½ cup slivered almonds
½ cup light brown sugar
⅓ cup rolled oats
⅓ cup all-purpose flour
¾ teaspoon salt
6 tablespoons cold, unsalted butter, cut into pieces
2 pounds cherries, pitted

  • Pour cherries and any accumulated juices into the prepared pie pan. Press down into the pan. Crumble oat mixture over the top. Place the pan on the prepared baking sheet.

Time 1h

Yield 8 individual crisps

Number Of Ingredients 14

1 cup all-purpose flour
1 cup granulated sugar
1/2 cup packed light brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
Dash nutmeg
1 1/2 sticks cold butter
1/2 cup slivered almonds
Four 12-ounce bags frozen tart cherries
1/4 cup cornstarch
2 teaspoons almond extract
2 cups heavy cream
2 tablespoons granulated sugar
Vanilla ice cream, optional

Steps:

  • Preheat the oven to 350 degrees F.
  • Start with the crumb mixture. In a medium bowl, combine the flour, brown sugar, 1/2 cup granulated sugar, cinnamon, salt and nutmeg.
  • Cut the cold butter into pieces. Add the butter to the bowl and use a fork or pastry blender to cut it into the flour mixture. The mixture should resemble a moist, coarse meal. Add the slivered almonds and combine thoroughly.
  • Place the still-frozen cherries in a bowl, add the remaining 1/2 cup granulated sugar, cornstarch and almond extract and gently stir the cherries to combine.
  • Divide the cherries between 8 ramekins (about 1/2 cup each). Top with the crumb mixture, evening out the surface.
  • Bake until the topping is crisp and golden brown, about 45 minutes. If the topping appears underdone, continue baking in 10 minute increments until it's done.
  • To serve: Add the heavy cream and granulated sugar to the bowl of an electric mixer fitted with the whisk attachment and whip. Keep in the fridge until ready to serve.
  • Serve the individual crisps warm or at room temperature with a dollop of freshly whipped cream or vanilla ice cream.

Got this off the Food Network. Very easy, quick dessert--not to mention tasty. The sour cream is optional, but I think it adds a really interesting dimension to the dish. I found this makes quite a bit of topping, but then I like the topping. Hope y'all enjoy!

ALMOND CRUSTED CHERRY CREAM PIE

Almond Crusted Cherry Cream Pie image

This is my dad's favorite pie. It's pretty easy to prepare. If you don't feel like mixing a pie crust/making your own you can buy a store bought one and just press the almonds into the crust. It is extremely rich and yummy! I don't even like cherries and I love this pie! Cook time is chill time. For the crust I usually use Recipe #51537 and just grind the almonds up and mix them in with the dry ingredients... This has seemed to work really well for me

If necessary, after 15 minutes of baking, cover edge of crust with strips of foil to prevent excessive browning. Marzipan is a mixture of almond paste, sugar and egg whites. It adds a crumbly texture and almond flavor to the pie topping. Look for marzipan and almond paste in the baking section of the grocery store.

  • Place flour, sugar, and salt in the bowl of a food processor. Process for a few seconds to combine. Add the chilled butter and pulse 6-8 times, until the largest butter pieces are the size of small peas. Add 4 tablespoons of water and process until the dough just comes together. (Alternatively, you can make the dough by hand in a large bowl with a pastry blender or two forks to cut in the butter.)
  • In a medium bowl, stir together the oats, flour, brown sugar, and salt. Add in the butter pieces and use your fingers to crumble the butter into the oat mixture, until clumps form.
  • Stir the cherry filling to make sure it is well combined. Use a slotted spoon to spoon the cherry filling into the pie crust, leaving any extra liquid in the bowl to discard. (If you add all of the juices that the cherries have released the pie will be too liquidy.) Sprinkle the crumble topping over the cherries.
