This turkey stir-fry recipe is such an easy and tasty way to use up leftover turkey. It's VERY simple to make, and the sauce is super flavorful!

1/4 cup light soy sauce ((or use a gluten-free alternative))
1 tablespoon rice vinegar
2 teaspoons cornstarch
1/2 teaspoon red pepper flakes ((1/4 teaspoon if you don't like your food spicy))
1 lb. cooked white turkey meat (skinless, cut into thin strips (about 3 cups))
1 (1 lb.) package frozen stir-fry vegetables*
1 tablespoon avocado oil
1 tablespoon minced fresh garlic
1 tablespoon minced fresh ginger root
1 tablespoon sesame oil
1/4 cup green onions (thinly sliced, green parts only)

Steps:

  • Whisk the sauce ingredients in a small bowl. Set aside.
  • In a large, deep skillet, heat the avocado oil over medium-high heat for about 2 minutes. Add the frozen vegetables, garlic, and ginger. Cook, stirring often, until the veggies are defrosted and tender, about 5 minutes.
  • Reduce the heat to medium. Give the sauce another stir, then add the turkey meat and the sauce to the skillet. Cook, stirring, until everything is well-coated and the sauce thickens, about 2 minutes.
  • Transfer the turkey stir-fry to a serving platter. Drizzle with the sesame oil and scatter the scallions on top. Serve immediately.

1 tablespoon canola oil
1 small onion, chopped
1 carrot, julienned
1/2 medium green pepper, sliced

1 cup chicken broth
3 tablespoons cornstarch
3 tablespoons reduced-sodium soy sauce
1/2 teaspoon ground ginger
2 cups pea pods, trimmed

This quick-cooking stir-fry is packed with umami from fish sauce and soy sauce, and heat from both red-pepper flakes and fresh chile. Pungent and herbal, it's a terrific weeknight dish that's fast but never bland. The key here is to let the turkey get deeply brown, so don't move it around in the pan too much. 4 garlic cloves, thinly sliced
1 (2-inch) knob ginger, cut into matchsticks
Fine sea salt
2 tablespoons coconut oil or more neutral oil
3 scallions, white and green parts separated, thinly sliced
1/4 teaspoon red-pepper flakes, plus more to taste
1 pound ground turkey, preferably dark meat (or use ground pork)
2 tablespoons lime juice, plus more to taste
1 tablespoon fish sauce

Steps:

  • In a cold 12-inch skillet, combine oil, garlic and ginger. Place over medium heat until sizzling, then continue to cook, stirring frequently, until garlic and ginger are golden brown, 5 to 7 minutes. Transfer with a slotted spoon to a paper towel-lined plate and sprinkle lightly with salt.
  • Add coconut oil to pan, then stir in scallion whites and cook until starting to brown, about 2 minutes. Stir in red-pepper flakes and cook for 1 minute.
  • Stir in turkey, raise heat to medium-high, and cook, breaking up meat with a spoon, until golden and crisp, about 7 minutes. Don't stir the meat too much, so it can turn deep brown.
  • Remove pan from heat and stir in lime juice, fish sauce and soy sauce. Taste and add more lime juice, red-pepper flakes, soy sauce and sugar or honey if you like.
  • Gently mix about two-thirds of the fried garlic and ginger into the turkey. Serve turkey over rice, topped with cilantro, basil, scallion greens and fresh chile, and garnished with remaining fried ginger and garlic.

3 ½ gallons peanut oil for frying
1 (10 pound) whole turkey, neck and giblets removed
1 tablespoon salt, or to taste
1 tablespoon ground black pepper, or to taste

Steps:

  • Heat oil in a large stockpot or turkey fryer to 350 degrees F (175 degrees C). Make sure the fryer is located outdoors in a safe area, preferably on dirt or pavement, and far away from buildings, wooden decks, or other objects. Keep a fire extinguisher handy, just in case.
  • Ensure that the turkey is completely thawed. Cut any extra skin away from the neck area and make sure neck hole is at least an inch in diameter. Pat the bird completely dry with paper towels, then rub liberally with salt and pepper on both the outside and the inside. Place the turkey into a drain basket, neck-side first.
  • Working slowly and carefully, gently lower the basket into the hot oil to completely cover the turkey. Maintain the temperature of the oil at 350 degrees F (175 degrees C), and cook turkey for 3 1/2 minutes per pound, about 35 minutes.
  • Carefully remove basket from oil, and insert a meat thermometer into the thickest part of the thigh; the internal temperature must be 180 degrees F (80 degrees C). Once the turkey is done, remove from the oil, and allow to rest for 15 minutes before slicing.

1 egg yolk
1 teaspoon soy sauce
1 teaspoon rice wine
1 teaspoon cornstarch
¼ teaspoon salt
¼ teaspoon ground Sichuan peppercorns
5 ounces pork tenderloin, trimmed of fat and cut into 1-inch cubes
2 tablespoons white vinegar
2 tablespoons water
2 tablespoons white sugar
2 teaspoons tomato paste
1 teaspoon soy sauce
1 teaspoon cornstarch
oil for frying
3 tablespoons cornstarch
1 tablespoon vegetable oil
2 green chile peppers, cut into 1-inch pieces, or more to taste
2 scallions, cut into 1-inch pieces
3 ounces canned lychees, drained
¼ teaspoon sesame oil

Steps:

  • Combine egg yolk, soy sauce, rice wine, cornstarch, salt, and Sichuan peppercorns in a bowl to make the marinade. Add pork; marinate for at least 30 minutes.
  • Mix vinegar, water, sugar, tomato paste, soy sauce, and cornstarch together to make the seasoning sauce.
  • Heat oil in a deep saucepan over medium-high heat. Roll the marinated pork in cornstarch until each piece is well covered. Deep-fry pork for 2 minutes. Remove and drain on paper towels.
  • Heat 1 tablespoon oil in a small saucepan over medium heat. Stir-fry green peppers and scallions for 30 seconds. Add lychees and pour in the seasoning sauce. Stir well until sauce thickens. Leave over very low heat.
  • Reheat the deep-frying oil. Re-fry pork until crisp, about 30 seconds. Drain and place on a warm plate. Pour the seasoning sauce on top. Sprinkle with sesame oil and serve at once.

10 lychees
2 2/3 ounces pickled ginger, shoots sliced thinly
1 red chili, cut into pieces
1 green pepper, cut into pieces
2 green onions, sectioned

1 teaspoon red wine (optional)
3 cups cooked jasmine rice or 3 cups basmati rice
3/4 tablespoon light soy sauce
1/3 teaspoon sugar
1 teaspoon cornstarch
2 tablespoons oil
1 tablespoon water
1 dash of sesame oil and pepper
1 teaspoon sugar
1/4 teaspoon salt
1 tablespoon tomato sauce

Steps:

  • Skin and remove cores from lychees.
  • Slice beef thinly. Prepare marinade and marinate beef for half an hour.
  • Heat 1 tbsp oil in wok or skillet and cook beef, remove from skillet.
  • In same skillet, heat up 1 tbsp of oil. Stir-fry green pepper and red chili.
  • Pour in 1 tbsp of water. Fry until cooked. Drain through a colander.
  • In same skillet, heat up 2 tbsp of oil. Stir-fry beef thoroughly with garlic.
  • Sizzle 1 tsp of wine.
  • Mix well and add in pickled ginger shoots, green onions, pepper, chili and lychees. Stir-fry thoroughly.
  • Pour in thickening.

340g green beans , trimmed and halved
