TURKEY SAUSAGE WITH BROCCOLI
I had to make something for a luncheon at work. I needed to feed a crowd and I was sooo busy that week that I needed something easy. So here it is. I did this in two days only because I didn't have enough time in one day. It is easy and quite delicious. This got great raves! It's a good party dish. Measurements might be a tad off. I'm the type of cook that just throws in.

Saute until all the vegetables are soft, about 5 minutes. Add tomatoes, basil, and bay leaves and reduce the heat to low. Cover the pot and simmer for 1 hour or until thick. Remove bay leaves and taste for seasoning. If sauce tastes too acidic, add unsalted butter, 1 tablespoon at a time, to round out the flavor.
- Pour half the tomato sauce into the bowl of a food processor. Process until smooth. Continue with remaining tomato sauce.
- If not using all the sauce, allow it to cool completely and then pour 1 to 2 cup portions into plastic freezer bags. Freeze for up to 6 months.

- Cook sausage in a Dutch oven over medium heat, crumbling with a spoon, until no longer pink, 8 to 10 minutes. Transfer to a bowl with a slotted spoon. Add onion and garlic to the pot and cook, stirring, until starting to soften, about 3 minutes. Add broccoli rabe and water and bring to a simmer; cook, stirring occasionally, until the greens are wilted and most of the water is evaporated, about 5 minutes. Add wine; increase heat to high and cook until mostly evaporated, about 3 minutes. Add Italian seasoning, crushed and diced tomatoes, olives and capers; reduce heat to maintain a lively simmer and cook for 5 minutes. Remove from heat.
- Combine ricotta, Parmesan and pepper in a small bowl. Break enough off the end of each lasagna noodle so they can fit into the baking dish (it's OK if they don't break in a straight line); reserve the broken pieces for another use, if desired.
- To assemble: Spoon 1/2 cup of the sauce into each prepared baking dish. Cover with 3 lasagna noodles. Dollop 1/2 cup of the cheese mixture on top, spreading gently. Top with about 1/2 cup sausage and 1 cup sauce. Repeat the layers, ending with the rest of the sauce. Sprinkle each lasagna with 1/2 cup mozzarella.

- In a large sauté pan, over medium heat, heat the olive oil and add the onions. Cook until they begin to brown, about 10 minutes. Then, add the garlic and red pepper flakes and cook until fragrant, for just a few seconds. Add the sausage and cook, breaking it up with a wooden spoon, until browned, about 6 to 8 minutes. Mix in the broccoli rabe, season with salt and pepper and cook, stirring frequently, until tender and wilted, about 5 minutes. If there's any liquid in the bottom of the pan, continue cooking until it evaporates. Remove the pan from the heat and reserve so the mixture cools to room temperature.
- Roll the pizza dough into an 18-inch to 20-inch round (or two smaller rounds if you want two pizzas). Transfer to a floured pizza peel (I usually use parchment paper on top of the pizza peel for convenience). Then, drizzle some olive oil and season the pizza dough with salt and freshly ground pepper. Top with the pizza sauce, the mozzarella cheese, the provolone cheese and, finally, the broccoli rabe/sausage mixture.
- Transfer the pizza to the oven (ideally to a pizza stone) and bake until the pizza is crisp and golden brown and the cheese is melted, about 6 to 8 minutes.

- PREP. Prepare broccoli by trimming the stems off, and cutting into bite sized pieces. Mince the garlic. Grate the cheese into a measuring cup.
- Remove the turkey sausage from the casings. Pan-fry in a skillet on the stove top until cooked through, breaking it apart as it cooks. Pour in a collander and drain the grease off.
- In a large stock pot, bring water to a boil. Pour the rigatoni pasta in the pot, along with a good amount of salt. (Salt flavors the pasta AND the pasta water - which will be used later.) Add the broccoli and wait for it to continue to boil. Reduce heat to medium, making sure the water is bubbling (but not too much). Cook until the pasta is al dente.
- Remove the pan from the heat, and pour into a collander, making sure to reserve some of the pasta water. I usually set a bowl under the collander so I don't forget!
