SPINACH-TURKEY SLIDERS
This fall enjoy these turkey sliders that are enriched with mayonnaise and spinach - a great appetizer for Halloween.

Steps:
- Chop 3 cups of the spinach. In 12-inch nonstick skillet, heat 1 teaspoon of the oil over medium-high heat. Add chopped spinach; cook and stir 1 minute or until wilted. Drain, if necessary.
- In large bowl, mix turkey, wilted spinach, 2 tablespoons of the pesto and the pepper. Shape mixture into 12 patties, 1/4 inch thick.
- In same skillet, heat 1 teaspoon oil over medium-high heat. Add 6 of the patties; cook 4 to 6 minutes, turning once, until thermometer inserted in center of patties reads 165°F. Remove patties from skillet to platter; sprinkle each with 2 teaspoons cheese. Cover to keep warm. Repeat with remaining 1 teaspoon oil, 6 patties and cheese.
- Meanwhile, in small bowl, mix mayonnaise and remaining 2 tablespoons pesto.
- For each slider, spread 2 1/2 teaspoons mayonnaise mixture on bun bottom. Top with burger and remaining spinach; cover with bun top.

Steps:
- Combine spinach, scallions, garlic, turkey, and cumin in a medium bowl; season with salt and pepper. Using a fork, mix gently just to combine. Form turkey mixture into twelve 1/2"-thick patties.
- Heat oil in a large skillet over medium-high heat. Working in 2 batches, cook patties until golden brown and cooked through (resist the temptation to press down on patties with your spatula while cooking), about 5 minutes per side. Transfer to a plate.
- Serve turkey-spinach patties on buns with mayonnaise, onion, and pickles.
- DO AHEAD: Patties can be formed 1 day ahead. Cover and chill. Bring to room temperature before cooking.
TURKEY & SPINACH SLIDERS
I never liked turkey burgers until I tried this recipe. This makes about 20 sliders. The components of the sliders are pretzel rolls, turkey burgers, a garlic aioli and arugula. Each component is important to to overall flavor! I serve these with sweet potato fries.

- Preheat oven to 400 degrees.
- Combine all ingredients for aioli in a small bowl, mix well and cover; set aside in refrigerator until burgers are done.
- In a large bowl, combine all ingredients for burgers (except the arugula and rolls) and mix well with hands until all ingredients are well incorporated.
- Shape into small patties; cook over medium heat in a skillet until cooked through, 3-4 minutes per side. (These can also be made an a counter top grill, about 4 minutes total.).
- While burgers are cooking, place sliced rolls cut side up on a baking sheet. Bake for 3-4 minutes, until lightly toasted.
- Assemble sliders: for each slider, spread aioli on both cut sides of a pretzel roll. Place a patty and arugula the bottom half of the roll, then top with other half of roll.

SPINACH AND TURKEY PATTIES WITH SPICED CARROTS
The aromatic North African spice blend ras el hanout imparts a touch of heat and earthy flavor to these juicy turkey patties. Pita, yogurt and tender coriander-spiced carrots round out the meal.

- Preheat the broiler. Process 2 pita quarters in a food processor to make coarse crumbs. Add the red onion and pulse until finely chopped. Add the turkey, spinach, ras el hanout, 1 teaspoon salt and a few grinds of pepper; pulse until combined. Form the mixture into twelve 4-inch-long, 1/2-inch-thick oval patties on a baking sheet. Brush the patties with 1 tablespoon olive oil; season with salt and pepper. Broil until lightly golden and cooked through, about 6 minutes.
- Meanwhile, crush the coriander seeds with the flat side of a knife. Heat a large nonstick skillet over medium-high heat; add the remaining 2 tablespoons olive oil. Add the carrots and coriander and cook, stirring occasionally, until the carrots are tender, 7 to 9 minutes. Remove from the heat and stir in the cilantro and orange juice; season with salt and pepper.
- Divide the turkey patties, carrots and the remaining pita quarters among plates. Top the patties with the yogurt and sprinkle the dish with more cilantro.

- Mix mayonnaise, garlic, onion, lemon juice, salt, and pepper together in a bowl. Let set while you make the sliders.
- Mix turkey, red peppers, dressing, sweet onion, garlic, oregano, and thyme together in a large mixing bowl. Cover and let sit in a refrigerator for 5 to 10 minutes.
- Form turkey mixture into patties that are a little larger than your dinner rolls.
- Heat oil in a frying pan over medium heat. Cook patties in the hot oil, turning occasionally, until browned and no longer pink in the centers, 5 to 10 minutes per side.
- Serve with garlic-onion mayonnaise mixture on toasted dinner rolls.

- In a small bowl, dissolve yeast in warm buttermilk and water. Place flour, sugar, baking powder and salt in a food processor; pulse until blended. Add shortening; pulse until shortening is the size of peas. While processing, gradually add yeast mixture and process just until dough forms a ball., Turn dough onto a lightly floured surface; knead 8-10 times. Pat or roll to 1/2-in. thickness; cut with a floured 2-in. biscuit cutter. Place 2 in. apart on greased baking sheets. Let rise until almost doubled, about 30 minutes. , Preheat oven to 425°. Bake biscuits 7-9 minutes or until golden brown. Remove to wire racks to cool slightly. Preheat broiler., Split biscuits in half; place bottoms on greased baking sheets. Layer with turkey and cheese. Broil 3-4 in. from heat 2-3 minutes or until cheese is melted. Replace tops. If desired, serve with mustard.

- Split the wheat bread in half.
- Put the thin slice of swiss cheese on 1 half of the wheat bread.
- Fold the honey ham and put it on the thin cheese.
- Put the pepperoni on the honey ham.
- Put the normal sized swiss cheese on top of the pepperoni.
- Sprinkle the basil and pepper on the pepperoni.
- Put the other half of the wheat bread on top of the spices and pepperoni.
- Microwave for 20 seconds or cook in frying pan until the cheese is melted and flowing.
- Put on olive on a toothpick and drive the other end of the toothpick into the top of the slider.
- Put lettuce around the base of the slider and it is ready to serve.
