3 cups leftover cooked stuffing
2 cups cubed leftover cooked turkey
4 green onions, thinly sliced
1 medium sweet red pepper, finely chopped
6 large eggs
1-1/2 cups 2% milk
1/4 cup mayonnaise

Steps:

  • Preheat oven to 350°. In a greased 8-in. square baking dish, layer stuffing, turkey, green onions and pepper. In a large bowl, whisk eggs, milk and mayonnaise until blended. Pour over layers., Bake, uncovered, 65-75 minutes or until a knife inserted in the center comes out clean. Let stand 10 minutes before serving.

1 tablespoon butter or margarine
1 cup sliced leeks
8 slices (1/2 inch thick) French bread, cut into 1-inch squares (5 cups)
1 cup chopped cooked turkey or chicken
1 tablespoon chopped fresh or 1 teaspoon dried dill weed
2 cups shredded mozzarella cheese (8 ounces)
4 eggs, beaten
2 cups milk
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In 1-quart saucepan, melt butter over medium heat. Cook leeks in butter about 3 minutes, stirring frequently, until softened; remove from heat.
  • Mix bread cubes, leeks, turkey and dill weed. Spread bread mixture in ungreased square baking dish, 8x8x2 inches. Sprinkle with cheese. Mix remaining ingredients; pour over cheese. Cover tightly and refrigerate at least 4 hours but no longer than 24 hours.
  • Heat oven to 325°F. Uncover and bake 50 to 55 minutes or until knife inserted in center comes out clean. Let stand 10 minutes before cutting.

2 to 3 cups leftover stuffing
1 cup shredded Cheddar (regular or reduced-fat)
6 large eggs
2 large egg whites
3/4 cup milk
1/2 teaspoon mustard powder
1/4 teaspoon ground nutmeg
2 tablespoons grated Parmesan
Salt and pepper
1 tablespoon chopped fresh parsley leaves

Steps:

  • Preheat broiler.
  • Coat an ovenproof nonstick skillet with cooking spray and place over medium heat. Put stuffing in the bottom of pan to warm and stir to break up a little. Sprinkle cheese over top.
  • In a medium bowl, whisk together eggs, egg whites, milk, mustard powder, and nutmeg. Pour mixture over stuffing and cheese to cover stuffing. Sprinkle Parmesan over top. Cook on stovetop over low heat for 5 to 7 minutes. Transfer to the broiler and broil for about 2 minutes, until egg is cooked through and cheese is golden and bubbly.
  • Sprinkle with salt, pepper, and fresh parsley. Serve with sliced tomatoes.

This was made from Thanksgiving leftovers, and ingredients in my pantry. It's a family favorite and a hit at Pot lucks. With leftovers, it's a breeze, made from scratch ... it's work. Either way it's a hit and well worth the time. After a holiday meal half the work is done because you usually have the mashed potatoes, and turkey. When I make it from scratch, I usually use chicken rather than turkey. Prep times are from leftovers.

1 pound cooked turkey meat, shredded
1 onion, chopped
1 (14.5 ounce) can green beans, drained
1 (10.75 ounce) can condensed cream of mushroom soup
8 ounces cubed Cheddar cheese
8 ounces shredded Cheddar cheese
4 cups prepared mashed potatoes

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place turkey in an even layer on the bottom of a 9x13 inch baking dish. Top with a layer of onion and a layer of green beans so that the turkey is no longer visible. Pour the condensed soup over the onion layer, then sprinkle with shredded cheese. Stir together the cubed cheese and mashed potatoes; spoon over the top of the casserole, and spread to cover.
  • Bake for 30 to 40 minutes in the preheated oven, until heated through.

Not sure what to do with your leftover Thanksgiving or Christmas stuffing? Here's an easy breakfast solution you can put together right after the meal, and pop it in the oven the next morning for a fabulous meal!

4 cups leftover stuffing
5 eggs
1 cup milk
½ cup fat free half and half (you can substitute more milk)
½ cup grated Parmesan
Salt and pepper, to taste
Cubed brie or shredded mozzarella (or other mild cheese) - optional

Steps:

  • First, spread the leftover stuffing evenly into a casserole dish (about 9 inch square).
  • In a large bowl, whisk together the eggs, milk, half and half, Parmesan cheese, and a pinch of salt and pepper.
  • Pour the egg mixture over the top of the stuffing, covering completely. Cover tightly with plastic wrap and place the dish in the refrigerator for at least one hour. Overnight is even better!
  • When you are ready to bake, preheat the oven to 325 degrees F. If desired, sprinkle cubed brie or shredded cheese on top of the egg strata mixture. Place the strata in the oven and bake for about 45 minutes, until egg custard is set.
  • Remove from oven and allow to set for 5 minutes before serving. Enjoy!

4 cups leftover white bread prepared stuffing
1 cup grated swiss cheese

Steps:

  • Preheat oven to 350 degrees.
  • Butter 13x9" glass baking dish.
  • Melt butter in medium skillet over medium-high heat.
  • Add mushrooms and saute until tender and juices evaporate, about 6 minutes.
  • Remove from heat and set aside.
  • Combine egg and milk in large bowl and whisk to blend well.
  • Stir in mushrooms and leftover stuffing until well combined.
  • Transfer to prepared baking dish and sprinkle with cheese.
  • Bake until heated through and browned, about 50 minutes.

2 cups left over stuffing*
1/2-3/4pound cooked sausage of your choice, drained well.
2 cups grated sharp cheddar cheese.
5 eggs
2 cups milk (I used 2%)
1 teaspoon each sea salt and ground pepper
2 teaspoons bottled worcestershire sauce.
1 cup diced sauteed vegtables such as red or green bell peppers(optional)
My original stuffing was made with sourdough bread, celery, onion, poultry spices,chicken stock and cooked in the turkey.

Steps:

  • 1. Mix the bread and cheeses in a bowl. 2. Add the cooked sausage and vegtables (if you are using them). Spread this mixture in a lightly greased shallow glass 2-3 qt. baking dish. 3. Beat the eggs, add milk and the seasonings then pour over the bread mixture. 4. Refrigerate 1/2-24 hours. 5. Bake 350 degrees for 45-50 minutes. 6. Serve with sides of salsa, sour cream, yogurt, fresh fruit or a green salad.
