
1 teaspoon chili powder
Kosher salt and freshly cracked black pepper
Twelve 6-inch white corn tortillas
2 avocados, small-diced
2 heirloom tomatoes, small-diced
4 limes, juiced
1 serrano chile, thinly sliced
1 bunch cilantro, chopped
1 bunch green onions, thinly sliced
1/4 cup leftover gravy
1 teaspoon honey
Kosher salt and freshly cracked black pepper

Steps:

  • For the taquitos: Fill a large, deep skillet halfway with oil. Heat the oil to 350 degrees F over medium heat.
  • Combine the turkey, spinach, mascarpone, cilantro, onion, coriander, chili powder, 2 teaspoons salt and 1 teaspoon pepper in a bowl and mix to combine. Evenly distribute the filling among the tortillas. Roll the tortillas up tightly and fasten at both ends with a toothpick.
  • In batches, gently fry the taquitos for 2 minutes. Drain on paper towels.
  • For the relish: Combine the avocados, tomatoes, lime juice, serrano, cilantro, green onions, gravy, honey, 2 teaspoons salt and 1 teaspoon pepper in a large bowl and mix gently.
  • Serve two taquitos to a plate, with relish spooned over the top.

Vegetable oil cooking spray
3 tablespoons extra-virgin olive oil
1 large onion, minced
1 tablespoon kosher salt
1/4 teaspoon freshly ground black pepper
1 pound ground turkey
1 tablespoon ground cumin
2 packed cups baby spinach leaves, chopped
1 can black beans, rinsed and drained
1 cup mascarpone, at room temperature (8 ounces)
Eighteen 6 1/2-inch-diameter extra-thin or regular corn tortillas
1/4 cup extra-virgin olive oil
1 cup shredded white or extra sharp Cheddar (4 ounces)
Serving suggestion: salsa or guacamole

Steps:

  • Place an oven rack in the center of the oven and preheat to 400 degrees F. Spray a heavy nonstick baking sheet with vegetable oil cooking spray.
  • For the filling: Heat the oil over medium-high heat in a 12-inch skillet. Cook the onions, salt and pepper, stirring frequently, until soft, about 6 minutes. Add the turkey and cumin. Cook until the turkey is cooked through, about 5 minutes. Add the spinach and cook until wilted, about 2 minutes. Remove the skillet from the heat and add the beans. Mash the beans until smooth, using a fork. Stir in the mascarpone.
  • Place a nonstick skillet over medium-high heat. Brush each side of the tortillas with olive oil. Cook the tortillas in batches until warm, about 30 seconds. Spoon about 1/4 cup of the filling into each tortilla and roll up into a cigar shape. Place the tortillas, seam-side-down, on the baking sheet and sprinkle with Cheddar. Bake until the Cheddar is melted and the tortillas are crisp and golden, 25 to 30 minutes. Cool for 5 minutes and serve with salsa and guacamole.

V's Soft Turkey Taquitos With Southwestern Dip image

Every year my dad would make these taquitos with leftover turkey. The corn tortillas are lightly fried in oil, rolled with turkey and sealed on a griddle and come out soft with a nice crunch with the turkey still moist and delicious. These are awesome because they are not deep fried or baked. I took over the tradition and have been making these for years. My family won't eat any leftover turkey in any other form except these soft taquitos. We look forward to these as an appetizer or a meal served with my own Southwestern Dip, Cheese Sauce, Salsa and my Chunky Guacomole the day after thanksgiving.

4 cups shredded cooked turkey or 4 cups cooked chicken
45 corn tortillas, room temp
1/2 cup canola oil, for frying
salt
2 cups sour cream
1 cup mayonnaise
1 tablespoon parsley
1 tablespoon dried onion flakes
1 tablespoon dried chives
1 tablespoon cumin
1 teaspoon jalepeno salt (or regular salt)
1/2 tablespoon cayenne pepper
1/2 teaspoon smoked paprika
1 teaspoon white pepper (optional)

Steps:

  • Make the Dip and refrigerate ahead of time.
  • Mix sour cream and mayonaise together in a bowl. Mix dry ingredients in a separate bowl. Add dry spices to sour cream and mayonaise mixture stir to combine, cover & refrigerate for 2 hours to allow flavors to meld.
  • Taquito instructions: Heat oil in frying pan. Add one corn tortilla and fry for just a second, then turn and repeat. Place tortilla on a paper towel lined cookie sheet fitting about 6-8 per sheet. Place another papertowel over the tortillas and repeat with the rest until all are cooked. Sprinkle Salt over the tortillas as you go.
  • Once all the tortillas have been lightly fried and are soft, take shredded turkey and place on tortilla in a line. Gently fold tight and place seam side down on another cookie sheet. Repeat until all the taquitos are rolled.
  • Heat an electric skillet or griddle between 300-350' and oil surface generously. Place one taquito seam side down, add another right up against it and continue until you have a row across the skillet and taquitos are secure. Continue another row if you have room (I can generally cook about 25-30 at a time) Check the first taquito by rolling or using tongs to make sure seam is secure before turning. Roll taquitos left to right and let them cook 1-2 minutes, then roll again until they are secure and golden.
  • Place taquitos on platter and serve with Southwestern Dip, Salsa, Guacomole, Sour Cream, heated cheese whiz or whatever you like!

  • Preheat the oven to 425 degrees. Place a large baking sheet in your workspace and cover it with aluminum foil. Spray the foil lightly with cooking spray.
  • In a large skillet, heat the olive oil over high heat. Add the onion and saute until softened and translucent. Add the garlic and stir until fragrant, about 30 seconds. Reduce the heat to medium-high and add the ground turkey. Brown the turkey, breaking it up into crumbles as it cooks, until it is no longer pink.
  • Add the taco seasoning and stir for 30 seconds. Add the drained can of Rotel tomatoes and stir to combine. Remove the taco mixture from the heat.
  • Working in assembly-line fashion, fill a tortilla with 1 - 2 tablespoons of turkey mixture and a sprinkle of cheese. Roll it up tightly into a 1-inch sized roll and place seam-side down on the greased baking sheet. Don't overfill the tortilla with meat mixture or it will be difficult to roll them tightly.

  • Wrap corn tortillas in damp paper towels and microwave 1-2 minutes or until hot and pliable. Brush melted butter onto one of the sides of the tortilla.
